You guys are not going to believe this but the reality of my relationship is that The.Boy’s biggest concern about living me with is that he is going to lose.weight.

Go ahead. Stifle a full-blown giggle attack. I’ll wait.

IMG_7177

No, but really. I’m serious.

And no matter how many times I try to explain to him that in order to merely maintain my weight while living with myself, I need to be conscientious about everything I put in my mouth and exercise like I’m training for a marathon nonstop (which, uh, I guess I kind of am)..he still insists on weighing himself two times a day. For good measure.

IMG_7166

In fact, just yesterday morning he proudly forlornly proclaimed that he had lost two pounds overnight.

Poor baby.

And just as he was opening his mouth to wail “Woe is me!” out of our window, I seized the opportunity and stuffed a few of these cream puffs in his mouth.

Just like that, breakfast was served.

I don’t think we’ll be worrying about that whole “weight loss” thing anymore.

IMG_7167

These are pretty much standard cream puffs but with a meyer lemon curd whipped cream filling.  They are {apparently} perfect for breakfast, a mid-morning snack, a midnight snack, and (I think) for Mother’s Day, which is rapidly approaching.

And for calming your boyfriends irrational fears about his weight. If only we all had such “problems”.

Cream Puffs with Meyer Lemon Cream Filling
Makes 32-40, adapted from Bon Appetit April 2010

Ingredients
For the cream puffs

  • 2 3/4 cups unbleached AP flour
  • 1/8 tsp salt
  • 1/2 tsp baking soda
  • 2 cups water
  • 3/4 stick plus 3 1/2 tbsp butter
  • 6 large eggs
For the filling
  • 1 cup sugar
  • 4 tbsp corn starch
  • 2 tbsp flour
  • 1/4 tsp salt
  • 1/2 cup cold water
  • 1/2 cup fresh-squeezed meyer lemon juice
  • 3 egg yolks
  • 2 tbsp butter, softened
  • 1 1/3 cups boiling water
  • 1 cup chilled heavy whipping cream

Instructions

For the cream puffs
  1. Preheat oven to 425.  Line a cookie sheet with parchment paper.  Sift the flour, salt, and baking soda together and set aside.
  2. In a heavy saucepan, heat the water.  Add the butter.  When melted, remove the pan from the stove and add the flour mixture all at once.  Beat with a wooden spoon, then return the pan to medium-high heat, beating the mixture until it comes away from the sides of the pan.  Remove the pan from the heat and add the eggs one at a time, beating with a wooden spoon or hand mixer in-between additions to mix well.
  3. Fill a pastry bag fitted with a 1/2-inch tip with the cream puff batter.  Squeeze out 3-inch puffs, about 1/2 inch apart on a cookie sheet.  Bake 20 minutes or until golden brown.  When done, carefully slit the side of each cream puff with a knife to allow steam to escape and to prevent the puffs from becoming soggy inside.  Transfer to cooling racks and let cool.
For the filling
  1. In a saucepan, combine the sugar, cornstarch, flour and salt. Gradually blend in the cold water and lemon juice.
  2. Add the egg yolks and butter, blending until smooth.
  3. Gradually add in the boiling water, stirring constantly.
  4. Place the saucepan over medium high heat and bring to a full boil, stirring gently with a spatula and scraping the bottom (to prevent burning). Once the mixture begins to thicken, reduce the heat and simmer for one minute.
  5. Remove the curd from heat. Cool completely in the fridge for two hours or overnight.
  6. Whip the heavy cream until peaks form. Fold the heavy cream into the meyer lemon curd in three additions.
To assemble the cream puffs
  1. Cut each puff horizontally in half and pull out any soft or moist dough in the center. Pipe about 1 tbsp of the meyer lemon cream onto each puff bottom. Press on puff tops to adhere. Chill until ready to serve.

I had to stifle a giggle and a groan – guys, right? Good move with these incredible-looking cream puffs ;) I’m a cream puff fan, but never thought of introducing a flavor like Meyer lemon. What a great idea! I have a feeling I can eat these several at a time :)

    Enjoy your weekend, Joanne!

