blueberry

I am sticky.

I am sticky because it is humid.  It is so humid that my stress fractures hurt and, if I weren’t already committed to becoming a food network starPhysician.  Research scientist.  (Sigh.)

I could seriously give Mr. G a run for his money.

blueberrybread5

I am sticky because I really enjoy doing things that involve turning the oven on in ninety degree weather.

So my oven is on.  In ninety degree weather.  Constantly.

blueberries

I am sticky because I just licked my way through a batch of bread pudding batter.

Because if you’re going to be sticky anyway, you might as well get your hands really full of bread pudding batter.  And then spend the afternoon taste testing the aforementioned batch of bread pudding batter.  For quality control purposes.

You wouldn’t want to poison your father on Father’s Day. After all.

Blueberry White Chocolate Bread Pudding with Amaretto Cream Sauce
Serves 8-10 (more.  Way more.), adapted from Emeril Lagasse

4 large eggs
2 cups heavy cream
2 cups almond milk
1 cup packed light brown sugar
1 tsp pure vanilla extract
1/2 tsp cinnamon
1/2 loaf of homemade mixed berry bread from Healthy Bread in Five Minutes a day plus ten muffins made with the mixed berry bread dough (i.e. 6 cups 1/2-inch cubed day old bread).  Yeah.  I made bread just to put it in bread pudding.  I’m a rock star.
6 oz white chocolate chunks
2 cups fresh blueberries
1 tbsp cornstarch
1/4 cup amaretto
2 cups heavy cream
1/4 cup granulated sugar

1. Mix together 2 cups heavy cream, 2 cups almond milk, brown sugar, vanilla, cinnamon, chocolate, blueberries, and bread.  Let sit in the fridge overnight or, if you’re in a rush, for at least 30 minutes.

2. Preheat the oven to 350.  Butter a 9×13 inch baking pan or a 9-inch cake pan plus 1 ramekin.  The ramekin being solely for picture taking purposes.  The 9-inch cake pan being because you can’t seem to locate your 9×13-inch baking pan.  It’s a strange world in which we live.

3. Pour the bread/egg mixture into the prepared pan.  Bake until firm when pressed in the center, about 1 hour for the 9×13-inch pan, 1 hour and 20 minutes for the 9-inch cake pan, and 40 minutes for the ramekin.  Let cool on a wire rack.

4. For the cream sauce: In a small bowl, dissolve the cornstarch in the amaretto.  Scald the cream over medium high heat.  Add in amaretto slurry, whisking constantly, and bring to a boil.  Reduce the heat and simmer for 30 seconds.  Remove from the heat and add the sugar.  Whisk until dissolved.  Let cool to room temperature.

5.  Serve warm or cold.

You seriously cannot tempt me like this! Like I need an excuse to dive into something chocolate-y and hot. Especially in this weather. Do you want me to burst out of my seams at the end of winter, hmmm?

  5. Barbara says:

Amazing, Joanne. That is some combo of ingredients in your bread pudding. Nothing missing. Fruit, chocolate, cream, sugar and booze. (And I’d probably top it all off with more cream…)
(I didn’t add my Greek dish to your Greek series because I figured you would have a ton of Tzatziki recipes!)

  6. Giovanna says:

Ugghh, I know what you mean about the oven in 90 degree weather! We are suppose to get to 105 today, yea, summer solstice! Anything with blueberries and cream is right up my alley, I love the picture with the blueberries in descending order, very pretty : )

  7. Blueberries, Amaretto, holy cow, you’re killing me! That’s sounds awesome, even in the heat! It’s hot here too in MN.

  8. Ty'sMommy says:

Oh. My. Gawd. You had me at Amaretto Cream…. wow….

  9. Eliana says:

I wanted to absolutely die yesterday when my oven was only for all of 35 minutes. And I still had dinner to make. Luckily my mini convection (electric) oven came into play and saved the day. Even if didn’t have it, I would have cared the heat for this dessert. It looks irresistable.

