This is such a creative recipe! I would never think to add sweet mango to a savory casserole, but this looks like it would taste delicious and pair perfectly with the sweetness in the polenta.

Lucky me! I stumbled upon this recipe over at Marcus Samuelsson’s blog and just had to try it. My college student daughter is a vegetarian, and I’m always looking for a special new dish to nourish and nurture her with when she comes home. What a huge success!
