I wish that all of you could see my room.

It’s in so much disarray that you would faint and then never speak to me again.

You see.  I know I come across as kind of organized.  I post three days a week.  Like clockwork.  (Better than the United States Postal Service, which occasionally is late and occasionally also bangs up your packages enough that they are unrecognizable.  I may be messy.  But a vandal, I am not.  I swear it.)

And I’m usually at least 90% prepared for our exams.  Sometimes.  Except for twice when I was really not prepared.  But do the heart and kidney really matter in the scheme of things?  Don’t you just love existentialism this early in the morning!

But that’s at the expense of my bedroom floor.

IMG_1103

It’s just that sometimes at night, my clothes don’t feel like making it into my hamper.  Sometimes they really want to sleep on the floor.  And I’m usually too tired to argue with them.

And then on Saturdays I really mean to clean them up.  But then I run 17 miles.  And decide not to move for the rest of the day.  It happens.

And don’t let me forget about the cookbooks that I sleep next to.  And the food magazines.  They’re my significant other inspiration.  I can just reach over before I go to bed and page through them and get all excited about all the wonderful things I can cook.  It really is a warm and loving relationship.

This week at Eat.Live.Be. we are talking about what books, cookbooks, and resources help us with our healthy goals.  Some of my favorite places to go when I’m looking for inspiration are my vegan/vegetarian cookbooks and Vegetarian Times, which is a food magazine that I subscribe to (and which the recipe for this curry is from!).  Now I don’t really mean to say that meat is not healthy and eating vegan/vegetarian always is.  Not true in any way.  I just like that vegan and vegetarian recipes typically call for a lot of vegetables. And lots of whole foods.  And, really, I can always add meat if I want to.  So I end up getting the best of both worlds.

What is on your healthy living recommended reading list?  Write a post about it and submit it here or tell us in the comments!

And be sure to check out what other Eat.Live.Be-ers are reading!

I’ve gotten Vegetarian Times in the mail for at least five months now and this is the first thing I’ve ever made from it.  Every month I page through it and want to make everything.  But then Michael Symon usually comes along and takes over my life and weekends and occludes my mind.  God, he is so demanding.

But this week I said, “ENOUGH!”  I closed my eyes, opened the latest issue to a random page, and pointed.  Ending up with this curry.  That had butternut squash in it.  The fates were smiling down on me.  This much I know for sure.

So what did I do to it?  Well I had to change it around a little bit, you see.  I upped the butternut squash because the only one I could find was humongous and I wasn’t about to only use the 4 cups that the recipe suggested.  No, no, no.  That would be shameful.  So then I also upped some of the spices and added more coconut milk and voila.  Here we are.  This curry has a light hint of sweetness from the anise (or fennel.  If you are so lucky to have fennel seeds in your spice cabinet. I thought I did.  But apparently I don’t.) and coconut milk and butternut squash.  Add in a little bit of sriracha or hot sauce.  And your mouth will be so happy with the play on sweet and spicy that you might feel compelled to subscribe to Vegetarian Times and then sleep with it under your pillow.

Not that I do things like that.  I just sleep next to it.  Big difference.

Kerala-Style Edamame Curry
Serves 5-6, adapted from Vegetarian Times

1 tbsp anise seeds or fennel seeds
1 tbsp brown mustard seeds
2 tsp cumin seeds
2 tsp olive oil
1 large onion, half chopped, half sliced, divided
4 cups low sodium-vegetable broth
1 can light coconut milk
1 large butternut squash, seeded and diced (about 4 lb)
1 medium head cauliflower, cut into bite-sized pieces
2 tbsp minced fresh ginger
1 tsp ground turmeric
1 tsp coarse salt
2 cups frozen shelled edamame
sriracha, to taste
6 tbsp unsweetened flaked or shredded coconut
1/2 cup chopped cilantro

1. Heat anise/fennel, mustard, and cumin seeds in a dry skillet over medium-low heat.  Cover and cook 2 minutes or until mustard seeds begin to pop, shaking the pan occasionally.  Turn off heat and keep skillet covered until popping subsides.