  10. Tra says:

Sorry it is so hot where you are! Come visit me in L.A. where it’s been overcast and chilly for the last 2 weeks. Go figure!

My oven rarely goes on in the winter, nevermind the summer. You are certainly a dedicated cook and this recipe is no exception! Looks delicious.

  17. Kristin says:

You are a rock star. This looks delicious! I love all the recipes for blueberries that are coming out!

  18. This would be a perfect beginning or end to my day Joanne.

  20. Rachana says:

A Scrumptious bread pudding… Looks so tempting 🙂

  21. I have been thinking about chocolate bread pudding lately…a lot! What a great way to use the mixed berry bread that I still haven’t made. You are always one step ahead and I am feeling one step behind! That’s why you will make a great a food network star, physician or research scientist 🙂

  22. Kelsey says:

is it just me or are blueberries invading the blogosphere right now? either way that is one fantastic bread pudding!!! it also looks super moist without being doughy ya know? YUM YUM <3

  23. RamblingTart says:

SCRUMPTIOUS comfort food, dear Joanne. 🙂 What a wonderful Father’s Day celebratory dish. Hope you’ve had a beautiful weekend. 🙂

  24. I can’t handle how amazing this looks, Joanne! I love bread pudding… just had some the other night, actually. What I enjoy the most about it are the various consistencies. You have the crusty outside, the chewy inside, the smooth creamy sauce on top. Just makes me so happy!

  25. Mary says:

This is one of those “Oh, my God” recipes. It looks fabulous. I hope you had a great weekend and that today brings you only good things. Blessings…Mary

  26. Mari says:

lol my oven is usually on too since I have become slightly obsessed with muffins lol…and the worse part is that my kitchen is IN my living room! thank god for my ac….

and btw must you taunt me with these incredible things!

ohhh and did you know cornell students help out at the food pantry that I volunteer at???

  27. Esi says:

I just got some blueberries and still haven’t made anything from HBI5. Maybe I need to change that soon!

  28. Chris says:

Ick…..this post is all sticky and stuff;)

That looks so perfectly cooked and assembled, J. I’d almost hate to drive a fork through it but would be willing to do so.

  29. sra says:

Worth getting sticky for, that bread pudding with berries. It’s so hot here in India that just five minutes in the kitchen will have you breaking out into rivulets

  30. Bob says:

    That looks wicked good.

Heh, my girlfriend has been known to stand in front of the oven and threaten me with harm if I try to bake in the summer. Unless we have a/c and she can close the kitchen door, then she requests I do it all the time. 😉

  31. oh I so need to get back into the bread making with traveling and now mum in law here its tough

    this looks amazing

    Rebecca

  32. Juliana says:

WOW Joanne, this blueberry bread pudding looks fabulous…and what a great combination with amaretto sauce…just perfect!

  33. Deborah says:

THis looks and sounds phenomenal, but that picture of the bowl of blueberries is calling my name!!

  34. this is amazing girl! and to think you made this in the hot humid new york summer!

  35. Katerina says:

I sympathize with you. I know what humidity means in New York. Up in New Hampshire where I was living it was even worse during summer. This bread pudding with the amaretto looks irresistible.

  36. Amy says:

I like being sticky, too. Taken out of context, that could be interpreted the wrong way…

p.s. It’s 94 degrees here in Sacramento today. And my oven is on. I’m making a cobbler. I’d say that’s a good reason, no?

  37. msmeanie says:

Oh yum. This sounds so good. Love the idea of white chocolate and blue berry. Mmmm.

And yes, why is it that we always find something super delicious to bake on the hottest days of the year? Why oh why?!

  38. Faith says:

I ran the oven this weekend too! With a cherry tart calling my name, how could I not, right? 😉 This is a beautiful bread pudding — that last pic actually took my breath away!

  39. Your ability to cook in the NY heat is admirable! Come to LA for a bit and do some baking!

  40. Cara says:

hehe. I was sticky this weekend because it was humid and I was making ice cream and obviously I had to keep tasting it 🙂 I feel your stickiness!