  18. Woh is he. Does he cook? I am curious how you will share the cooking and eating. I still cook for myself and ROb, the same, but we share occasionally. It keeps us both sane. :) I bet you will be happy you have someone to help you eat all your desserts (you lab mates may cry though?). :)

  19. Jenn Kendall says:

  22. Johanna says:

Oh my gosh, I can relate! My husband, who works out about once a month, went to my gym with me the other day. He came out upset… I asked him what was wrong. “I’VE LOST THREE POUNDS!” It just ain’t fair right!?

  23. I wish I could lose two pounds over night. I kind of want to hit your boy…but since he’s not here I will have to resort to staring at this delicious recipe. Great one Joanne!

  24. Gwen says:

Boys suck! ;) my husband lost 20 lbs after we married all because he stopped drinking soda! Don’t tell the boy that! My hubby’s 6’8″ so 20lbs is nothin.

These puffs r so stinking cute! I’ll have to make some stat! ;)

  25. These look gorgeous. Anything this pretty simply has to taste good. He’s a lucky guy. Now just don’t be peeling grapes for him:-). Have a great day, Joanne. Blessings…Mary

  26. Stacy says:

I would have to ask myself, does he KNOW ME at all? How can he be worried about losing weight? Those cream puffs are gorgeous! And the filling just takes them over the top into fabulous.

  27. what a glorious choux pastry,
    Damn lovin it!

  28. Oh yum! These are so pretty, but I’m sure they taste heavenly too. I have a soft spot for cream puffs; my grandmother and I used to eat those ones from the frozen section as a treat. I need to try homemade ones though!

  29. Gloria Baker says:

ohh the men LOL Im a little tired to explain hubby the same:)
anyway these look amazing because are and I love all with lemon:)

  30. I continue to find meyer lemons in the market, but have yet to decide what to do with them. A meyer lemon cream sounds amazing all on it’s own, but stick it in a cream puff and you’re golden. I can’t believe he’s afraid that he’ll lose weight! If only we could all have to worry about that.. I’m sure you’ll set him straight, Joanne.

  31. These are delectable! I love anything lemon and these are the good lemons! :) Lovely post…

  32. That is funny that he’s concerned about losing weight! With all the awesome food you come up with?! These little devils look good for anytime…you’re right there!

  33. Debbie says:

I can’t figure out men….too difficult!!! I love all things lemon. These look so good!

  34. Hotly Spiced says:

What beautiful looking cream puffs. 99% of the western population would be thrilled to have worry of a no-effort weight loss program. Tell him he’s blessed. xx

  35. Amy says:

What a great way to serve breakfast! :D Actually, I don’t encounter that “problem”. My hubby is happily gaining weight with me, along with our babies. hahahha…anyway, I agree with you, I need to really watch what I eat and exercise a lot just to maintain my weight, sigh….

But, your cream puffs with Meyer Lemon cream look and sound so good that I think it’s worth it to gain a few pounds for the treats. ;) Wish you a wonderful weekend ahead.

  36. I seriously doubt he’s fading away. Was that a cry for attention, poor baby? Hopefully, these gorgeous cream puffs did the trick. They are so beautiful! I never thought of piping the batter – great idea.

  37. Dixya says:

My boyfriend has same worries. It’s nice when you can hand them cake or cookies and call It a breakfast. I think he will love this.

  38. Ugh, BOYS!!! Seriously, so unfair. The sole reason I make desserts is to keep my husband from losing weight with all his running and generally high metabolism…ok, and part of it is so I can eat them too ;) These look really good. I love lemony sweets!

  39. P says:

These cream puffs look 10000x better than those kind at Sam’s Club (although I can’t ever pass up those samples!). I can’t believe the boy is afraid of losing weight, especially with all this good food your cooking for him :P!

  40. G’day! These look lovely and delish!
Having one NOW is my food wish! :)
    Cheers!
    Joanne

  41. Kari says:

I am finding it hard to summon up much sympathy for your boyfriend, but agree that his concerns did initiate some giggles. Does he not know your baking powers?! I’m sure he’s amply reassured by these, which look great – I love the use of meyer lemons!

  42. Oh my I d finish them all right now. I should recreate your recipe Joanne. =)

  43. Audra says:

That story is too funny. I have a feeling he’ll manage just fine :) These look fabulous- I’ve never made cream puffs- you’ve inspired me!!

  44. Meyer Lemon Cream filling?! I’m in love!

  45. Colynn O says:

Men and their weight issues…what a shame. Good thing he has you around to stuff his face with cream puffs! These look amazinggggg.

