I can tell you right now that the Christmas season is upon us.

How do I know, you query.

The air is bristling with it.  Yes.  Bristling.  It is sharp and pointy and cuts like a knife, my face feeling as if it is being jabbed from every which way as soon as I step out into the cold.

My brother keeps calling me to see what we should get our sister for Christmas. I keep not picking up.  I don’t have time or money for such things.

055

And, most momentously.  This week, I chose peppermint over pumpkin.

Hark the herald angels.  Hark.

And I’m deeply sorry to whoever’s pigs just started flying.  I truly had no control over the situation.  The holiday spirit just grabbed me by my hips (yes.  Hips.  They are aplenty.), threw some creme de menthe in my hand, and told me to move some mountains.

013

So I did.

I opened up my brand spanking new copy of Baked Explorations, discovered this little gem of a holiday miracle, and then proceeded to cover the entire now-not-so-brand-spanking-new book with chocolate fingerprints.

I have wandering hands.  That is what the holiday season brings out in me.

050

These are a tad bit strenuous to make but are definitely worth it.  They are fudgy and rich but then you get a hint of that minty fresh layer and that cuts the richness enough so that even after five you still feel like you can eat six more.  (Pro? Con?  Depends on how much self control you have.)

I made them to bring to a holiday potluck but when I tasted a small piece of one before heading over (quality control purposes, ahem).  I seriously considered hoarding them in my room.  Pretending as if they had never happened.  Saving them for a cold, bitter day (today, tomorrow, yesterday).

But then the holiday spirit came and pinched my upper thigh.  Forcing me to take a good hard look at my upper thigh.  That set me straight.

058

So now that I have buttered you up with talk of holiday spirit and all.  I have a favor to request of you.

I am running (walking?  run-walking?) a half marathon in January.  I am doing it to raise money for people all over this country who are suffering from leukemia and lymphoma.  Most of whom are children.  Many of whom will spend their holidays in a hospital.  All of whom need your help.

So if you have five dollars to spare.  I would deeply appreciate it if you would click on this link or the one on my sidebar and donate.  Really.  Five dollars.  That’s less than that pumpkin spice latte you just ordered.  And it’s definitely less than that beer you’re going to consume come Friday night.

Thank you.  Truly.

Grasshopper Bars
Makes 24 brownies, adapted from Baked Explorations

For the Brownie Base:
3/4 cups flour
1/2 tsp salt
1 tbsp dark unsweetened cocoa powder
5 oz good quality dark chocolate (60-72%), coarsely chopped
1/2 cup (1 stick) butter, cut into 1 inch cubes
3/4 cup sugar
1/4 cup firmly packed light brown sugar
3 large eggs, room temperature
1 tsp vanilla extract

1. Preheat the oven to 325.

2. Grease the sides and bottom of a glass or light-colored metal 9×13 inch pan.  Line the bottom with a sheet of parchment paper and butter the parchment.  In a medium bowl, whisk together the flour, salt, and cocoa powder.

3. Configure a large-ish double boiler.  Place the chocolate and the butter in the bowl of the double boiler and stir occasionally until the chocolate and butter are completely melted and combined.  Turn off the heat, but keep the bowl over the water and add both sugars.  Whisk the sugars until completely combined.  Remove the bowl from the pan.  Wait until the mixture is at room temperature (i.e. you can stick a finger in it for ten seconds without writhing in pain).

4. Add three eggs to the chocolate/butter mixture and whisk until just combined.  Add the vanilla and stir until combined. Do not overbeat the batter or your brownies will be cakey.

5. Sprinkle the flour/cocoa/salt mix over the chocolate.  Using a spatula (do NOT use a whisk) fold the dry ingredients into the wet until there is just a trace amount of the flour/cocoa mix visible.

6. Pour the batter into the prepared pan, smooth the top with an offset spatula, and bake for approximately 12-15 minutes, rotating halfway through the baking time. The brownies should be just a tad underdone (about 1 minute from being cooked completely).  A toothpick inserted in the brownies at an angle should yield a few loose crumbs.  Remove from the oven and let cool completely in the pan while you make the creme de menthe filling.