  41. Pam says:

Dang girl, you have completely outdone yourself this time! The pictures!! They are amazing!

  42. Blueberries and white chocolate are a heavenly combo! And I could drink the sauce. Turning on the oven is so worth it! I’ve been suffering, I mean sweating it out too…

  43. oh WOW! Little miss sweet n pretty bread pudding needs to hang out with my butch bread pudding 😀

  44. Kim says:

I wanna be sticky too 😉

I love bread pudding with berries in it. Tyler had a recipe that was similar and I think I ate the whole pan of it on my own. That amaretto sauce looks and sounds amazing. I could practically drink it up!

Sounds like you served this to your Dad on Father’s Day. I hope he liked it!

  45. so which one is the best? the 2nd one with straps? that’s what the majority have been liking!!!

YAY FOR SWEET TATERS!! i gotta have almond butter for you!!!! (and when are you visiting me in cali?!??!)

  46. I’m not positive how this qualifies as a healthy bread but I am going to ignore that due to the tastiness-looking factor. Me wants some. Now. You can give some of your leftover “way more than 8-10 servings” to me.

In terms of the stickiness. Unbearable. I do not like it. At all. Except that it forces me to do something besides running once in a while…

  47. I love bread pudding, and even better that it is studded with blueberries! That picture of the blueberries lined by size is so cool!

I ran into an 80 year old lady in my apartment that was complaining she hates this weather because she can’t do anything, she can’t eat or sleep. It dawned on me that if someone who has been in NYC all their life can’t get used to it, I’m probably never going to either. You’re welcome to come cook in my central air conditioned apartment someday. It might be fun! 🙂

  48. Oh my goodness. I JUST posted a blueberry and white chocolate cupcake recipe (that also had mint). It’s so ironic that you’re posting something similar (although completely different). This bread pudding sounds delicious though. The stickier the better for bread pudding, I say. But it’s been unnecessarily sticky outside recently. I thoroughly appreciate my air conditioning during such times.

  49. Pudding looks so lovely with that sauce, so yum

  50. PJ says:

yumm yumm yumm,.. what wonderful photos and a very tempting dessert!

  51. Cristie says:

This bread pudding looks wonderful. I hope your Father loved it 🙂 No peanut butter around, right?

  52. elra says:

There are so many delicious ingredient, amaretto, blueberry and chocolate, cream, wow .. I do believe that this must be the most delicious pudding.

  53. Dana says:

Considering I just turned the heat up, I am having a hard time understanding why turning on your oven would be a burden. It was worth the sacrifice though, right? Looks awesome.

  54. Mimi says:

    Mmmmmmm, pretty!

You should be the next food network star. Except, I would feel very sorry for you. I feel sorry for all of them until someone wins. Are you watching it right now? Why, oh why did it take so many weeks for Dzintra to get kicked off? She’s insane!!

  55. sweetlife says:

oh goodness, so worth being sticky …great pudding, love the lfavors..blueberry and amaretto nice…

  56. tigerfish says:

That makes two sticky ones – you and me! Let me stick to your pudding…I don’t mind.

  57. You got me at white chocolate…looks AMAZING!

  58. Debbie says:

That looks mouth watering Joanne…just delicious! I know what you mean about the oven being on. I baked a cake the other day and it had to be in the 90’s outside. My husband thought I was out of my mind!!!!

  59. Sophie says:

Waw,…Joanne!! A stunning blueberry & white choclate bread pudding & quite a fab dessert! So fresh looking & so many different flavours in here!!

    MMMMMMMMMMM,..drool,…drool,..!!!

  60. SE says:

    yummmmy…..i am drooling..such great combination ingredients !!!

  61. Shannon says:

the oven heat is really cruel in the summer, but it’s so hard to avoid! hope dad loved these treats, they look fabulous!

  62. Kristen says:

We suffer from the same oven/sticky problem, though maybe you are stickier in NY than we are in AZ…

Can’t wait to see what you do with the coconut oil. I am rather more a stay-within-the-box type of cook. I would caution you (from experience) to remember the oil solidifies below 76 degrees….it was a bit awkward in a marinade. Yeah, you can picture it, can’t you!

