Why yes, I AM trying to hypnotize you into getting out of your avocado rut this morning and working up the nerve to stir it into a baked good, swirl some nutella on top and call it breakfast!

I think we can all agree that avocados are superb on things like sandwiches.  And burgers.  And in guacamole.

And eaten straight out of their skins with nothing but salt to flavor them.

(I may or may not have gone through a phase in college where that’s what I ate first thing in the morning.  Every day.  For a month.  I was very, VERY full that month.)

But the thing about avocados is that they’re so….green.

Which is what I happen to love about them.

However, the majority of people on this earth, especially children, seem to have a vendetta against green foods.  They throw them. They spit them up.  They plain and simple don’t like them.

We need to do something about this.  Because not only are avocados delicious, but they are nutritional all-stars!  Just three slices of this creamy green fruit contains potassium, fiber, folate, vitamin C, vitamin E, and B-complex vitamins that support memory and brain function.

Here’s where these muffins come in.

No living breathing soul with a pulse is going to turn down muffins with a HUGE swirl of nutella on top.  No matter how green they are.

And really, these were so delicious and so NOT your typical green food that my coworkers devoured all of them without even once guessing that they were eating something good for them.

Aren’t little white lies sometimes the best things on earth?

If I had children, I would totally be all over this.

Get your video in by December 4th and check back on December 6th to see if your video is one of 10 finalists. Public voting will take place on YouTube December 6-11. The video with the most Likes wins and will be posted on the website December 12th.

Avocado Nutella Swirl Muffins
Makes about 16, adapted from Joy the Baker

Ingredients

  • 1 1/2 cups AP flour
  • 1/4 cup cornmeal
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 6 tbsp butter, softened
  • 1 1/2 cups sugar
  • 1 ripe avocado
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3/8 cup buttermilk
  • 16 tsp nutella 

Ingredients

  1. Preheat oven to 350.  Put cupcake liners in muffin tin.
  2. In a medium sized bowl, sift together flour, cornmeal, salt, baking powder and baking soda.  Set aside.  Set the eggs out on the counter to come to room temperature while you beat the butter and sugar.
  3. In the bowl of a stand mixer, beat butter on medium speed until softened and pliable.  Add the sugar and beat until light and fluffy, about 4 minutes.  Add the avocado and beat another minute to incorporate.  Scrape down the sides of the bowl to ensure that everything is thoroughly mixed.
  4. Add the eggs one at a time, beating 1 minute after the addition of each egg.  Beat in vanilla extract.
  5. Reduce the mixer speed to low and add half of the flour mixture, all of the buttermilk, and then the rest of the flour mixture.  Beat just until combined.
  6. Pour into cupcake liners until they are about 3/4 full.  Put a dollop (about a tsp) of nutella on top of each liner full of batter and swirl around with a butter knife.  Bake for 15-20 minutes or until a toothpick inserted comes out clean.  Let cool for five minutes in pan and then remove to a wire rack.

    Even if green, avocado is so rich and creamy!! I love it in smoothies and even that at first I wasn’t so sure about. I’m a convert and avocados are, without a doubt, one of my top 3 favorite foods. And Nutella is probably #4! I can’t wait to make these!

    Did somebody say video? Hmmmm. Both the kids loved avocado when they were babies, but now don’t like it. However, I think it’s a general rule that you can hide anything in cake to win them over. Carrots, zucchini, pumpkin, cauliflower…well, maybe not that last one. I can’t get enough of it. I still have your creamy avocado spaghetti printed out to make.

    I’m going to be honest here and admit that I almost didn’t read through the recipe. My family eats a ton of avocados (but I do NOT). They are always raw and usually straight from the skin with some salt. There are so many health benefits though! I feel like I’m missing out sometimes.

    Is the avocado flavor prominent? I’d be willing to try baking with them if the flavor were disguised for the most part. Uh oh, you’ve made me ponder actually eating an avocado myself! I’m glad I read the post through. This is so unusual, I’m tempted to try it just because of that!

    As a Brazilian, I grew up with avocados used in desserts only. “Cream of avocado” is a very popular dessert back in Brazil, simply the fruit blended with sugar.

    It took me a long time to warm up to the idea of avocado in savory dishes, but now I go crazy for guacamole… 🙂

    so your use in the muffins is more than welcome by me, and I bet all Brazilians will love it too and find nothing strange about them!

    I never would have thought to pair avocado (which I love) with Nutella (which I love). Puts a whole new spin on “Eats Well with Other” – other ingredients. But the results say yes and I should do more with avocado that just slice and greedily eat!

  33. Growing up in the Philippines, I always considered avocado as a dessert because it’s always prepared sweet, not savory. Through the years I love it even more (if that’s even possible) and while I do love avocados in sandwiches and salads, etc, I will always have a special place in my heart for sweet avocado dishes. And the fact that this has Nutella? LOVE.

    I feel avocados in my baking future. These muffins are just wonderful to look at and I imagine the flavor is superb. I just saw a recipe for avocado pie with walnut crust that got my creative juices flowing b/c it looks a lot like key lime pie and I thought the two together might work.

    I love avocado so much that I don’t know if I could actually add them to a recipe where they ‘disappeared’–I just want them as they are! With a little salt and lemon juice, of course. =) Don’t get me wrong–your cupcakes look awesome and I’d eat them in a heartbeat! But plain avocado . . . I swoon.

    Love everything about this, right up to the slightly green tinge of the muffins! Avocados are such a magical ingredient for pastry, and even ice creams. Plus, that chocolate-y swirl looks luscious.

    Anonymous – if you want to still go with something chocolate-y on top then maybe a chocolate peanut butter or chocolate almond butter? You could make them yourself, even, by just mixing any nut butter with some melted down chocolate chips or chocolate! I think this would also be great with some kind of jam swirled in…raspberry or strawberry, perhaps? Let me know if you end up trying any of these!

  68. I don’t think there is anything that doesn’t go with Nutella. Ok maybe mustard or ketchup. But everything else it works with. ESPECIALLY avocado.
    I’m coming back up on the 29th or 30th! Hopefully we make it into the city this time. I said that is a MUST. (Granted I’m not paying but I’m still DEMANDING.)

    Too bad you don’t live closer, the Fuerte avocado tree (amazingly creamy fruit) in my back yard is about ready. It produces through March. I get whole Trader Joe grocery bags full that I used to give away. Now, I trade with friends for their windfalls like Meyer lemons. It’s all good!     I was just in Hawaii, where a farmer gave me an avocado that was literally the size of my head! They sure grow them big there. And it was as creamy as can be. Man, I could have made probably 10 dozen of your muffins with that baby. 😉

    What a unique way to incorporate avocados, I never would have thought about mixing with with chocolate in a recipe like this. Genius on your part.

    I think my fav use for avocados is in a creamy spicy ranch dressing used for dipping fried asparagus.
