Roasted Butternut Squash, Caramelized Onion, and Spicy White Bean Sandwiches
 
 
Cater to everyone at your superbowl party with these roasted butternut squash, caramelized onion, and spicy white bean sandwiches! Perfect for vegetarians and meat-eaters, alike.
Yield: 12-16 open-faced sandwiches
Ingredients
For the butternut squash
  • 1 medium butternut squash, peeled, seeded, and cut into 1-inch dice
  • 1 tbsp olive oil
  • 2 tbsp maple syrup
  • salt and black pepper, to taste
For the caramelized onions
  • 3 medium onions, thinly sliced
  • 2 tbsp butter
  • pinch of salt
  • 2-4 tbsp of beer, white wine, or red wine
For the white beans
  • 2 cups cooked white beans
  • 1 tsp red pepper flakes
  • 2 tbsp olive oil
For the sandwiches
  • 12-16 slices of bread
  • ½ lb spicy gouda cheese, sliced
Instructions
  1. Heat oven to 400F.
  2. In a large bowl, toss together the butternut squash, olive oil, maple syrup, salt and black pepper. Spread on a parchment-lined baking sheet and bake for 25-30 minutes, or until tender. Set aside and lower oven to 350F.
  3. Meanwhile, start the caramelized onions. In a large saute pan, melt the butter over medium heat. Add the onions to the pan and saute, stirring, until they are evenly coated with the butter. Cook for 40 minutes or until the onions start to turn an amber color, stirring every 3-5 minutes and scraping the bottom of the pan as you do. Once the onions have reached the desired color, season with salt and add the alcohol one tablespoon at a time, scraping up any of the brown bits from the bottom of the pan. Remove from the heat and set aside.
  4. For the white bean puree, in the bowl of a food processor, combine the white beans, red pepper flakes, and olive oil. Pulse until pureed. Season to taste with salt and black pepper.
  5. On each slice of bread, spread a layer of the white bean puree. Top with the butternut squash, caramelized onions, and a slice of cheese. Place on a parchment-lined baking sheet and heat in the oven for 4-5 minutes, or until cheese is melted. Serve warm.