  63. Julie says:

hahaha seriously deej has been getting SO mad at me lately for turning the oven on. i mean i don’t blame her but what’s a girl to do!

  64. Cynthia says:

OOoooh I love bread pudding! I’ve never tried blueberry before but that sounds perfect for summer! I’m so jealous that you even get to complain about sticky hot weather! We’re at a blistering 16 degrees today :(!!

  65. Looks delicious, and don’t blueberries photograph fabulously?

  66. Hannah says:

I don’t make bread pudding very often, but this one definitely seems like it would be a worthwhile baking venture! Perfect now that blueberries are plentiful and in season. 🙂

  68. Stella says:

I’m sticky too, Joanne! And I wish I was a physician like you will soon be. You know, I went to Emory in Atlanta, and my Mom begged me to study medicine. I wish I listened (sigh). Anyway, you have half the battle already!
And you know, I sent my photo and info to Food Network, and they asked me to drive to Miami for some tryouts for a show. I chickened out and didn’t do it, but maybe you could once your’e done with school! Maybe I could too, since I’m more brave now (smile)!
I love this bread puddings flavors by the way-sounds so good…

  69. Sook says:

The bread pudding looks heavenly, especially with ice cream. 🙂

  72. White Chocolate! Blue Berries! Bread Pudding! I have officially died and gone to heaven!

  73. Don’t worry it’s way into the 100’s here and I still insist on turning on my oven. It’s just something we do! This looks amazing and I’m sure it’s worth being sticky for.

  74. Erica says:

This looks absolutely amazing. My family loves bread pudding so this will be a hit for sure. Looks like it will be on the menu for my next brunch!

  75. Little Inbox says:

I’ve been wanted to try blueberries in my baking, but it is so expensive here. 🙁

  76. Carolyn Jung says:

Blueberries and white chocolate are such an inspired duo. I love making oatmeal cookies with that combo. And someone just told me about an awesome focaccia in Canada that’s topped with just that.

  77. Jess says:

Ok this is going straight to the top of my to-bake list. You’ve reminded me of (a) how much I like bread pudding and (b) how I haven’t had bread pudding in aaaages. And I would totally be willing to bake bread to make into bread pudding. I baked a cake just to see if I could then make it into a consommé because I was possessed by the concept of creating pure cake essence, as bizarre as that may be.

  78. Azita says:

This is a delicious bread pudding recipe with blueberries and white chocolate. Those blueberries look so good! Another must-make recipe!

  79. Andreas says:

Great way to use up healthy bread. 🙂

  80. You have 81 comments. What more could I possibly say other than I am drooling. Share.

  81. Debinhawaii says:

Loving all the berries in there–well worth a hot kitchen! 😉

  82. Johanna GGG says:

looks delicious and sticky and indulgent – if you are going to be sticky this is an excellent dish to make – though making your own bread in this heat just for bread pudding in hot weather! that sounds a little crazy – but worthwhile

  83. Laurie says:

I’m drooling over that amaretto cream sauce!!

  84. grace says:

those are some fine and FAT blueberries! really, this treat is fine and fat(tening) all-around–three cheers for white chocolate and creamy amaretto!

  85. delicieux says:

This pudding looks mouth watering. I love the combination of blueberries and white chocolate. Delicious!!!

  86. Kerstin says:

  87. Shirley says:

    This one looks just fantastic.

  88. Carolyn™ says:

Thats just the best use put to these breads I have seen. 🙂

  89. Aparna says:

An excellent way to put the bread to use. 🙂

  90. Bonnie says:

What a great idea to turn this bread into bread pudding. I ended up throwing my loaf away. I bet someone would have eaten it as a pudding.

  91. I’m usually not a bread pudding fan but this looks really good, especially with the amaretto cream sauce!

  92. Elwood says:

What a great way to use this bread. It really looks delish.

  93. What a great idea, making this into bread pudding!!!
