Caramelized Apricot, Basil, and Ricotta Toast with Balsamic Reduction
 
 
Caramelized apricots are paired with basil and fresh ricotta in these truly delectable toasts that are perfect for breakfast, lunch, or easy summer appetizers.
Yield: 8 toasts
Ingredients
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • 4 apricots, seeded and thinly sliced
  • 2 8-inch baguettes, halved lengthwise and crosswise
  • 8 oz ricotta
  • ΒΌ cup basil
  • Balsamic reduction
Instructions
  1. Heat oven to 400F.
  2. Melt the butter in a large saucepan over medium heat. Stir in the brown sugar and allow to melt. Add the apricots to the pan and saute for 4-5 minutes or until they start to release their juices and soften. Remove from the heat.
  3. Place the baguettes cut side-up on a parchment-lined baking sheet. Bake for 10 minutes, or until lightly toasted.
  4. Spread the ricotta evenly on each of the toasted baguettes. Top with the caramelized apricots, basil, and a drizzle of the balsamic reduction. Serve warm or at room temperature.