For the Buttercream
3/4 cup sugar
2 tbsp flour
3/4 cup milk (I used low fat)
2 tbsp heavy cream
1 1/2 stick butter, softened but still cool, cut into small cubes
3 tbsp creme de menthe (easily purchased at your local liquor store)
1 tsp peppermint extract

1. In a medium heavy-bottomed saucepan, whisk the sugar and flour together.  Add the milk and cream and cook over medium heat, whisking occasionally until the mixture comes to a boil and has thickened, 5-7 minutes.

2. Transfer the mixture to the bowl of an electric stand mixer fitted with the paddle attachment.  Beat on high until cool.  Reduce the speed to low and add the butter and mix until thoroughly incorporated. increase the speed to medium-high and beat until filling is light and fluffy.

3. Add the creme de menthe and peppermint extract and mix until combined. If the filling is too soft, chill slightly in the refrigerator and then mix again until it is the proper consistency.  If the filling is too firm, place the bowl over a pot of simmering water and re-mix to proper consistency.  Spread the filling evenly across the top of the brownie layer and place the pan in the refrigerator, for a minimum of 45 minutes while you make the chocolate glaze.  **I put mine in the freezer because we had no room in our refrigerator.

For the Chocolate Glaze
6 oz good quality dark chocolate (60-72%) coarsely chopped
1 tsp light corn syrup
1/2 cup (1 stick) unsalted butter, softened, cut into cubes

1. In a large non-reactive metal bowl, combine the chocolate, corn syrup, and butter.  Set the bowl over a saucepan of simmering water and cook, stirring with a rubber spatula, until the mixture is completely smooth.  Remove the bowl from the pan and stir vigorously for 1 minute to release excess heat.

2. Pour the mixture over the chilled creme de menthe layer and use an offset spatula to spread it into an even layer.  Place the pan back in the refrigerator (or freezer) for 1 hour (or less), until the glaze hardens.

3. Remove the pan from the fridge, wait about 15 minutes for the glaze to soften slightly and cut the bars with a warm knife.  Cut into squares and serve immediately.  For long term storage (up to 4 days), cover with saran wrap/aluminum foil, make room in your fridge, and store it in there.

This is my submission to Meeta’s Monthly Mingle, the theme of which is Chocolate Extravaganza, and which is being hosted by Ria of Ria’s Collection.  I am also submitting it to this week’s Holiday Recipe Exchange through which I could win a $100 Scharffenberger gift certificate!  Come join the fun at the My Baking Addiction and GoodLife Eats Holiday Recipe Swap sponsored by Scharffen Berger.

  1. Aside from the obvious deliciousness of mint and chocolate- these look great! 🙂

  2. Mo 'Betta says:

Delicious! Thanks for the info, I’ll be checking out the blog you mentioned 🙂

  3. Ty'sMommy says:

You’re evil, Joanne. Truly evil. And, thanks to you, now I’LL be looking at MY upper thigh…. *sigh* But yeah, I’d eat these babies anyway….

  4. Katerina says:

You are right. Christmas is upon us. I have to start baking some Greece sweets too for the holidays. Yours look absolutely divine. I feel so bad about all the sick children who will spend their holidays in hospitals. I am sad because 6 months ago we had the death of a young girl only 18 years old in the neighborhood from leukemia. We were all so shocked.

  5. Chocolate and mint go together like… bacon and eggs?? A fave flavor combination of mine!! Love the bright green color of the filling!!

  6. Beth says:

Those bars look great, almost like a relative of Nanaimo bars. I’ll be glad to check out your link. What a thoughtful thing for you to do!

  7. Stella says:

I’ve got to read the ingredients and directions more closely. These look like rich candy-so pretty! I am mystified as to how you got them to look so perfect…must read more;)

  8. Sanjeeta kk says:

Wow, chocolate and mint flavor is a deadly combination. Lovely space, and hope to drop here more often for such lovely treats. Best wishes.

  9. A wonderful cause and delicious bars to celebrate all that is good about the season.

  10. Julie says:

  11. elra says:

Ahhh, finally. I was wondering what it was when you mentioned it on FB. This is truly a delicious treat !

