Warm soft corn tortillas are topped with black beans, cotija cheese, and lightly spiced roasted sweet potatoes, poblano peppers, and corn. They are sweet, salty, spicy, and everything you want in a vegetarian taco.

I feel like people ask you this all the time starting from when your baby is, like, 1 week old.
And you have to be all “Errrr, uhhh, (insert downward glance/ashamed face) no.”
BECAUSE WHAT ONE WEEK OLD SLEEPS THROUGH THE NIGHT?!
And also, side note, why as a society are we obsessed with forcing our littlest ones to sleep for twelve hours at a time without eating? I don’t even go twelve hours without eating and I’m an ADULT. This is normal human behavior! FEED YOUR BABIES PEOPLE.

Anyways, can someone PLEASE ask me again because this time I can finally say, at 14 months of age….my baby sleeps through the night! In her own bedroom! (Because, yeah, she was also sleeping through the night in MY bed, latched onto my boob for 8 hours straight. But apparently that doesn’t count??)
I really shouldn’t have said anything because I’m totally going to jinx it, BUT it’s been almost two weeks. So I think we’re good? Until she gets a tooth or the wind changes or something. Kids are fickle like that.
I’ve always been a MAJOR supporter of the idea that sleep is developmental and your kid will sleep on their own when they’re ready and not a minute before. This has made me believe that EVEN MORE.
Because one night Remy was waking up at 1AM and then sleeping in our bed for the rest of the night. And the next she was sleeping in her own bed until 5:30-7:30AM. (It’s variable.)
Honestly, we did absolutely nothing to make this happen. Mike claims that we did crying it out because he let her cry for five minutes the first night and then she put herself back to sleep, but I don’t really believe that’s it because we did that like a million nights previously and it did nothing.
She was just ready. And the rest is history.
Tacos to celebrate??
They’re the best way.
These are full of sweet smoky spicy caramelized roasted veggies, salty cotija cheese, and hearty black beans. Yeah, you have to turn the oven on, but you could probably also grill the veggies for an even better, deeper flavor. If you try it let me know!
And please please please, if you’re a momma with a kiddo who isn’t sleeping through the night yet, don’t let this post stress you out! If it can happen for me, it can happen for you. I promise.
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 large sweet potato, peeled and cut into ½-inch cubes
- 1 poblano pepper, stemmed seeded and cut into ½-inch cubes
- 1 large onion, peeled and cut into ½-inch cubes
- 2 ears corn kernels
- 1 ½ tsp ground cumin
- 1 ½ tsp ground coriander
- 1 tsp salt
- ½ tsp black pepper
- 2 cups cooked black beans
- 6 oz cotija cheese, crumbled
- 12 (6-inch) corn tortillas
- Heat oven to 450F.
- In a large bowl, toss together the oil, garlic, sweet potato, poblano pepper, onion, corn, cumin, coriander, salt and black pepper. Spread on a parchment-lined baking sheet and roast until veggies are tender, about 20-30 minutes.
- Warm the corn tortillas according to package directions.
- Divide the roasted vegetables and black beans among the tortillas. Top with the cotija cheese. Serve.

These look so good. And if it makes you feel any better, I don’t think either of my kids slept through the night consistently until they were 5. So that was 7 years of no sleep and you know what? I still don’t sleep. They do though.
