I like my sandwiches like I like my men.

Topless.

Not all men.

Construction workers with beer bellies who insist on smoking three inches away from the “NO SMOKING – CONSTRUCTION ZONE” signs. Ewwwwwwwwwwwwww.

Vomit. No.

Bradley Cooper – YES. Just….YES.

IMG_4572

We watched American Sniper last night, can’t you tell?

And let me just say there was nowhere near enough topless Bradley. Brad? B. Coop?

We are totally on a first name/cute nickname basis. (<–In.My.Dreams.)

Annnnyyywaaayyys. Apparently Sandwich Sunday is coming up!!!

Oh, it’s called Superbowl Sunday? Oh. OH.

Well, for me it’s all about the food so you can see how I would have gotten confused.

The Superbowl is unarguably a HUGE food holiday, second only to Thanksgiving and Christmas, but unfortunately for the vegetarians in the room almost all of the food is centered around MEAT. Burgers, chili, bacon, subs as long as an NBA player’s height that consist solely of every processed animal product you can find at the deli counter.

IMG_4582

Personally, I don’t care what anyone else eats so long as my only option is not the raw veggies on the crudite platter. And if there’s one thing I’ve learned in this life it’s that if you want something to eat, you should probably just make it yourself. Otherwise it ends up with “vegetarian chicken broth” in it (<–mom, I’m looking at YOU.)

Enter – SANDWICHES!!

But not just any sandwiches.

These are spiced up white bean hummus topped with sweet maple roasted butternut squash topped with luscious caramelized onion topped with spicy melty cheese sandwiches. Topped with nothing because they’re European lascivious like that.

Quite a mouthful.

I advise you to make extra, because one bite and even the so-called meat eaters will be hiding in the corner pretending not to eat them while shoving them in their mouth as quickly as possible so that no one sees. Yes, I’m onto you.

Roasted Butternut Squash, Caramelized Onion, and Spicy White Bean Sandwiches

Cater to everyone at your superbowl party with these roasted butternut squash, caramelized onion, and spicy white bean sandwiches! Perfect for vegetarians and meat-eaters, alike.
Yield: 12-16 open-faced sandwiches
Ingredients
For the butternut squash
  • 1 medium butternut squash, peeled, seeded, and cut into 1-inch dice
  • 1 tbsp olive oil
  • 2 tbsp maple syrup
  • salt and black pepper, to taste
For the caramelized onions
  • 3 medium onions, thinly sliced
  • 2 tbsp butter
  • pinch of salt
  • 2-4 tbsp of beer, white wine, or red wine
For the white beans
  • 2 cups cooked white beans
  • 1 tsp red pepper flakes
  • 2 tbsp olive oil
For the sandwiches
  • 12-16 slices of bread
  • ½ lb spicy gouda cheese, sliced
Instructions
  1. Heat oven to 400F.
  2. In a large bowl, toss together the butternut squash, olive oil, maple syrup, salt and black pepper. Spread on a parchment-lined baking sheet and bake for 25-30 minutes, or until tender. Set aside and lower oven to 350F.
  3. Meanwhile, start the caramelized onions. In a large saute pan, melt the butter over medium heat. Add the onions to the pan and saute, stirring, until they are evenly coated with the butter. Cook for 40 minutes or until the onions start to turn an amber color, stirring every 3-5 minutes and scraping the bottom of the pan as you do. Once the onions have reached the desired color, season with salt and add the alcohol one tablespoon at a time, scraping up any of the brown bits from the bottom of the pan. Remove from the heat and set aside.
  4. For the white bean puree, in the bowl of a food processor, combine the white beans, red pepper flakes, and olive oil. Pulse until pureed. Season to taste with salt and black pepper.
  5. On each slice of bread, spread a layer of the white bean puree. Top with the butternut squash, caramelized onions, and a slice of cheese. Place on a parchment-lined baking sheet and heat in the oven for 4-5 minutes, or until cheese is melted. Serve warm.

Well this just looks rude good. Have you had the squash toast from ABC Kitchen? It’s one of my favorite bites in New York — bucket list if you haven’t! The NYT posted the recipe a few years ago, which I’ve also made to great crowd-pleasure: http://cooking.nytimes.com/recipes/12944-jean-georges-vongerichtens-squash-on-toast

  5. Any sandwich with caramelised onions in is good with me. I can’t get enough of them.

  43. Johanna GGG says:

ok I had to query my resident Brit if it can be a sandwich without a top and he says it is called an open sandwich. But no matter what we call it, that looks amazing – almost worth watching the superbowl (not that I am ever sure what it is but always hope it is a huge bowl of food – ha ha)

  44. Natalie says:

oh yes! pinning–and probably making them with 2 slices of bread and smashed in my panini press. more carbs is never a bad thing!

  45. Ala says:

Oh my GAWD did you watch American Sniper too? Seriously though–that man buffs up sooo well! Swoon. Topless. Hand me a topless sammy so I can stuff my face and stop swooning–though then it was a reallllly bad idea to watch He’s Just Not That Into You late last night, because seriously, if anything I prefer him in that. Ahhhhhhhhh Joanneeee woe is us

  46. This looks wonderful! I’m crazy about butternut squash, but I’ve never tried it on a sandwich before. Great idea!
