Last year, when I was bestowed with two very lovely pelvic stress fractures.  The only thing I could do for exercise was sit my butt on a stationary bike and pedal away.  Day in.  Day out.

The first week or so was fine.  I had never really ridden on a stationary bike before and so it was new and glamorous and exciting!  (Plus, the week or so before that had been spent on crutches and no matter how much I begged and pleaded, my roommate, Sophie, wouldn’t let me anywhere near the gym.  So by the time I was “allowed” to bike, I was of the opinion that anything was better than nothing.)

But eventually (a week in) the bike and I hightailed it out of the honeymoon period.  Straight into disillusionment and resentment and pure hatred.  Typical.

Basically, I went stir crazy.  Hit a low that even Bethenny and the Real Housewives couldn’t rescue me from.

And so is it really any surprise that I attempted to eat my weight in brownie batter?

I think not.

Let’s just say that I (and my thighs) thanked the gods of bone healing the day that I stopped hurting enough that I could get onto an elliptical.  Variety is the spice of life, people.  Really and truly.

This week at Eat.Live.Be. we are talking about how we get ourselves out of a rut.  Or prevent ourselves from ever getting into a rut to begin with.  I think we’ve all been there.  We stick with our New Year’s resolution for a few weeks…and then it just gets old.  And tiring.  And we just don’t feel like we can go on like this anymore.

I know how you feel.  Here are a few things you can do to kick yourself back into gear when this happens.

Mix it up.  I refuse to do the same workout at the gym two days in a row.  Some days I go to spin classes, some days I go to body conditioning classes, one day hopefully soon I am going to do Zumba, one day a week is reserved for a long run (12 miles this weekend baby! woohoo!), there’s a day of biking, a day of ellipticaling and then a rest day.  I guarantee you that if you do the same workout every day, you are going to get so bored that you are going to start to resent the gym.  Or your exercise videos.   Or the trail that you run around at the park.  Then you’ll find yourself naming your jars of peanut butter and speaking to inanimate objects.  You don’t want to turn out like me, okay.  Plus it’s just not good for your body to do the same thing every day.  Whether your mind gets bored or not, your body will, which is when you’ll stop seeing results.  You have to keep your muscles guessing, keep exercising new ones, and the only way to do this is by changing it up a little.

Dance to Lady Gaga.  Or whoever.  Doesn’t have to be Lady Gaga.  It could be Frank Sinatra.  Or The Beatles.  Or Justin Beiber (no judgment).  But whenever I’m in a really bad, depressed mood.  I turn on my local Top 40 station (Z100 baby!).  Blast it.  And dance like I’m in. Da. Club.

Play Russian Roulette with your cookbooks.  If you find yourself eating the same thing every day.  And you are just seriously bored of it to the point that all you want and think about is chocolate and cookies and cake.  Then what I recommend doing is picking up your nearest cookbook.  Close your eyes.  Open it up to a random page.  And cook.  You can do the same thing with your favorite food blog or online recipe site.  But once again, spicing it up and trying something new, even if you don’t LOVE the dish, will keep you engaged.  It might also trigger new ideas and will keep you inspired and excited about what you’re doing.

In keeping with this whole “variety is the spice of life” business, I have to tell you about this chicken dish.

But even before that I have to tell you about this cookbook.  In The Kitchen with a Good Appetite by Melissa Clark.  Love it.  Maybe because it reminds me of me.

Each recipe has a story to go along with it. And they are funny.  And engaging.  So entertaining, in fact, that I can often be found reading this cookbook at the gym.  Yeah I am totally that girl.  The one sitting on a bike with the food network on and a cookbook in her lap.  That’s me.

And if this chicken is any indication, the recipes in it are as good as the stories, if not better.  I don’t even like chicken very much.  (Neither does Melissa.  We are soulmates.)  But I loved this dish.  The chicken is covered in a thoroughly addictive sweet/spicy glaze and then roasted in the same pan as the sweet potatoes are. It’s definitely one of the best and easiest chicken recipes I’ve ever had.

(Right, you heard me.  One pan.  This kind of thing never happens around here.)

