School field trips used to have allure.


You would file onto a yellow school bus.  One by one.


You would fight over who gets to sit in the back with all of the cool kids.  You would secretly hope that the guy you’ve had a crush on for the past decade or so would ask you to sit next to him.  You would stare down the girl who he eventually did end up sitting next to.  If only looks could kill.  If. Only.


You would eat your lunch out of a brown paper bag (and didn’t that somehow make it taste so much better than when it came out of your hard plastic Barbie lunchbox?  Why did mom spend money on that hard plastic Barbie lunchbox anyway, when a paper bag truly would have sufficed?  Well, that ends that.  My future children are not getting hard plastic lunchboxes.  Even if they have Barbie on them.  ESPECIALLY if they have Barbie on them!)

Well, let me tell you.  When you get to med school, all of that glitz and glam?  Gone.

Instead, you find yourself on a bus in the middle of east Harlem (on which you just saw two people get arrested, mind you) heading to a sewage treatment facility.

I wish I could tell you that I was making this up.  But I couldn’t make stuff like this up.  Even with my vivid imagination.

And did I mention that it is ten degrees outside?  Did I mention that you are wearing the puffy hot pink jacket that makes you look like a puffy hot pink cotton ball that you probably haven’t worn since your last school field trip.  In the 90’s.

This is sounding more and more like a human rights violation, don’t you think?

And as I wandered around that sewage treatment facility.  My hair becoming semi-permanently saturated with the smell of dust.  (And trust me, I was profusely thankful that it only smelled like dust.)

All I could think about was this risotto.  And how I got to come home to it.  In all of it’s salty creamy carbalicious glory.

It makes even sewage bearable.  Glorious.

Risotto with Bay Scallops Salmon and Prosciutto
Serves 4, adapted from Symon’s Live To Cook


2 tbsp olive oil
1 medium yellow onion, minced
2 garlic cloves, minced
4 oz prosciutto, cut into strips
1 1/2 cup arborio rice
1 generous pinch of saffron
1/2 cup dry white wine
4-6 cups chicken broth, warmed
12 oz wild Alaskan salmon fillets, cut into small chunks
1/4 cup sliced fresh flat-leaf parsley
1 tbsp unsalted butter
2 tbsp grated parmesan

1. Heat the olive oil in a 4-qt saucepan over medium heat.  Add the onion and sweat it for 2 minutes.  Add the garlic and sweat it for 2 minutes more.  Add the prosciutto and cook it until it crisps, about 1 minute.  Add the rice and let it toast slightly in the hot fat, about 1 minute, stirring with a wooden spoon.

2. Reduce the heat to low and add the saffron and wine.  Stir continuously until most of the wine has cooked off.  Add 1 cup of the stock and stir continuously until the liquid has cooked off, about 3 minutes.  Add another cup of stock.  Repeat.  Taste.  Continue to add stock in 1/4 cup increments until the rice is tender and the risotto is creamy.

3. Add the salmon and continue to stir for 2 minutes, or until it is cooked through.  Remove the pan from the heat and stir in the parsley, butter, and cheese.  Serve immediately.

    This looks so delicious, Joanne! Gah!

    Btw, in medical school we still had field trips! Rural medicine, as they call it. We also visited a first nation community who were convinced the plastic manufacturers next door were giving them terrible health problems. They kind of had a point, though, as I think their female/male ratio of newborns was around 66-75%. Wacky!

  4. I have never imagined salmon in risotto because I would think it would disintegrate into a pinky paste, but since you add it at the end, you maintain nice chunks of salmon. Sounds really tasty!

    That is creamy and fantastic!! Yowza. I don’t think I’ve ever had salmon and prosciutto together…but I must remedy that situation, because honestly, it’s all I will think about until I do. Sounds awesome. I totally loved my lunchbox…it was a metal Dukes of Hazard one…why oh why do I not still have that? Did my parents not know that I would want it 25 years later!? Sheesh. Um, never got the pleasure of going to the sewage treatment facility, though…darn.

    When I was a kid, I brought my lunch in a brown paper bag. I was always jealous of all the fun lunch boxes my classmates had. So to make up for all those years of feeling lame, as an adult I have an awesome lunch box collection. About 50 of them. Some old, some new. Oh ya. It kicks ass.

    Thought of you two nights ago when after reading your sweet reminder about christmas cookies and dough in freezers, i ran home and assembled 6 lbs of cookie dough to be baked ocer he weekend! How did i let christmas sneak up on me???
    So what i am really trying to say is… can i have some risotto so i can bake my cookies and be happy and fullof creamy goodness?

  25. You won me over at “…all I could think of was this risotto.” I do have to make it. It looks absolutely succulent. But, I didn’t feel too sorry for you complaining about -10 degrees – that would be Fahrenheit, right? Today, it is -26 Celcius in Edmonton. Snow 2 feet high, and GORGEOUS.

    Oh no – a sewage treatment facility? That sounds unbearable. I’m glad that Symon’s risotto gave you something to look forward to. I love your idea of using the salmon in place of scallops. It looks unbelievably creamy and delicious. I’m excited to try mine this weekend, even if the scallops are frozen and from the dreaded Walmart.

    This is truly something much better to look at. It must taste wonderful with the salmon but I can imagine it being great with the scallops too.

    I love risotto but haven’t made it in SO long. It just doesn’t reheat well, and I’m only one person 🙁 It seems like a waste of all that effort. But I supposed you can make rice cakes after, right? So I should just suck it up. This looks great, I’ve never thought to include salmon, though I’ve had other seafood in my risotto. So comforting 🙂

    We had a little cold wave ,but now its WARM , edging to hot , but still a little cool…oh well , never mind!!
    Well coming back to this Risotto is fantastic i know!
    I love the idea of salmon and Prosciutto together !
    And babe, i still collect lunch boxes , with winnie de pooh on them ,and hide everything if i know a kiddie is visitn , coz my room is haven and take away for them:-)))))

    A sewage treatment plant does not sound enjoyable at all. This risotto, on the other hand, sounds fabulous. I made the brussels sprouts from that cookbook and could not believe all the interesting ingredients Symons uses. I’m sure this was incredibly flavorful!

    I still remember missing my 4th grade field trip to the Science museum because I caught the flu. Tragic day.   82. The scallops version sounds good too. Best thing about this is the color of the salmon! It’s pink and vibrant. And full of carbs. The good, tasty kind.

    Ummm if you are in med school why are you visiting a sewage treatment facility? That seems gross. Not cool at all. Also I love the brown bag. When I was in high school I would decorate my bag each day with movie lines, song lyrics or little comics. When I would arrive everyone look over my bag to see what I did that day…oh the memories…. 🙂

    Now this risotto sounds great too. I’m not a huge fan of salmon (well fish in general) but I’m trying to like it. Maybe if it’s hidden inside carbs, mixed with prosciutto and a creamy sauce I will like it 🙂