2. Heat 1 tsp oil in large saucepan over medium heat.  Add chopped onion and saute 6 minutes.  Add 1 cup broth, stirring the bottom of the saucepan to lift off any brown bits, then add remaining 3 cups broth and coconut milk.  Stir in squash, cauliflower, ginger, turmeric, salt and toasted spices.  Bring mixture to a boil.  Reduce heat to low and simmer, uncovered, 25 minutes.  Add edamame and cook 10 minutes more.  Add sriracha/hot sauce and salt to taste.

3. Meanwhile, toast coconut in a small skillet over medium heat for 3-4 minutes or until browned and fragrant.  Set aside.

4. Heat remaining 1 tsp oil in medium skillet over medium heat.  Add sliced onion.  Saute 12 minutes or until golden.

5. To serve, spoon into 6 bowls and garnish each serving with golden onion slices, toasted coconut and cilantro.

106 Responses to Kerala-Style Edamame Curry…Eat.Live.Be. for a Better 2011!

  1. Joanne says:

Your room may be in disarray, but at least you are well fed 🙂 This dish looks amazing, and I sure wish it was on my Monday night supper menu …

  2. Johanna GGG says:

How interesting that you turn to veg cookbooks and mags for inspiration – I agree that the recipes full of vegetables are the best – though I can get a bit narky about vegetarian recipes without protein because the longer I have been vegetarian, the more I appreciate my protein but like you with your meat I often add some protein.

And I love to hear about your messy room – my place is the same – my mother frowns on it but I figure my priorities aren’t that bad – enjoying blogging and food and let a bit of mess into my life – though it would help if I just did a few dishes now instead of blogging – sigh!

  3. Looks delicious and inviting:)

  4. Simply Life says:

wow, this looks incredible! maybe that needs to be my next magazine?!?!

  5. I love how this looks so hearty, and yet so soothing, too. I just want to tuck right into it.

  6. I love existentialism every day and would love this dish most days! Except for the coconut and cauliflower, I could make it this morning. First, however, a trip to the grocery store. I want to work a few more soups in before spring!!

    Best,
    Bonnie

  7. I just get a few magazines, cooking light and taste of home. I alternate some. I like to page through them while I’m watching TV, multitasking you know. Otherwise, the internet is my main source of information, including your blog! Why, reading your blog is like getting a free copy of the vegetarian times and other great books! Thanks! 🙂

  8. Closing your eyes and pointing a finger is a technique I think I will adopt. There are just too many choices for good recipes out there from all our sources! This was a good choice Joannne.

  9. Lizzy says:

I actually have all these ingredients! That curry looks perfect and looks like a really nice balance oud flavors. Ps… My bedroom floor is similar. Although it’s my clothes that are washed and just need to be hung up that are on my floor next to the tons of cook book and magazines. Ha!! Congrats on 17!

  10. girlichef says:

Oh yes, this looks awesome! I subscribed to Vegetarian Times for many years, but sort of let it go a few years back. Now I’m totally missing it. Looks like it’s time to start that subscription back up! Love everything about this curry 😀

  11. That looks so healthy but so satisfying. If I ran 17 miles, I wouldn’t move for a week.

  12. “It’s in so much disarray that you would faint and then never speak to me again.”
Why don’t you post a photo and let us decide ourselves:)

  13. ABowlOfMush says:

This looks lovely and warming and delicious!

  14. Shannon says:

My room was a disaster too, until yesterday when after a week of not being able to find the DVD player remote I decided to clean. I am, however, happy to say that I keep a clean kitchen. And yesterday I finally put the cookbooks beside my bed back up on the shelves in the dining room. Then I settled into bed with Isa Chadra Moskowitz’ “Vegan With A Vengeance”. As you know, I am not vegan but I too like the abundance of vegetables and innovation in vegetarian/vegan recipes.

Oh, and I almost forgot to say… this looks like my dream dish. Coconut milk & butternut squash, heck yes.

  15. Wait! Let me get this right? Curry, edamame, coconut and squash to name a few? amazing, never never would have thought to include coconut but then again-that is why i stand in awe of you! The pics- just beautiful

  16. sra says:

I keep thinking I should put a hamper near my bed so that the day’s discards can go into it then I tell myself no, that’ll crowd the room and I won’t be motivated to pick up after myself. I do pick up after myself but very grudgingly.

