Yum, looks delicious! I’ve been using cauliflower in place of half the noodles in my mac and cheese all winter, I’m going to have to try this variation.

Swimsuit season is not something that falls on my calendar! Even so, this sounds like a really creative and tasty twist on the classic mac. Sweet potatoes and spice always seem to go so well together in just about any dish.
Wow, this dish is FILLED with tons of goodies. And I love that you included the light version, although I’m not sure if I’ll abide by it. I’ll just do a double workout at the gym 🙂
What an interesting combination of flavors! I love that you were able to incorporate the soy meat into the dish to get a little more protein in. That’s one of my biggest problems when I make a pasta dish.
Now that looks comforting without all the guilt!!

cooked the SPs in the microwave and skipped the chipotle so it wouldn’t be too spicy for the baby.
