Last week a certain boyfriend of mine informed me that he refused to even consider the possibility of purchasing a certain sparkly accoutrement for a certain {barren} finger of mine until our families met each other.

So this weekend…we’re making it happen.

His family. My family. Our apartment. Dinner, dessert, and wine. Lots and lots of wine.  (Really. So. Much. Wine.)

Don’t worry. I’m not in a state of panic. Not in the slightest.

(But it’s totally reasonable to start taste testing some of that wine now, right?)

Now that it’s summer, in addition to dessert, I kind of feel like we need a classy refreshing beverage to drink with it.

Because, I mean…cake is great. But cake PLUS a matching smoothie in 90 degree weather.?

Which is why I’m SO excited to share with you a fabulous new smoothie recipe e-book written by two of my favorite ladies – Faith Gorsky of  An Edible Mosaic and Alyssa Brantley of Everyday Maven – that is being released TODAY.

Part of the beauty of all of this is that when I say e-book, I actually mean e-books. Plural.

BLEND has truly been a labor of love for Alyssa and Faith, as they are pretty obsessed with creating and elevating smoothies to an artisanal-quality level. They have been working on this project for the last year and a half, and their hard work has certainly paid off as the smoothie recipes that have resulted from it have perfectly balanced flavor profiles that are achieved through the use of clean, easy-to-find, healthy delicious ingredients.

The first smoothie I tried from BLEND was the maple walnut coffee smoothie, which I paired with a tiramisu that also uses the maple coffee flavor combo to infuse it with delicious flavor.  The two were truly the perfect pair and, either served together or separately, make for fabulous summery treats.

Maple Walnut Coffee Smoothie
Makes 1-2, adapted from Blend: Artisanal Smoothies for Food Lovers, Summer Volume 1

Ingredients

  • 2 tbsp walnuts
  • 2 tbsp rolled oats
  • 3/4 cup plain, unsweetened almond milk
  • 1/2 tbsp instant espresso or coffee
  • 1 pinch sea salt
  • 1 packet stevia
  • 1/2 tsp vanilla extract
  • 1 tsp maple extract
  • 2 Medjool dates, pitted and coarsely chopped
  • 6-8 ice cubes

Instructions

  1. Put the walnuts and oats in a blender and pulse until ground to a fine powder.
  2. Add all of the remaining ingredients (except for the ice) and process until smooth.
  3. Add the ice and pulse until pulverized. Serve immediately.

Green Mountain Tiramisu
Serves 10, adapted from Bake It Like You Mean It

Ingredients
For the ladyfingers layer:

  • 3 eggs, separated, at room temeperature
  • 2 drops fresh lemon juice
  • 1/2 tsp salt
  • 1/4 cup (50 g) sugar
  • 2 tbsp maple syrup
  • 1/2 cup (70 g) bread flour
  • 6 tbsp (50 g) cornstarch

For the filling: 

  • 1/2 cup dark rum, divided
  • 1 tsp powdered gelatin
  • 3 egg yolks
  • 6 tbsp maple syrup
  • 1 cup heavy cream
  • 1 cup (250 g) mascarpone

For the assembly:

  • 1 cup strong coffee, at room temperature
  • 1/4 cup (20 g) Dutch-process cocoa powder

Instructions

  1. For the ladyfingers layer, preheat the oven to 425. Line a half sheet pan with parchment paper and grease or spray with nonstick cooking spray.
  2. In the bowl of a stand mixer fitted with the whisk, combine the egg whites, lemon juice, and salt. Whisk until the mixture is foamy. With the mixer on high, slowly pour in the granulated sugar, and keep whisking until the egg whites form stiff peaks but aren’t dry. Transfer the egg white mixture to a clean bowl and set aside.
  3. In the bowl of the stand mixer (don’t bother cleaning it), combine the egg yolks and maple syrup. Whisk on high until pale and thick. Sift the flour and cornstarch into the yolk mixture and incorporate with a large rubber spatula.
  4. Add a third of the egg whites to the yolk mixture and stir gently until incorporated. Add the remaining whites and gently fold into the batter until there are no longer any white streaks.
  5. Spread the batter into the prepared pan in an even layer. Bake for 10 minutes, or until golden brown. Set aside to cool.
  6. For the filling, pour half of the rum into a microwaveable bowl and sprinkle the gelatin over it in an even layer, allowing it to bloom. Let it sit for 3 minutes. Microwave at 50% power in 10-second intervals until gelatin has completely dissolved, swirling the bowl in-between each one.
  7. In the bowl of a stand mixer fitted with the paddle attachment, combine the egg yolks, maple syrup and remaining rum. Set the stand mixer bowl over a saucepan of simmering water. Whisk constantly over medium-low heat until the mixture thickens so that it coats the back of a spoon. Transfer back to the stand mixer and whisk on high speed until the bowl is cool. Transfer to a clean bowl, cover with plastic wrap and refrigerate.
  8. In the same stand mixer bowl, combine the heavy cream and mascarpone. Beat until they form stiff peaks.
  9. Remove the egg yolk mix from the fridge. Add a spoonful of it to the bowl containing the gelatin. Stir until completely combined. Pour the gelatin mix into the bowl with the yolk mix. Stir to combine. Add a third of the cream-mascarpone mixture to the egg yolk-gelatin mixture. Stir to combine. Add the remaining cream mixture and gently fold it into the yolk-gelatin mixture until well combined.
  10. To assemble, run a paring knife along the edge of the sheet pan that the ladyfinger layer is on, to release any bits of ladyfinger that have stuck. Invert the sheet pan onto a cutting board of the same size or larger. Remove the parchment paper from the cake.
  11. Cut the cake into 3 strips, each 3 1/2 x 16 inches.
  12. Put one ladyfinger strip on a serving platter and brush it lightly with the coffee. Spread a third of the filling onto this layer. Sift 1 tbsp cocoa powder over it. Cover with a second ladyfinger strip and brush this with the coffee. Let cake set in the freezer for 10 minutes. Remove the cake from the freezer and brush the top layer with the remaining coffee. Spread it with the remaining filling and smooth. Dust with an even layer of the remaining cocoa powder. Serve immediately.

  4. Tiramisu isn’t typically my dessert of choice, but when I was reading your post this morning and saw your pic, it made me crave it really badly!!! It could be because I haven’t had breakfast yet and would probably eat my own arm if I had to…but I think it’s more likely because it looks so creamy and delicious.

    And OhMyGosh, a meeting of the families!!! That is beyond exciting. I hope it goes really well. My husband’s and my family get togethers have been slightly awkward (though not bad per se), but hopefully your two families have more in common. I also hope that this means your “sparkly acoutrement” is forthcoming…preferably before the end of summer 😉 Fingers crossed!!

    Good luck with the family get-together! It’s always nerve-wracking to bring families together. All of my husband’s family are in his home country, so we ended up traveling there a few years ago so I could meet them. The language barrier made things even more interesting, but they were very kind to me during our visit. :)