The curry looks really good, with those coconut flakes on top!

  17. Danielle says:

This looks great! I just got a bunch of vegan recipes from a friend of mine (my attempt at being healthier once a week.) I may need to try this one.

    Danielle

  18. Lea Ann says:

Who cares about your room…gimme some of that curry! 🙂

  19. Nina says:

Ohhhh, Joanne, this curry looks heavenly. Love the combo of cilantro and coconut! I bet that is pure heaven. I might need to subscibe to veg times.

  20. Damn – I MUST have this!!!!!!!!!!!!! I can not believe the miles you put in girl! awesome, all of it!

  21. This curry looks great, I really like the use of edamame in it! I can definitely identify to a messy room, and the conforting feeling of having cookbooks and cook magazine next to the bed! There is nothing better than falling into Morpheus’ arms with some yummy food in mind…

  22. Gloria says:

look absolutely nice ! I love it! and I love your meyers lemon bars! gloria

  23. daphne says:

U make vegetarian food soooooooo appetizing! I’m loving this curry already! Good use of edamame too.

  24. Big Dude says:

I’m not much of a curry fan, but you dish still looks delicious.

  25. This is gorgeous. Love the combination of coconut, butternut squash, and cumin/mustard/turmeric. Amazing that this sounds appealing so early in the morning…

  26. Mari says:

women how do you find the determination to run so many miles in one day?? I can not wait until I get to that level!

  27. Shannon says:

hehe, sleeping with your loves… i read too many blogs, so I try to avoid magazines, although i do get bon appetit 🙂 this looks great though!

  28. Dawn says:

Oh my, that was one lucky pick! I’m going to make this as soon as I can tackle my butternut squash.

  29. Pam says:

I don’t sleep with my cookbooks, but I do have them piled all over my house, so that they are never far from reach.

  30. Amy says:

Well, it’s official. You are no longer welcome to live with me. My constant nagging you to clean up your room would invariably remind you of your mother and we would end up hating each other.

I might be willing to lay off slightly in exchange for this dish. I understand the importance of compromise and all. Ahem.

  31. Mo Diva says:

    Dammit joanne! im hungry!

  32. Katerina says:

I have to try and dig into Indian kitchen myself. All these dishes look delightful. Your curry is astonishing Joanne!

  33. Sarah S. says:

I *almost* made this dish yesterday! Definitely the most tempting in this month’s issue.

  34. That Girl says:

I bet your fennel seeds are hiding with my chili powder somewhere. Probably plotting something delicious.

  35. Claudie says:

I regard clothes on the floor as an artistic expression of my self and how the day went 😉 And who would mess with art? Certainly not me 😛

I’m not sure this would count for the “Eat.Live.Be,” BUT, I’m reading this wonderful book: “The Omnivore’s Dilemma.” I really like it. I already knew many of the things in it, but now I’m even more aware of it and definitely makes me want to buy _grass-fed_ beef only… I think that’s definitely something which would make all of us healthier.

And lastly: your curry looks really tasty 🙂 much nicer than most curries you get to see out there!

  36. You manage to make simple, yet appealing vegetarian dish.

  37. Swathi says:

Kerala style curry looks delicious Joanne, I love coconut milk in everything.

  38. Ha ha , i have lods of cooking books all over my bed and around and the bed in the room we dont use is full of them too:-)
Really i get all excited at night too , reading all the stuff , and then get lost reading it all into wee morning hours and then m too sleepy when its time to wake up early and cook that 🙂

the curry looks really heartily flavorfully a tongue tickler ,in a delicious way.
Love all ur add in’s and anise.
Bdw, u should have had us for a neighbor , we almost always have fennel in our refrigeration:-)

  39. teresa says:

that looks SOO good right now, i would die for a bowl! i think the coconut is my favorite thing.

i’ve always had a messy room. my mom would die, but it’s just one of those things i never conquered.

  40. Pam says:

Who needs a clean room anyway? This looks unique and totally tasty… another healthy and flavorful dish.

I still can’t believe you run 17 miles in a day. I don’t think I have run 17 miles total in my whole life.

  41. Nadji says:

Une recette originale et pleine de saveurs.
    j’en mangerai volontiers ce soir.
Bonne semaine et à très bientôt.
    See soon.

