Swimsuit season is not something that falls on my calendar! Even so, this sounds like a really creative and tasty twist on the classic mac. Sweet potatoes and spice always seem to go so well together in just about any dish.

  30. Wow, this dish is FILLED with tons of goodies. And I love that you included the light version, although I’m not sure if I’ll abide by it. I’ll just do a double workout at the gym :)

  31. Katie says:

What an interesting combination of flavors! I love that you were able to incorporate the soy meat into the dish to get a little more protein in. That’s one of my biggest problems when I make a pasta dish.

  32. Pam says:

Now that looks comforting without all the guilt!!

  33. beti says:

  40. Kerstin says:

  41. Ginger says:

this was absolutely decadent. next time I am doubling the recipe!

cooked the SPs in the microwave and skipped the chipotle so it wouldn’t be too spicy for the baby.
