Yesterday I reached a new “I-hate-doing-chores” low.

It involved propping my iPad up on a pan on top of my stove (while it was off) so that I could watch Parenthood while washing dishes.  And by “washing dishes”, I mean turning off the water so I could actually hear what was going on (faucets are loud, people!) and crying into the soap suds as Christina told her family that she has cancer.

Obviously it was a highly productive endeavor.  Not.

They eventually did get done though because my fear of waking up to a New York-sized cockroach scurrying around in my sink outweighs my dislike of just about anything.

And then, because I felt rather adult-like, I decided to reward myself with a pumpkin oatmeal cinnamon chip cookie bedtime snack.  Because that’s what a adults do…bribe themselves with food.  Normal.  Totally.

The thing about these cookies, though, is that they’re so good you’ll be finding any and every excuse to stuff one into your mouth.  I mean, seriously…all of the flavors of pumpkin pie with a little bit of extra cinnamon in cinnamon chip form for good luck.  Can’t go wrong.

Plus…they have a vegetable AND oats in them.  Breakfast-worthy?  Um, as an official chore-doing adult.  I say HELLZ to the YES. 

As a side note, I just want to say THANK YOU THANK YOU THANK YOU to everyone who has donated money to the Leukemia and Lymphoma Society on my behalf!  I am officially halfway done with fundraising, which is nothing short of totally amazing.  Seriously, you guys rock.  For those who don’t know, I am running the NYC Marathon on November 4th in honor of my dad who passed away from cancer last month.  I am running with Team in Training, which is the longest standing endurance athlete training program, and which has to-date raised over $1.3 billion dollars to fight cancer.  You can check out my fundraising page here to donate!  And remember, any donation, no matter how small ($5 anyone??) is greatly appreciated!

Pumpkin Oatmeal Cinnamon Chip Cookies
Makes 3 dozen, adapted from Two Peas and Their Pod

Ingredients

  • 1 1/4 cups flour
  • 1 tsp baking soda
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, at room temperature
  • 3/4 cup sugar
  • 3/4 cup packed brown sugar
  • 1 large egg
  • 1 tsp vanilla
  • 1 cup pumpkin puree
  • 3 cups old-fashioned oats
  • 1 1/2 cups cinnamon chips

Instructions

  1. Preheat oven to 375.  Line two baking sheets with parchment paper and set aside.
  2. Whisk flour, pumpkin pie spice, cinnamon, nutmeg and salt together in a medium bowl.  Set aside.
  3. In the bowl of a stand mixer fitted with a paddle attachment, cream together the butter and sugars until light and fluffy, about 3 minutes on medium speed.  Add in the egg and vanilla and mix until well-combined, scraping down the sides as necessary.  Stir in the pumpkin puree.
  4. Slowly add in the flour mixture.  Fold in the oats and cinnamon chips.
  5. Drop the dough by the tbsp onto the prepared baking sheets. Bake for 10-12 minutes or until the cookies are set and golden.  Remove from the oven and cool in the pan for 2 minutes.  Transfer to a wire rack to cool.

  9. My skin is still crawling after reading your post about the flour bugs! I store my flour and dried goods in the freezer, actually, for that very reason. My hatred of bugs is my primary motivator in doing any kind of housework at all.

      I actually bought mine on Amazon because I couldn’t find them anywhere either! Although, rumor has it that Target carries them. I just don’t live in a city where Targets abound.

  13. Haha. Great idea to bring your ipad in the kitchen! I’m so lazy that I have a dishwasher, and I still leave dirty dishes in the sink. Luckily, my fiance and I negotiated (i.e. I forced him to agree) that if I cook dinner, he cleans up.

    I do remember my cockroach days. Even the cats wouldn’t eat them. The cookies are all-autumn – I am convinced they’re healthy and if not – don’t tell me. I am sorry about your Dad. I lost my mother in July and am still reeling. Sometimes normal life is the best escape.

    Well now you’re just playing with my heart. Those look like the perfect indulgent breakfast that I can almost pretend is healthy because it has oats and pumpkin in it. Vegan cinnamon chips have yet to be invented though (wish they would hurry up on that!) so I may just need to sub in good old chocolate. Such a tough sacrifice.

  86. These are really good. Also, Just tried this with Unsweetened Applesauce and Toffee chips. Add about 1/3 cup flour to account for the consistancy of the applesauce. They are like delicious apple pie cookies!

    I made a giant double batch of these a few days ago, trusting that they would be good, and they were! I love the oats:white flour ratio; makes me feel like they aren’t that bad for me. My one beef was that the cinnamon chips were surprisingly bland and kind of fake tasting. I had never used them before. I will make this recipe in the future, but I’ll probably just double the cinnamon and use white chocolate chips or, as another reviewer suggested, toffee bits! Even chocolate chips. I just didn’t dig the cinnamon chips. Anyway, thanks for the recipe!

I, too, lost someone very close to me earlier this year to cancer, and the world just isn’t the same as it used to be. So many thing you say about your dad and your grief . . . I find myself nodding and tearing up, because it hits close to home . . . in a good, tender way. Thanks for your transparency.
