Gooey always feels like the right thing to do.

Especially now that we’re entering cookie swap season and we want to be that girl who brings something truly unique and captivating that will win over the hearts of millions.

Instead of that girl who’s hiding in a corner because her cookies are so weird that everyone is scared to try them.

I’ve been both on both sides of the cookie swap spectrum. So…trust me on this one.

You’re in safe hands with these.

What makes these blondies extra special is that they’re made with a solid dose of honey instead of all sugar. The honey caramelizes during it’s stint in the oven, yielding a bar cookie that is the epitome of textural perfection.

Large and in charge chocolate chips in every bite don’t hurt either.

My only word of advice when it comes to these is MAKE EXTRA. And cut them small. I’m not the type to say something is too rich, ever, but these are rich enough that a small square will suffice.

It was hard, but I even managed to spare a few to share with my Leftovers Club partner, Elizabeth from Food Ramblings! That’s just good cookie swapping etiquette. She sent me some fabuloso banana bread scones that were a godsend on crazy wedding planning days.

  3. oh yes!! Gooey always feels like the right thing to do!! Love these one bowl honey blondies. . blondies are my ultimate weakness. . and love the sunken in pecans on top. . winning, yo.

  4. Sooooo I’m obsessed with baking with honey…my father in law keeps bees and every year we’re left with a gazillion gallons of spectacular honey to use up. TOTALLY making these bars the second I get to Canada.

  5. Lucky Elizabeth!!! Joanne, these look wonderful – I love your brown sugar and honey combo and with pecans and “large and in charge” chocolate chips – these sure are a hit!

  6. SallyBR says:

I hear you on the “both sides of the spectrum” – I’ve been offered a few cookies that come with a speech before, stating that even though they have no sugar, no wheat, and no fat, they taste great. I will love them.

guess what? they taste like cardboard.

give me gooey and fudgy anytime, I can have just one and move on with a big smile 😉

  7. cheri says:

So funny, yes I have also been on both sides of the spectrum with my treats. But these definitely would be a big winner in my family. They look delicious!

  8. Sweet and gooey just the way we like them!

  9. Heather says:

  12. Meg says:

Ooh, yes — these look awesome. And I totally agree on cutting rich desserts into smaller pieces! I actually pre-sliced the peppermint brownies I took to a party last week into itty-bitty squares (to make sure I had enough!), and I was worried friends would feel like I’d ripped them off with my small portions . . . but more than one person thanked me for that! Sometimes a “taste” is all you need, especially when you have so many other good eats hanging around.

  13. I can just picture myself sinking my teeth into one of these beauties! Jealous of Elizabeth!

  14. Holyyy. These blondies. I just.. no words. <3

  15. Gooey is always a winning result. Unless it’s on your face, but even then, it’s usually offset by the deliciousness that preceded said face mess.

  16. These blondies look terrific! Wish I can have one now with my tea 🙂

  17. These do sound so incredibly gooey. I am loving that they have pecans in them too. I have a bit of a pecan obsession at the moment.
