These savory chickpea pancakes with spicy roasted carrots, sweet potatoes, and feta make for a perfect gluten-free brunch.
I’ve made a pastime out of putting weird ingredients into The.Boy’s food and then waiting for him to eat it before telling him.
I figure it’s only fair since he’s made it a pastime to scream at the television while watching various History Channel documentaries. Case in point – “James K. Polk was the most politically badass president”.
That is a direct quote.

Of course, it only really works if he knows what the “special” ingredients are to begin with.
So, when I put these pancakes smothered in spiced-but-not-too-spicy roasted carrots, sweet potatoes, and feta in front of him, watched him inhale them, and then told him there was chickpea flour in them. And his response was a blank and confused stare and not a look of horror?
Not really what I was going for.
But, given that it means that I made a GLUTEN-FREE pancake that was totally undiscernable from its wheat-filled counterpart? I’ll take it.
These are absolutely perfect served as brunch fare, and would be made all the better with a poached egg on top.
And if you choose to play the “guess the ingredient” game with whoever you’re serving them to?
No shame in that. It’s half the fun, after all.
One year ago…Red Lentil Dal with Charred Onions
Three years ago…Red Velvet Black and White Cookies
Four years ago…Snickerdoodles
Five years ago…Shells with Turkey Sausage and Broccoli Rabe
- 2 cups chickpea flour
- 2 cups buttermilk
- 1 tsp baking powder
- ½ tsp salt
- 1 tbsp nut butter
- 3 tbsp olive oil
- 6 carrots, peeled and cut into ½-inch dice
- 1 medium sweet potato, peeled and cut into ½-inch dice
- 2 tbsp olive oil
- ½ tsp smoked paprika
- ½ tsp cinnamon
- ¼ tsp chipotle chili powder
- ¼ tsp cumin
- salt, to taste
- 4 oz feta cheese, crumbled
- Heat oven to 400.
- In a large bowl, toss together the carrot and sweet potato cubes with the olive oil, smoked paprika, cinnamon, chili powder, and cumin. Spread over a parchment-lined baking sheet and sprinkle with salt. Roast for 20-30 minutes or until tender.
- Meanwhile, in a large bowl, whisk together the chickpea flour, buttermilk, baking powder, salt, nut butter and olive oil. Let sit for 10 minutes.
- Spread a layer of butter on a nonstick skillet and heat over medium heat. Pour a scant ¼ cup of pancake batter into the skillet for each pancake, making sure not to crowd the pan. Cook until small bubbles start to form on the top of the pancakes and the edges start to be golden brown. Flip and cook for another few minutes, until golden brown. Transfer to a plate and repeat with remaining batter.
- Serve pancakes topped with the roasted veggies and a sprinkling of feta.
I can just taste those ingredients together. Looks and sounds so good!
I’m so glad you posted this recipe – my mouth was totally watering when you posted the pic on instagram! It’s such a great combination of flavours; I usually turn chickpea pancakes into some kind of pizza-hybrid but I’m definitely going to try this next time I make them!
Love this creative way to serve pancakes! I also love maple-glazed carrots, so I wonder if a little maple syrup would be awesome drizzled on top! (I’m basically Buddy the Elf and try to make a case for syrup on everything!).
These look amazing on their own – but I agree – they would be even better with a poached egg on top! We can’t get enough eggs these days. We’ll put them on just about anything 🙂

These sound soooo good. Josh and I usually have a dont ask, dont tell policy when it comes to what is or is not in his food 😉 I think he’d be on board with chickpea flour though if it meant he could get more smoked paprika into his life. Obsessed.

i make savory pancake using chickpea flour a lot but never added buttermilk..I sometimes throw in some rice flour too..it makes it slightly crispy 🙂

These pancakes sound great! The feta is a particularly nice counterpoint to chickpea. I used to make really simple savory pancakes with just chickpea flour, water, salt, and whatever vegetable I thought sounded good. Definitely need to get my hands on another bag of chickpea flour!
I do that to my dad all the time. He won’t try things unless I don’t tell him what’s in them. I’m okay with that. In fact it kinda makes me feel like a super spy bad ass 🙂 So want to try these pancakes!
Just the recipe I need! I got a huge bag of chickpea flour from the Indian store (don’t ask me why) and now I’ve been struggling to figure out what to do with – UNTIL NOW. I don’t have buttermilk but I do have whole milk and some acidity that I can add!

This is such a beautiful dish. I love that you’ve made the pancakes pancake-like instead of crepe-like, which is how I’ve seen chickpea flour used previously. It’s such a versatile flour and you’re right, doesn’t give rise to suspicious comments mid-mouthful from those who might not normally choose it!

Ooh… Jeff loves pancakes. I wonder if I can pull one over on him with these. He would be pretty horrified to find out he’d eaten chickpeas though, even in flour form, so I probably wouldn’t tell him. Usually he just doesn’t want to know when I do things like that! Me, I would love these… especially knowing what’s in them!
chickpea flour is brilliant – so yes please to those pancakes – I can imagine the flour might be noticeably if they are eaten alone but feta and roasted veg would do the trick – maybe I should try them on sylvia