I had to hide the chicken from myself to keep from going back to the fridge and eating it.  Weird.  But true.  Make it.

Spiced Chipotle Honey Chicken Breasts with Sweet Potatoes and Winter Squash
 
Yield: 4 servings
Ingredients
  • 20 oz butternut squash, peeled and cut into 1-inch pieces
  • 20 oz sweet potato, cut into 1-inch pieces
  • 2 tbsp olive ol
  • 4 chipotle chiles in adobo sauce, minced
  • 3 cloves garlic, minced
  • 2 tbsp honey
  • 2 tsp cider vinegar
  • 1¼ tsp kosher salt
  • 1 tsp ground cumin
  • ½ tsp ground cinnamon
  • 4 boneless, skinless chicken breasts, rinsed and patted dry
  • chopped cilantro or basil for garnish
Instructions
  1. Preheat the oven to 400. Toss the sweet potatoes and butternut squash with 1 tbsp of the olive oil. Spray a roasting pan with cooking spray and then spread the sweet potatoes and squash over it. Roast for 15 minutes.
  2. While the sweet potatoes and squash are cooking, in a small bowl, mix together the remaining tbsp of olive oil, chiles, garlic, honey, cider vinegar, salt, cumin, and cinnamon, until they form a paste. Rub the paste all over the chicken. Carefully place the chicken on top of the sweet potatoes and butternut squash. Put back in the oven and continue to roast until the chicken is just cooked through, about 25 minutes. Serve garnished with cilantro or basil.

    I completely agree with you that variety is the spice of life! Having a concrete goal also helps me.. now that I have officially signed up for 178kmx2 over hilly terrain, I have the motivation to hit it hard at the gym.. otherwise I may never get to Kingston come June. 🙂

  3. Agree with mixing it up. I am referring to exercise but applies to your dish as well:) As you say you end up exercising different muscles, keeps you from getting bored and increases stamina. Same philosophy applies to bars – go to different ones, this will keep you from getting bored, you meet different people and it improves drinking stamina:)

Every time I crank up the music and dance like no one is watching, my husband is always watching and asking “Are you drunk?” LOL, but then I just make him join in and he regrets stopping to watch rather than quietly walking past me and my craziness 🙂

    The only thing that kept me running on the treadmill was watching old (new to me) episodes of LOST. And the minute that was finished, I completely LOST (pun intended) my mojo to run. And look where that led me…the torture of Insanity! Best work out ever. And probably because it’s different every day.

    Love this cookbook Russian Roulette idea – I never thought of that! I shoulda had a V-8! Or a serving of this honey chicken, which sounds devine. I <3 chicken.

    Ugh, I know stress fractures all too well. But that is because of my over exercising days. My pelvis was basically a mosaic…..yea never doing that again!
    I do like to mix it up. But I have yet to do Zumba….I dunno, I just dont have the balls to show I have no rhythm in public.

  21. Chipotle with squash and sweet potatoes gets a big thumbs up from me! And, we have similar work-out routines. I never do the same thing two days in a row. But, I was just thinking I’d like to add something new to the mix. Maybe a boot camp class once a week or something like that.

    Mix and match it is from aerobics to zumba to pure strength training, but mix n match and dance work for me , now i could barely be saying this coz i havent worked out in a bit ,and it feels like a long time (already)
    The chicken is excellent , get my v good share of proteins , de delicious way + some complex carbs,if any, which i love:-)

  25. I would go nuts too… But I would tryyy to keep my cool! We should be able to take time off from ‘perfect’ lifestyles and not freak out, ya know?
    To keep out of ruts I try to update my music and do different weight lifting routines and run at different paces/intervals or just occasionally do something completely random – like row.
    Also – wonderful recipe! Very easy to do but obviously very flavorful. Those are the best.

    When I lived with my parents for a year after college, our neighborhood gym used to show cooking shows on the tvs. I still haven’t figured out if that was motivating, or begging for people to leave the gym and stuff themselves with chocolate cake.

    I agree that chicken can definitely get boring, but I love the sweet/spicy glaze on these and the sweet potatoes and winter squash take it over the edge of savory/sweet!! And they bake in the same pan?? That means less cleanup!! Love it!