  46. Lynn says:

I was salivating just at the title! Yum.

  47. Cathleen says:

Haha, if only I had that problem..
These look perfect! I would totally eat them for breakfast!

  48. Annie Patz says:

Uhhg my boyfriend is the same way! He’s a Dietitian so he is constantly watching his weight even though he has a fast metabolism and I want to slap him and scream JUST EAT THE COOKIE! Ha. But really these cream puffs look delicious and refreshing for the summer times!

  49. *sigh* Well, just looking at these is probably growing my hips. BUT, but, BUT! I don’t care. I would eat all of these. They’re mini…I’d justify it.

  50. Bahahaha, my boyfriend is the total opposite! He’s always blaming me (lovingly) for his weight gains. Food blogger partner problems ;)

These cream puffs look awesome!!! I want 3 like right now.

  51. haha that is awesome for him that he gets to eat as many of your delicious treats as he wants, also good for you that you have someone to help you eat everything you make, and just enraging for the rest of us! lol

  52. Monica says:

Those are some good-looking cream puffs! I wish I had to “worry about” losing weight like that – ha!

  53. Wendy says:

These are so pretty! I have made cream puffs before but mine don’t look this pretty! I never used a pastry bag for them! I have to do this! Your recipe says a 1/2 inch tip but it has to be some kind of star tip to get those lovely ridges. Could you tell me what number tip you used?

  54. I definitely wish I had your boyfriend’s problem! Your cream puffs look divine, I love the shape of them and I really love the look of that lemon filling!

  55. Yasmeen says:

Poor baby is right…. (not exactly). He’s a lucky man to live with you, given all your amazing treats. You do well balancing with veggies though, so I’m sure you’ll both be right in the end :)

On to the creampuffs: these are basically everything I love in a dessert: pastry, lemon, and dairy. Yes.

  56. I would like to loose two pounds overnight just so I could enjoy your cream puffs. The Boy is so lucky!

  57. Oh yes… I wouldn’t be able to resist these either. And since I don’t work out as much as I should, I’d become enormous almost overnight.

  58. Hehe:) He’s quite lucky that you made these cream puffs for him. They look amazing!

  59. haha. these look like the perfect way to ensure the boy’s worries do not come true!

  60. Sara says:

These look fantastic…that meyer lemon filling is just divine!

  61. Kim says:

Cream puffs for breakfast is like a dream come true!

  62. Claudia says:

Now I know what I was saving those egg yolks for. Your boy is a funny dude. Most folks are straining to lose lbs. Cute.

  63. LOL, that’s a completely crazy worry – has he seen your amazing food? He will be very well fed! I would totally eat your cream puffs for breakfast too, love the addition of lemon!

  64. Reeni says:

So funny! Cream puffs for breakfast and he’s worried? If only I had such worries! I never saw such adorable cream puffs. I wish you’d stuff one in my mouth!

  65. grace says:

maybe that’s why i like to put food in people’s mouths–it stops them from complaining for a while. :)

  66. exactly how many lemons does it take for a half cup?
i almost passed out when I saw the price of those lemons at whole foods, and here my friends in cali have them growing on their trees in abundance!!

  67. Nice job with the cream puffs! People ask my husband all the time how he doesn’t gain weight living with me. I feel like you bake just as much (maybe more) than I do, so The.Boy should be OK!

  68. Lora says:

Love cream puffs. Love the Meyer lemon flavor.

  69. Darn it, I wish my husband had your boyfriend’s metabolism!! He complains that I bake too much yummy stuff and that he’ll get fat. He eats less than I do these days, which is entirely weird. I do make some indulgent treats but mostly healthy, wholesome food. I’ll bookmark this recipe for our next treat attack. I reckon they’re worth every calorie!

  70. Natalie says:

okay kind of hate the boy right now! but love these, and how little they are!!! so so adorable!

  71. Nutmeg Nanny says:

These are so pretty :) I’d love to whip these up soon, they look delicious!

  72. You are totally killing it with these posts recently! LOVE LOVE the notion of meyer lemon anything – but a creamy filling inside puffs? Delish!

  73. Laura says:

I might want one of these with a vengeance. Like now. Boy they look good. And boyfriends (and husbands) who easily lose weight suck.