  42. Marisa says:

Hah! Totally know what you mean about the clothes on the floor – most of the time I can’t even see our bedroom carpet. It’s disgusting. This butternut curry though – totally the opposite of that. Love the spices and coconut milk – perfect use for the two butternuts lolling around in my vegetable basket.

  43. RamblingTart says:

This curry looks amazing, Joanne – so savory and warming. 🙂 Love that you went running instead of cleaning. 🙂 I cleaned but completely forgot about laundry. Alas. 🙂 Instead I talked for hours with people I love to bits and watched TV and listened to old time radio and ate lots of grainy bread dipped in olive oil. I think it was worth it. 🙂

  44. La Liz says:

Ack, I set out each day, promising to be more organized. I’ve purged the book collection, but the cookbooks stay, and some are piled in columns thoughout the house. Love the edamame, coconut, curry combo which would be delicious on this cold Monday. Thanks!

  45. Juliana says:

Joanne, your curry dish looks delicious with cauliflower, edamame and coconut flakes…beautifully done. Have a wonderful week ahead 😉

  46. Hi Jo jo! I am laughing so hard about your room confession, you see, my daughter is a wonderfully together girl and doing so well in school and work and with her art, but her room is a sea of discord.I used to get upset about it and now I dont even care. We all have something we let slide, like it is a treat really. Do not let it get you down! As for books and magazines to keep me on track, I have to plead a bit of an opposite from you. I used to buy everything under the sun and it only cluttered my life. Now I eat intuitively and get inspiration from all of you (and bittman of course!). Linking up a great way to make chicken tender, flip it! All the best and big hugs too! Alex

  47. Yum! It looks fantastic.

Although I do have stacks of cookbooks and food magazines I keep them mostly in what I call my “hoarder room” the guest bedroom that is pretty scary right now. 😉 I think I marked this to make in VT–it’s a favorite magazine resource of mine as are the countless vegan/vegetarian cookbooks I have which most of my friends / family don’t get because as they proclaim “You eat meat!” I’m like you–I take more inspiration from the veggie cookbooks. 😉

  48. 1.) You only post three times a week? Could have fooled me. I’m always met by new and ever more impressive dishes when I come here.
2.) So, why don’t we get to see pics of the mess?
3.) Nothing more. I only have two but I felt like I should have three.

  49. janet says:

Hey Joanne, That described me to a T as well.. slightly messy apartment (until my mom takes pity on me and gives me a hand) because my priorities are in the kitchen and work/school. But I have my favourite cookbooks by my bedside table for weekly inspiration… although sometimes I find it a bit stressful (so much I want to make!) so I’ve started to read other pleasure books right before bedtime.

  50. Megan says:

I have finally fallen into a sort of habitual cleaning routine, which only leaves us in disarray about once a week now…lol. I have always loved curry ever since I studied in England where I was also a vegetarian at the time. This reminds me of one of my favorite meals I got from the local Indian place down the street from our dorms. I will have to make this one for sure!

  51. Your room sounds like my room!

  52. sweetlife says:

My room is the only room in the house that is ALWAYS cluttered, so no judgement here girl..a perfect meal to satsify anyone after a hard day, have a great week!
    sweetlife

  53. nico. says:

This looks delicious! And I also love the Vegetarian Times even though I have never made anything from it 🙂 I always read it at the chiropractor, but then the recipes stay at the chiropractor!

  54. Come and give me some southindian style curry making sessions..I suck big time at them. You already knw how restless I feel abt clutter. So I wish I better not see it.Your curry simply rocks!!

  55. aipi says:

That looks so comfy n homey..loved all the ingredients n flavors going in there!

    US Masala

  56. OohLookBel says:

What a gorgeous recipe, edamame in the curry would add a great texture to it. By the way, I really admire your regular posts. You are therefore allowed to be disarrayed once in a while (not too often, though, you still have standards to maintain!)

  57. Look at the colors! Helloo sunshine!

  58. Edamame curry! Interesting and delicious!

  59. Mary says:

What a uniquely healthy dish. It looks wonderful and sounds delicious. This is a homerun for sure. I hope you have a great day. Blessings…Mary

  60. This curry sounds very tasty, a great combination of ingredients and flavors here!

  61. Claire says:

I must admit, I’ve never had Indian food…so making it without ever having it “scares” me. I guess I should just try it b/c I think I’d like it!

