The.Boy and I have started watching Shark Tank together, which, for those of you who don’t know, is a reality tv show in which aspiring entrepreneurs pitch their business ventures to a panel of potential investors who can then either make an offer or not depending on how promising the enterprise seems like it will be and/or how annoying the contestant is.

Generally what this consists of is The.Boy yelling his commentary at my iPad screen while I complain that no one on the show comes close to Patrick Dempsey’s good looks, so shouldn’t we really be spending our time watching Grey’s Anatomy instead?

Somewhere along the way, I must have gotten the Shark Tank mentality under my skin because yesterday, after slicing into my thumb while chopping a turnip and searing my forearm on the top rack of my oven that was a warm and toasty 350 degrees, instead of thinking “wow, I should be more careful”, I thought “wow, we should create a full-body oven mitt and pitch it to Shark Tank”.

(Because that’s a normal reaction to pain and blood.)

I can’t be the only accident prone person in the kitchen, after all.  So I’m thinking a few segments on QVC and we’ll pretty much be set for life.

None of which has anything to do with this fritatta other than that, with its layers upon layers of crispy creamy roasted potato slices and toasty feta cheese topping, it is just the thing you want to have waiting for you in your fridge when both of your upper extremities are throbbing.

Which, hopefully, you wouldn’t know anything about buuuuuuuutttttt, if by some chance you do…I may know a girl in the full-body-oven-mitt business in the near future. Stay tuned.

Two years ago…Avocado Pistachio Creme Brulee, Roast Salmon with Sweet Chipotle Glaze and Hominy Puree
Three years ago…Eggplant and Tofu in Spicy Garlic Sauce
Four years ago…Penne with Artichokes, Black Olives and Peas

Potato Fritatta with Feta and Scallions
Serves 4-6, adapted from The Smitten Kitchen Cookbook

Ingredients

  • 2 tbsp olive oil
  • 1 3/4 lb yukon gold potatoes
  • 1/2 tsp salt, plus more for potatoes
  • freshly ground black pepper
  • 1/2 bunch (3-4) scallions, thinly sliced
  • 2/3 cup crumbled feta
  • 6 large eggs
  • 2 tbsp milk or cream

Instructions

  1. Preheat the oven to 400. Coat a baking pan or sheet with 2 tbsp olive oil. Peel the potatoes and cut them into 1/4-1/2-inch slices. Halve them so that they’re half circles. Place in prepared pan and then season generously with salt and black pepper. Roast 30 minutes or until mostly cooked, tossing once halfway through.
  2. Arrange the roasted potatoes in a cast-iron skillet or in the bottom of a 9-inch springform pan. Place the brown undersides of the potatoes facing up. Sprinkle the feta and scallions over the potatoes. In a medium bowl, beat together the eggs, cream, 1/2 tsp salt, and black pepper.  Pour over the  potatoes.
  3. Cover with foil and bake for 20 minutes or until just set. Remove the foil and cook for another 10-15 minutes, until puffed at the edges and set in the center.

  5. Ha – my husband and I have TOTALLY become Shark Tank junkies (we even DVR it in case we’re not home on Fri at 9pm but – who am I kidding – I usually am!). I NEED to make this frittata. Eggs are so good for baby and I just love potatoes and feta in everything!

  8. That fritatta looks so beautiful! (am I the only person that would call potatoes, feta, and eggs beautiful? hope not!) Feta sounds like the perfect cheese to use.

    PS would totally buy that oven mitt. Basically the day after I moved into my house, I set my entire hand on a hot burner on the stove. Good times…

  9. Love all the of layers of potatoes in this frittata Joanne! I have more scars on my forearm from oven burns than you can imagine! Blends well with my growing age spots (yuck!).

    I used to be incredibly accident prone in the kitchen. Cuts, burns…I cut myself the day before my Professional Engineer’s exam, ended up needing stitches and a tetanus shot. That was a fun 8 hour exam. Passed it though.

    I LOVE frittatas, and especially potatoes…will most definitely try this some day.

    Delicious and delicious. Oh and I love Shark Tank…..some of the sharks have incredible patience to listen to some of the guests on the show. Do you remember the guy they brought back twice? I think he was selling small bottles of wine to sell in arena’s…..oh he was such a jerk!!!!! Couldn’t stand him!!!!!!

    My kids have seen that show a few times and apparently it’s Emry’s favorite show now. Yes it would be cool to have a great idea and 15 minutes on QVC, we’d be set for life. Now if I just had a good idea…………..

I have had a pizza with these flavors in it and it’s amazing, I can only imagine how much better a fritatta would taste!!

    Sorry about the cooking injuries! My right forearm is full of scars from oven burns. I would be a good test candidate for the full body oven mitt.

  32. I also immediately think of inventions to solve problems rather than considering changing MY behavior (ha). Also super accident prone in the kitchen. Maybe, like, a full sleeve oven mitt? I’d also like some sort of wax-type-thing I could dip my fingers in that would protect them from being cut without having to wear gloves. Just while we’re making culinary nonsense creations over here.
    Anyway.
    This looks SO GOOD.
    Never thrown potatoes in a frittata before, sounds like an excellent call! I’ll have to try this weekend!

  39. Haha, I don’t know if I need a full body oven mitt but full length arm mitts (that still leave your arms functional) is a great idea – get on that! Love this fritatta too and the cheese no top looks heavenly!

  42. The weird thing about burns is that they tend not to hurt at first, and then suddenly they start to sting. They also look worse the day after 🙁 I hope you heal quickly!

  45. I’d like an automatic mandoline after slicing part of a finger off it took me a year just to use it again! I do use it but, an automatic one would be ideal…lol!!     I watch Shark Tank too. It’s an interesting show. Please tell me when you get that full-body oven mitt company going. I could definitely use a few of those. I have some many burn scars on my hands and forearms…it’s ridiculous. I also lit my hair on fire trying to start the grill one time. I should be more careful. Haha.

    Anyways, the frittata looks awesome. I wish I could eat it, but it has inspired me to come up with something similar. 🙂

    You aren’t the only one. I have burn scars on both of my forearms from the oven. Every year, about the time I start wearing short sleeves, I burn myself taking something out of the oven. Apparently, I graze my arms on the oven all winter only to be saved by my sleeves. Seems I could use your oven mitt too 🙂

  64. Slightly disappointed there are no actual sharks in Shark Tank, however with the amount of times I burn and slice myself in the kitchen, a full-body mitt most definitely has my approval. Would buy for sure. Love the sound of this fritatta, too! Especially with that decent amount of feta.