  12. Dawn says:

I am such a sucker for chocolate and mint. As far as the weather goes…I used to live in MASS so I understand. And I will confess it’s supposed to be in the 70’s here on Saturday while we’re camping in St Augustine and I don’t miss the cold. I’m officially a wimp.

  13. Amy says:

You should see what I had for breakfast this morning. I’m already on a sugar high and my thighs have been pissed off since Saturday…what’s one more bite (or two…or three) of rich chocolate? In the name of the holidays and all. I’m sure the mint layer is healing, right? 😉

  14. Kristen says:

Good for you. I love hearing about people running/walking for a good cause (besides the obvious good cause of smaller clothes).

The mint brownies are so festive. Happy Holidays! Sorry to hear the season is bristling so much. 😉

  15. Mo Diva says:

If there was a picture perfect crack brownie you found it! The holiday season has taken a hold of me too… only it slapped me on the ass and said MOVE IT OR LOSE IT SISTER.
I definitely think this recipe wants me to make it… and I think i can.
    So i might.
If you were dancing when you made this- I can tell! 😀

  16. Faith says:

Yay, when you posted about these on Facebook I was hoping we would get to reap the benefits…chocolate and mint feel like Christmas to me! Thanks for running for such a great cause, Joanne…I will definitely help!

  17. i am SO making these the weekend after next. yes, please!

    xo Alison

  18. Rachel says:

Yes, the air is sharp and pointy. it cuts off all feeling in my face so I talk like a wacko. I guess that does mean Christmas is on the way.
I love the green creme de menthe! It’s such a great color, especially sandwiched between chocolate!

  19. Bob says:

Lovely. And delicious I’m sure. Heh. I love chocolate and mint, it’s almost as good as chocolate and peanut butter.

  20. A book called “Baked exploration” can only have delicious recipes! ( I must get it, btw!!) These bars look scrumptious! Love the flashy green colour and all the chocolate!

  21. Holiday baking has caught me too.Dun be a stingy ..go n buy ur sis and bro a nice gift 🙂 These bars look very addictive…I wish could eat or reproduce them some day…I m messy with chocolate!!

  22. Lo says:

Yikes. It’s really that time already. Isn’t it? Don’t get me wrong, I love it… but where does the time fly?

These look so good. But, then, how can you argue with chocolate and mint?

  23. I love how you describe the holiday spirit as ‘bristling.’ I choose to blame the fact that I just ate 3 peanut M&M’s for ‘breakfast’ on your photography and recipe–you’re giving me a sweet tooth I never knew I had.

  24. Oh my, these are pure Xmassy love. Absolutely delicious looking.

  25. Ashlee says:

those look fantastic! and gosh, peppermint has been a godsend lately so i agree with you there!

  27. That Girl says:

  30. Ria Mathew says:

Wow! They look so good!! Can I have a bite, please? 🙂

Thanks for sending these to the MM 🙂

  31. Louanne says:

Man, oh man, these are outstanding! Love the color contrast, and positively love the mint & chocolate flavor combination.

  32. Jessie says:

*sneaks look at her own upper thigh* Hmm …

Dangit, Joanne, I just threw out my bottle of creme de menthe when we moved (purchased for my prebachelorette party … in 2007). Now I must go and buy another to make these chocolate covered grasshopper bars. Oh my, they do look good. And Peter doesn’t like mint (picky guy), so more for me. Is that why I keep putting mint in all my desserts? 😉

    Happy almost Xmas! 🙂

  33. So pretty – and YUMMY. Very similar to our Canadian Nanaimo Bars… in appearance: except they are yellow where yours is green. I think I am getting into bars this year!
    🙂
    valerie

  34. Megan says:

Holy moly, I think you have just pulled out my favorite treat ever. I have been trying to come up with ways to come up with a dessert just like this…so glad I found it here! Yum!