  62. Maria says:

Edamame is just so good. I can’t even start cooking with it unless I have a spare bag for just eating on its own as well 🙂 This curry sounds delicious Joanne.

  63. There is a really interesting grouping of ingredients in this recipe and it sounds ridiculously delicious. When are you cooking dinner for me again?

  64. my clothes also love the floor, i just wished they loved to wash themselves.

looks like good stuff is happening here at your blog.

  65. I really love your take on eating vegetarian and meat. I also think this recipe looks absolutely delicious and have bookmarked it as “make asap”! Gorgeous pictures too.

  66. Emily says:

Wow, this looks incredible! I’ve never had real Indian food before.

  67. Indie.Tea says:

Its lovely to see a Kerala-inspired recipe. My SO’s family is from the region, and their style of cooking is so unique.

  68. Ada says:

Omg this has to be the recipe of my dreams. I’ve never heard of putting edamame in curry before, but it sounds divine!

Also, I bet your room is immaculate compared to mine. You would never know my bedroom floor was hard wood. . .

Good luck if you have any exams this week!

  69. grace says:

i’m organized in many parts of my life, yet in others, i cringe to even consider the disarray. i’m an enigma, what can i say. 🙂
mmm, edamame–nice work with this one, joanne!

  70. Barbara says:

If you’re running 17 miles, the only clothes you REALLY need to pick up and wash are your workout clothes! 🙂

Love edamame! Never had it in a curry. Nice recipe, Joanne!

  71. Never had curry before, but your dish makes me want to try it. And soon! Looks delicious! After 17 miles, you cooked? I’d need to recover for at least a week!

  72. Sarah Caron says:

My best friend’s family is from Kerala! I will have to try this dish (and make it for her sometime). YUM.

  73. Your post looks like it should be a spread from Gourmet magazine. Do you get a lot of natural light in your kitchen or do you use a photo light? The dish looks so full of healthful, amazing flavors. In college the only way I could get into my bed was to take my arm and swoop all the books and papers to the foot. Then I would crawl in.

  74. I am a big fan of incorporating vegan into a mainstream diet too, just for variety and the push to incorporate more legumes and veggies.
Love the curry! It is very you. ?

  75. Hahahaha, I’m also a pretty unorganized person, but usually I’ll just leave my clothes on the bed instead of the floor 😉

That curry looks incredible though! I’ve never actually attempted to make my own curry before…definitely on my to-do list.

Also…you run 17 miles?! In a day?! Omg…that is absolute torture. I can barely run 2.5 miles on the treadmill hahah! You must have some awesome will power.

  76. Kim says:

I have cookbooks and magazines everywhere as well. By the sofa, under the bed, in the bed, in the kitchen…pretty much everywhere except for in the bookshelves.

As for this curry, it looks fantastic and flavorful. Plus, I love that it calls for edamame, which is something that I can’t get enough of. A good looking dish for sure.

  77. Peggy says:

Who needs a clean room when this curry is on the kitchen counter? Seriously. Clean rooms are overrated. And this curry takes precedence. =)

  78. A really tasty & truly appetizing vibrant yellow curry!

The dish sings to me!! MMMMMMMM,….! Iread cookbooks & cook magazines a lot & they are also in my bedroom,..Sometimes , the husband doesn’t like it,…hey , hey,..:)

  79. Patsyk says:

I’m impressed that you run 17 miles in one day! With that kind of workout, who would blame you for having a messy room? Not me!

  80. Kristen says:

As long as the kitchen is clean, your room can be as cluttered as you want…we won’t tell. Great looking curry.

  81. Mary says:

YUM! This looks soooo great! Totally want to try this out!

    Mary xx
    Delightful Bitefuls

  82. Claudia says:

I do love me some curries, and this one has lots going for it, with the edamame and the butternut squash. You have your priorities straight girl.

