Popsicles! For breakfast! And we don’t even have to feel like we should put ourselves in a punishment corner for it.

I feel like we’ve made it in life.

The way I see it, breakfast ignites one of two passions in people: lust or total and utter disdain.

There is no question that I am the former. I race out of bed because I’ve been dreaming about what I’m going to eat for breakfast since the night before. It’s almost a problem.

But I totally get that there are some people whose response to eating anything before noon is, “You want me to do what?! With what?! WHEN?!

In fact, I have a husband like that.

I would like to say that we’ve learned to agree to disagree, but actually I just feel too strongly that breakfast is THE most important meal of the day…so mostly I just spend a lot of time trying to shove nutrition down his throat before he leaves for work in the morning.

Through some trial and error (okay…a lot of error) I’ve found that he is more likely to eat if something is grab-and-go or easily inhale-able than if he has to make any effort at all to eat it.

That’s where these popsicles come in.

They are basically a frozen yogurt parfait on a stick! Mixed with some peach pie influence. Just enough to make them feel wrong but taste so right.

Just blend up some seasonal stone fruit with honey greek yogurt, a touch of cinnamon, and a touch of sugar (though this can be adjusted according to taste and how sweet your fruit is!). Crush up some Weetabix with a bit of brown sugar, more cinnamon, and butter to hold it all together. Alternate layers in a popsicle mold and then FREEZE.

Followed by eating to your heart’s desire. But especially at breakfast..because we all deserve to start our day right.

In case you guys haven’t heard of Weetabix, no sweat! I only recently learned about their awesomeness. Picture a whole grain cereal that comes in the shape of biscuits, but eats like oatmeal.

It’s almost like you get two breakfasts in one.

Made with 365 whole grain kernels PER BISCUIT and 32 grams of whole grains per serving, this is a cereal you can feel good about eating (and good about serving to your kids!). Plus, the ingredient list is laughably short, consisting of only FOUR INGREDIENTS – whole wheat, barley malt extract, cane sugar, and salt. You can eat it straight up with milk, make popsicles like I did here, sprinkle it over ice cream or other creamy desserts, or even incorporate it into dinner! The sky really is the limit…especially if you’ve had breakfast first.

Peach Pluot Parfait Popsicles
 
Filled with a fruity yogurt blend and a whole grain streusel these peach pluot parfait popsicles are the perfect grab-and-go summer breakfast!
Yield: 10 popsicles
Ingredients
  • 2 large peaches, pitted
  • 2 pluots, pitted
  • ½ cup honey Greek yogurt
  • 2 tbsp sugar
  • ½ tsp cinnamon
For the streusel
  • 4 Weetabix biscuits
  • 3 tbsp brown sugar
  • 2 tbsp melted butter
  • 1 tsp cinnamon
Instructions
  1. Cut the peaches and pluots into slice and place in the bowl of a blender or food processor. Add the Greek yogurt, sugar, and cinnamon and pulse until totally pureed. Set aside.
  2. For the streusel, break up the Weetabix biscuits into a medium bowl. Stir in the brown sugar, cinnamon, and melted butter. Mix until totally combined.
  3. Fill the popsicle molds halfway with the peach pluot yogurt mixture. Add a layer of streusel, followed by a second layer of peach pluot yogurt mix. Top off with streusel.
  4. Add the popsicle sticks so that they are inserted about ¾ of the way into the mold. Put in the freezer and let chill until frozen.

  4. It’s really the streusel that had me in these. Peaches can be scary for me. They are either so juicy and bursting with peachy flavor that they make you weak in the knees or they are dry and furry and utterly tasteless. The best ones I had all summer were when I was down in the Keys for 4th of July. If I can scare a few more up this is the first thing I’ll be making.

    haven’t had weetbix for ages – love it with peanut butter smeared over it but your mouth glues up – interesting to put it in popsicles – am afraid it would be too soggy – but I do love these sort of yoghurt and berry iced treats – made some this week to save some yoghurt from getting too old