  35. Giovanna says:

Unfortunately, I cannot make this one. I love mint, but, my husband and children can’t stand mint. I know, your thinking, why would I marry such a man! But, I couldn’t help it, he looked at me and said “what can I cook you for dinner” and had my heart in his hands ever since!
We can however donate to the society and have done so already.
We were able to be a part of an organization that took presents to some of the children in the Lymphoma department at our local hospital and it was amazing to be a part of such a glorious thing!
If ever we feel badly about our situation, we just think about all the children we know who suffer day in and out with this disease.
Thank you so much for encouraging people to donate!! : )

  36. MeetaK says:

Absolutely sensational. These looks so deliciously rich. I knew this MM would get me into trouble and here it is. BIG TIME! Thanks for joining the MM!

  37. You are a genius! I love the buttercream with creme de menthe.

  38. Carolyn says:

These look delicious and I am quite glad you’ve traded pumpkin for peppermint this holiday season! Good for you for running a half…I love half-marathons. Just hope you’re running somewhere warmer!

  39. Pam says:

I have to make these for my husband… he LOVES chocolate with mint. They look excellent!

  40. Megan says:

These bars look amazing, and you’ve just given me one more reason to get a copy of the new Baked cookbook!

  41. How funny. I’m about to post a recipe from Baked Explorations too! These look fantastic for the holiday. Green AND minty. YUM!

oh my gosh, once again you amaze me and these definitely belong on everyone’s hips!

  48. A real turning point in the season! LOL!

Funny, my brother keeps calling me too to talk about the kids gifts. I have NO Idea!

These are too good to make if you know what I mean. I just can’t. 😉

  49. yepiatethat says:

You amaze me. Med school, cooking, blogging, AND running.
I feel so beat after work and my classes at night that I end up doing more time thinking about running & blogging than I actually spend doing it.

Oh.. and why does pumpkin season have to come right before peppermint season? Why can’t we have pumpkin from September – Feb then have peppermint from Feb – May??

  50. aipi says:

looking at it I could feel my teeth sink into the fudgy goodness:)

  51. OohLookBel says:

Gosh, I haven’t come across creme de menthe in years. We used to mix it with lemonade for parties (it’s not very alcoholic, is it?). These brownie/bars are very festive. Maybe wash them down with creme de menthe and lemonade ‘cocktail’, hehe =)

  52. Daryl says:

Look so delicious and congrats for running the marathon and your kind heart

  53. ohh winter here is a lot milder…it’s just…occasional flying snot 😀

…and bless you for your kindness 🙂 this is what the holidays is about

  54. Mari says:

OMG I saw you write about these on facebook but now seeing them is a whole different experience!!!! These look amazing!

  55. Mmm makes me think of the Andes chocolates. These bars look stellar. My housemates and I tried made some mint chocolate bars for a friend in college, but the ditzy one substituted a whole bottle of mint extract for Creme de Menthe. Inedible doesn’t begin to describe it.

  56. I wonder how many of these I could eat in one sitting.

  57. sophia says:

So these are what have been swimming around your tummy! Heavens. What I would give to have them in MY tummy!

  58. Debinhawaii says:

I love all chocolate and mint pairings and these look delicious and like they could do some SERIOUS damage. 😉 Yum!

  59. Debbie says:

Joanne you have outdone yourself!!! OMG these look wonderful….I am thinking of making these as part of dessert for Christmas day!!!

  60. God, I can totally relate to the bristling experience. I am freezing in New Jersey! Rich and decadent as your chocolate bars may look, the frosty coolness of the menthe…is haunting me.

  61. Maya says:

Baked Explorations is on my Amazon wish list! I’ve actually never tried the grasshopper flavoring, and I don’t see why not as I love mint+chocolate. Great for the holidays!

  62. What a thoughtful thing for you to do ~ Those bars look great

  63. Joanne says:

Every photo made me more determined than the one before to make those grasshopper bars.
Beautiful pics and a wonderful recipe. I can just taste their chocolaty, minty, fudginess.
    Yum!
Good luck with the run for a TERRIFIC cause.

  64. Barbara says:

Gooey, fudgey, minty bars. Oh my. Must have.

    Thanks for the link, Joanne!

