Mexican food does get a bad rap for being heavy and not so healthy. So glad to see you show us how to make a healthy Mexican enchilada with a light cream sauce – love the cauliflower inside.

Cauliflower has to be in my top three favorite vegetables and I love a cream sauce. Add poblanos and roll them into enchiladas? Yes, double please with cream (sauce) on top!

This looks like a tasty enchilada variation and I love cauliflower! Real Mexican food (as opposed to American Mexican food) uses all kinds of fresh vegetable year round and is more often baked and cooked on a grill than the fried stuff Americans associate with Mexican food. So really, this is closer to the “real thing” than you think. ๐

I once had an enchilada that had zucchini and butternut squash in it. I’d never considered putting chunks of veggies in an enchilada but it was tasty!

I’m eating a lot of cauliflower at the moment. It’s just that time of year. I’ve mostly been eating it in vegetarian Indian curries so I like the look of your Mexican version xx
