If you’ve been in the blogosphere for long enough you’ve almost undoubtedly heard of Lori Lange of RecipeGirl.  She recently relaunched another site of hers, Culinary Covers, to which I will be a contributor, along with a whole slew of other awesome bloggers, in the months to come!  If you’ve asked yourself whether a given recipe deserves to be on the cover of a cookbook or cooking magazine, then this is definitely the site for you because that’s exactly what we’ll be doing!!  For my first post, I made the cover recipe from The Smitten Kitchen Cookbook – Tomato Scallion Shortcakes with Whipped Goat Cheese.  Head on over to check it out here!

Now, I do realize that Earth Day has passed but we are still in April, which is Earth Month, AND we kind of live on the earth all day every day…so it should really be Earth Day 365 days a year.  Recently, I stumbled across this fun site that Whole Foods has put together to celebrate Earth Month – EarthlingMonth.comhttp://earthlingmonth.com/.  Basically, this site is a collection of photos, tweets and videos that give a snapshot of all the things people are doing around the world to celebrate Earth Month, no matter how small or significant that action is.  It really is a celebration of earth’s beauty and bounty as well as an inspiring snapshot of all that is going on at a given moment in time to inspire change and maintain our planet’s beauty.  To participate, feel free to upload a photo, tweet, or video here or tweet or instagram using the hashtag #WFMearthling.

In addition, there are a series of fun Earth Month-centered events going on at Whole Foods this month. For instance, I know at my local Whole Foods there have been awesome events centering around Earth Month including interactive classes and sales on eco-friendly spring cleaning products.  To encourage you to head on over to your local Whole Foods and check out what’s been going on, Whole Foods has been kind enough to give me a $25 WHOLE FOODS GIFT CARD to give away to one of you guys!  All you have to do to enter is leave a comment telling me what you’ve done to celebrate Earth Month (or something that you plan to do).  I will choose a winner next Tuesday!

  1. What I’ve done to celebrate the month…I’ve used less than 1 tank of gas all month. Walking as much as I can and just driving less!

    And I have always wanted to make Deb’s cover recipe. You did it proud!

    I’m getting my front yard re-landscaped and insisting that they reuse as many of the existing plants as they can. Some bushes are dying and have to go, but there’s no reason to let hundreds of bulbs go to waste in the process!

    To celebrate Earth month I am doing a lot of spring cleaning and plan to donate a lot of old clothes and I am not using Ziploc bags or plastic grocery bags anymore, only Tupperware and reusable bags!

  6. This is such a gorgeous creation! I loooooove my smitten kitchen handbook, and have made almost every recipe from it… guilty. To celebrate Earth Day I helped preschool kids learn to garden at a local community center.

    I love Earth Day (wish it was every day in people’s minds). I have just started a balcony apartment garden. I am trying to grow herbs and small vegetables myself that I can use in the kitchen. I just noticed the first little signs of life peeking up through the soil! Exciting.

    I am trying to reduce my consumption of animal products (I am a lacto-ovo vegetarian) for Earth week, and planning to start a vermicomposter in my apartment!

    I have to admit that my 5-year old is responsible for our only Earth Day celebrations. Last night we went outside and picked up any trash he could find on our block. Luckily, there wasn’t much, but he felt so proud that he had done something. We also talked about how we recycle and various things that we can recycle. Thanks for the great giveaway! I’m there every week, so this would definitely come in handy.

    What a great giveaway–I’m so addicted to Whole Foods’ bulk section! For Earth Day, I’m making extra sure to bring re-usable bags when I go grocery shopping. I just put a bunch in my car today for my trip after work!

  17. Earth day is everyday for me. Or I try it to be anyway, I always walk everywhere or take public transit. I also never let water go to waste and never let it run. It annoys me so much when people let water run. Such a waste.

    To celebrate Earth Day/Month, I’m driving less and walking more…and shopping locally!

  19. I’m always trying to keep the Earth in mind! I eat vegetarian, have a set of dishes at work to avoid using throw away plates (yes, I do get funny looks in the break room!), I purposefully sought out a fuel efficient car, use energy efficient bulbs — all the small things!

  21. I give hand made (by me) crotchet grocery bags to family and friends. Avoid getting plastic bags and use energy efficient bulbs. I have also started using dish cloths more often than kitchen tissues.

    For Earth Month, I am trying to just spend as much time outdoors as possible! Working at a desk all day makes me truly appreciate being outside–and particularly at this time of year when the weather is starting to warm up! And since I was BORN on Earth Day, I celebrated that yesterday 🙂

    I do whipped cream cheese and whipped butter – whipped goat cheese sounds right up my alley.

  58. When the weather is nicer, I plan a nice day in the park, thinking a picnic may be part of it. Until then, I will keep recycling and reusing everything possible (love that being earth friendly is also often frugal).

    We try to celebrate the earth all year long by recycling and upcycling as much as we can, buying organic as much as possible, and using earth friendly household products. I also plan to purchase a Hybrid at the end of the year!

  74. What an awesome take on strawberry shortcake! This would be so delicious when fresh tomatoes are in season.

    For me it’s Earth Day every day that I go grocery shopping. I have two awesome Whole Foods tote bags so I never have to ask for a paper or plastic bag when I check out.