  65. Meesh says:

that chocolate looks ridiculous! great for the holidays too

  66. I love the generous slab of chocolate. That green and chocolate is such a great colour contrast. Im glad that Christmas is upon us, if treats like this will pop up!

  72. janet says:

You are like reading my mind, Joanne. 😉 Earlier today, I just planned out Christmas dessert: grasshopper crepes. Chocolate crepes with the creme de menthe filling. Your bar version looks so awesome, though… quivering thighs and all. 🙂

  73. Beth says:

YUM!!!! You’re so right about Christmas. Even though I work across the street from Radio City (read: hell on Earth during the holidays)and set up my tree right after Thanksgiving, I didn’t feel the Christmas spirit until this week! These look DIVINE – Hark the herald Angels!

  79. Yummy! And they’re the perfect color for the holiday season. Because you know I match my desserts to the holidays right? 🙂

  80. tigerfish says:

These look like huge peppermint chocolate but I like this better since it has more chocolate in proportion to peppermint. I am never a big fan of peppermint.

  81. Raina says:

Oh my goodness these look awesome. I love chocolate and mint. They look so decadent and delicious. I would definitely want to eat these all up too.

That is so nice of you to run for such a great cause. I will be very happy to donate.

  82. Karen says:

My grandmother used to make Grasshopper Pie and just giggled over the name of it!

  83. Ann says:

I remember grasshopper pie. That’s what I thought of when I first saw this. But these look so much better!

  84. Julie says:

Oh goodness those are just gorgeous. I love that bright green in there!

  85. First thing I thought of when I saw this was a grasshopper shake. That’s about the only thing grasshoppery I’ve had. (It’s late, I’m making up new words!)

These may be slightly strenuous to make but I assure you, it would not be hard to eat them. At. All. So good!

  86. Monet says:

I’m in serious lust with that book. They have so many FABULOUS recipes, and the layout is just wonderful. I’m glad you have it too! These bars look delicious. They are on my to-do list. -Barbara

  90. grace says:

i don’t know what grasshoppers have to do with mint, but i don’t care. heck, i’d probably eat a mint-flavored grasshopper. 🙂

  94. Reeni says:

Mint, chocolate, fudge? Everything about these just screams of Christmas! They look a-mazing!

  95. I have been longing to make brownies with peppermint. Though I’m committed to going easy on the sugar, I suppose I could make a batch. Then test taste one. Purely for quality control.
Then, give them away. Thanks for your encouraging words. Did you know that you have inspired me with your story of weight loss and keeping it off. I’m watching you, Chica!

  104. If I made these, I would hide them really well (my daughter can spot a hiding spot for goodies her eyes closed) so I could enjoy a little bit each day and make the pleasure last.

  105. Melissa says:

I just discovered your blog and I want to eat everything I see so far! Your photos and recipes are amazing. I’ve tried these bars before but yours are far superior. I will use this recipe next time!

  106. Johanna GGG says:

these look delicious and take me back to a misspent youth of drinking grasshoppers at college – in fact I don’t miss those days and I just know these bars would be far superior to any grasshopper I might drink

  107. Amy says:

    Oh. My. Gracious.

These look WAY too delicious for actual consumption.

But maybe I can overcome that. 😉

  108. OH DEAR GOD. How did I miss these?? It’s seriously dangerous because I have all the ingredients to at least make the brownie base. The only thing saving me from making these are the peanut butter and chocolate gluten and dairy free brownies currently baking in my oven HAHA! =)

  109. Lori says:

My absolute favorite bars. Nothing beats these. They look so luscious in your photos.

  110. Minu says:

  113. […] With March just around the corner, I wanted to try a recipe that celebrated the festive holiday of St. Patrick’s Day. When I was a kid, one of my favorite things about St. Patrick’s Day – besides wearing green, which is my favorite color – was McDonald’s seasonal Shamrock Shake! Remember those? Do they still make them in March? What better desert says St. Patty’s Day like Chocolate and Mint? In honor of my love of Shamrock Shakes, I’ve pulled together this Grasshopper Bar recipe, which I’ve adapted from one I found on Joanne-eatswellwithothers.com. […]

  114. Great for color for Christmas! Thanks!
