If you’re looking for a quick, easy and healthy dinner then this Asian Eggplant Stir Fry is for you! Check out my post and the recipe over at Marcus Samuelsson’s blog.
This recipe is from the cookbook Meatless Meals for Meat Eaters, the author of which is actually another blogger, Miriam! Although the rest of her family eats meat, Miriam’s goal is to provide them with healthy vegetarian meals that are so tasty they won’t even realize they’re meatless! Her cookbook is full of delicious comfort foods turned veg that will definitely satisfy just about any palate. Highly recommended!

I love Asian and I love eggplant. Jumping over to the blog right now! xx
I have a giant eggplant just waiting to be used. Yuuuussss!
I love eggplant, it’s one of my favourite vegetables. Definitely going to check this out!
Now that I have adapted to eggplant, I am on the look-out, for more recipes. This sounds like a great possibility. Thanks.
Oh I checked that recipe out and it sounds delicious. So much so that I think I will cook it tonight seeing as though I just bought a beautiful eggplant the other day!!
Oh, super yummy!!!
This looks yum! I love eggplant and I am a vegetarian….will check out the book too.
Oh what a cool book! I’ll have to check it out! Sadly I’m allergic to eggplant so I wont be making this recipe 🙁
Can’t go wrong with eggplant!!! Delish looking dish.
This eggplant dish looks really good! Love all the other veggies in it too. I visited Miriam’s blog just now and she does have a ton of healthy recipes in there!
I’m always up for a good eggplant stir-fry! Nice meaty texture. Can’t wait for my CSA Box this summer.
This inspires me. I LOVE eggplant. Love it!! We actually have one home, languishing alone in the crisper. Tonight I am following your example, Joanne.
Great healthy meal, as always. You know I always think that I hate eggplant but if it’s in front of me, I’ll eat it, thinking that it’s tofu. And I’ll like it. But I’m still so stubborn to believe that I hate eggplant.
That’ll all going to change once I make this though 🙂
Great meal Joanne…and I am a big fan of Miriam…love her site and always getting ideas of vegetarian dishes.
Thanks for sharing this recipe and hope you are having a wonderful week 🙂
Thanks girlfriend, I hope you enjoy the book! Miriam@Meatless Meals For Meat Eaters
What a great concept for a book! Eggplant is a hearty and earthy substitution for most meats, and I enjoy it very much. I’d love to try this stir fry!
mmmmm! eggplant!!!
This looks yummy and flavorful! Yes, people think meals don’t taste good without meat, WRONG!
I love eggplant 😀
I’m an eggplant nut… I really don’t understand folks who can’t get behind it. And Asian eggplant, especially when prepared like this, is heaven.
Definitely going to check this one out. It will be perfect when the eggplant starts in our garden this summer. I never know quite what to do with it all! (Which I realize is a good problem to have.)
We love eggplant and this looks yummy as ever!
That book sounds like something I need on my shelves!
Oooo – Yay! I love book and cookbook recommendations! Thanks!
eggplants are one of my favorites!! love this !xGloria
I am going to check the recipe and the book sounds great!!!I have a vegetarian at home and I am always looking for new recipes!
Beautiful looking dish. But then, I love all things eggplant. And for those who hate eggplant? They need to get over it and enjoy, because they are truly missing out. 😉
LOVE eggplant and even though my (crazy) hubby doesn’t like it, that leaves more for me! 😉 Heading over to check it out now!
Looks delicious!
Oh yum. I have only had a couple of meals with eggplant, but I will be making some more! Great idea, love quick and easy meals 🙂
I love eggplant!! This sounds great 🙂
ooh nice! I’ll have to leave out the carrots (hate cooked carrots) but otherwise it sounds amazing…I want it mixed with brown rice now! Ooh and nori!
It looks and sounds tasty.
I love the texture of eggplant in stir-fries. It really does replace the meat nicely.
i just recently started using more eggplant and am getting more comfortable preparing it, this looks like a great new recipe to try!
Eggplants are my absolute favourite veges!! And I love stir fry eggplants especially when they’re slightly overcooked so I get that soft, chewy texture.. mmmmmm……… Totally drooling over this now!!!
I am always looking for new ways to do eggplant / aubergine 🙂
Anything with eggplant gets my attention. And usually it doesn’t photograph well…but you sure did a great job with it in this dish, Joanne. Keeping the skin on and cooking it fast sure helps the final results. This looks wonderful!
If I ate eggplant I’d be all over this!
This looks beautiful. I’m off to see the post!
I am in for that stir fry!! off to check it out
Cool, it’s always great to see a fellow blogger get a publishing deal.
That sounds like my kind of cookbook. I’m excited to check it out!
It’s serendipity. I go to a favorite blog, find a delicious recipe, note that I have each and every ingredient. I’m calling it dinner. Thank-you!