  83. Julie says:

    booooooooooooooookmarrrrrrrrrrrked! hahaha 🙂

ALSO i have a huge stack of books next to my bed that i just am too damn lazy to pick up haha like what’s my problem

  84. Reeni says:

You said the magic word for me and that was butternut squash! But taking a closer look at the recipe made me even happier – love the cauliflower and edamame too. I wouldn’t be able to resist making this! I need that magazine!

  85. Candace says:

    You inspire me, Joanne… ~sigh~
    This looks soooo good!

  86. I adore the combination of curry, butternut squash, and coconut milk. I like that this is a thick and substantial soup full of so many veggies and herbs.

  87. Miriam says:

Yea, I’m pretty sure the caliber of my messy room would put your to shame.
As far as reading for health goes? I agree with the vegan information out there, especially raw vegan. It is so educational and inspired!
The food looks exquisite!! Miriam@Meatless Meals For Meat Eaters

  88. marla says:

I am all over this curry. Wish I had a giant batch of it in the fridge. Also love that I can add chicken, beef, tofu, fish and there are no judgements. Great eats girl. Don’t let those books take over your bed 😉

  89. I want to reiterate what everyone else is saying, this does look delicious. I’m making it asap. I especially love the shredded coconut and the edamame!
Eating healthy is second nature to me–because I LOVE whole foods and vegetables AND curry 🙂 Right now I’m crazy about my carrot parsnip curry. It’s on my blog, and I even made it in the 3rd episode of my cooking show. I’ll link it up.
    Thanks for sharing your curry!

  90. Nutmeg Nanny says:

If you run 17 miles in a day I would think it would be ok if you didn’t move for a whole week…haha.

This meal looks great too. So healthy and packed with lots of nutritious ingredients. I was in the city tonight…I should have tracked you down and grabbed a bowl…:)

  91. sanjeeta kk says:

I often make this curry on weekends, Joanne! And love the flavors and veggies that I can add in it.

  92. Nicole, RD says:

Fennel seeds really are the best! And I think I would trade my husband for cooking magazines in bed (for the sleeping part, anyways). I’m assuming they don’t snore and steal covers??

Thanks for your email back, darlin’! You’re the best! I’m holding tight for now and hoping I never need Lortab again!

  93. Suman Singh says:

Wow, that looks lovely and delicious!

  94. Shirley says:

    That is some dish Joanne!

  95. Hannah says:

I’m also guilty of collection recipe magazine and almost never cooking out of them… But I like to think that they must provide subconscious inspiration, at least! Considering the success of this dish though, maybe I should actually start making some of those bookmarked recipes. This looks great.

  96. Eliana says:

I have never seen vegetarian fare look so good before! How about this – if you make this for me I will help you clean your room? How does that sound?

  97. Cara says:

I may or may not have some cookbooks on my bedside too. This is just the kind of recipe If I have to be awake when I’d rather be asleep, I’d at least love to read about something like this recipe!

  98. Monet says:

Coconut and edamame are two of my favorite foods. And with all the craziness that you do…your bedroom floor deserves to be a bit messy. You are wonder woman! Thank you for sharing this loveliness tonight. I hope that tomorrow is full of happy moments, joyful conversation and plates of satisfying food

  99. For the life of me, I will never understand how you do it all – the school, the running, the cooking, the photography. Have they cast the Wonder Woman movie yet? My vote is for you. I bet you’d find a way to squeeze it in 😉 Thanks for sharing the yum yums with the Hearth and Soul hop.

  100. I am rarely ever organized, but I pretend I am by making lists, lol. This dish is just gorgeous and such beautiful flavors, love it 🙂

  101. Kevin says:

That looks really good! I like the toasted coconut topping!

  102. I’ve recently discovered shelled frozen edamame at my supermarket and so I’m always on the lookout for edamame recipes. The soup looks great! Thanks for sharing!

    Cheers,

  103. LOL I don’t think people think I’m that organized to be honest, but I can totally relate to a state of messiness in my bedroom. And I have so many cookbooks piled up in this apartment they’re practically spilling out the front door. I’d never have fantasized that edamame could be added to curry but now I must try it. Looks delicious, Joanne!

  104. Dimah says:

This really looks and sounds fantastic! Beautiful photos!

  105. Ginger says:

I just made this for dinner. It is so freaking good. didn’t have cumin seeds so I just added ground cumin when adding all the veggies/stock.