    As for getting in ruts–I find I need a balance between a routine and mixing it up in order to stick with something longterm. I need the basic structure to stay the same (i.e., I exercise for 45 minutes three days a week as soon as I get home) but then can mix it up within that pattern. For another example, I meal plan and grocery shop Saturday afternoons, and cook at roughly the same time each day, but make wildly different things every week. For me, variety rides on structure to create fun stability.

    I have heard the most wonderful things about that cookbook. I think it even made the top ten cookbooks of last year or something like that. Definitely going to check it out next time I’m at the bookstore.

    I love a one pan meal like this and think the chicken looks irresistible with the sweet and spicy glaze. Perfect with the sweet poatoes.

    P.S. I take my cookbooks to the gym too. I find it inspires a longer workout if I’m knee deep in a good cookbook.

  51. Joanne, you are such a delight and a bright light. Your suggestions are so concrete and sensible. ANd, inspiring. Did I tell you about my pelvis fracture? I think not. I was only 15, run over and in a wheelchair 3 months of my grade 10 year. Yes, weight piled on then, too. It all fell off when I started walking, but has forever been a problem since. Fat cells are like blowing up a balloon. It is so so so s hard to do, but once done, it is easier and easier.

    for years i ONLY ran…6-7 days a week. then i got injured and therefore got smarter 🙂 now i run 3 days a week, even when training, and can’t imagine doing more. i discovered that i love other exercise and i’m actually thinner/stronger now that i switch it up!

  64. I love everything about this dish – I’m actually pretty partial to chicken, and I love sweet potato, and most of all I love anything that comes together in one pan – actually I pretty much consider myself the queen of the one pan wonder, so this is going to be pretty much right up my alley.

    At the beginning of the December, I started having a “small” knee issue which left me with no lower body exercises. No running, no strength training for the legs, nada. I had to resort to walking + focus on upper body. The result: I love the way my arms are starting to look 😀 But I’m also definitely happy to be able to do other things as well once again: elliptical, spinning. Hopefully, really soon, I’ll be able to run again… in fact, I’ve already ordered a new pair of running shoes 😀

  69. Melissa Clark does good food, if this is any indication. I just made another version of this recipe and loved it. I need to try it with bone-in breast for the longer cook and caramelization. You take some mighty fine pictures!!

    As for exercise, my St Bernard has gotten me out and about nearly every day walking in the woods… but last week, the snow was too much… looked like Italian meringue and impossible to walk on… each step was a challenge.. would you sink OR hit solid ground…. even Petunia said, UGH!

    SO … I am feeling grateful for the break in the weather as I was getting sooo stir-crazy! Can’t wait to try the chicken.

    The book sounds great! And so does this chicken! Love the spicy sweetness of it and the way it’s cooked over top of the taters. To get out of a rut? I look at unflattering pictures of myself or get out a pair of jeans/skirt I want to fit into. I hang them up outside my closet as a constant reminder.

    Great post, Joanne. I’m afraid I DO get into a rut when it comes to exercise (been going to the same step aerobics/dance aerobics class for eleven-ish years ;)) but at least the routines there change every couple of months. I love your idea of just grabbing the nearest cookbook and opening to a page and . . . cooking! You never know what you might end up with for dinner.

    you know I find myself looking at your meat recipes and thinking that is so good I could do it with a bit of tofu or beans – maybe that could be my suggestion to you for your eat live be inspiration – maybe try some of your meat dishes – the ones with lots of flavour – with a vegetarian centre instead – surely that would be a way to get change and health into a meal!

    and if the truth be told blogging always helps me get out of a rut with something new – though I have to try and avoid some of the chocolate cakes posts!

    Do you think this recipe would work well in a slow cooker?

      Anonymous – I’ve never tried it in a slow cooker but would think that the chicken could definitely be cooked in one. I would sear it first and then put it in. For the butternut squash and sweet potatoes, I would probably still roast them so that they could get all caramelized and delicious. You just wouldn’t have that same effect in the slow cooker.
