I don’t like to label myself, but did you know I’m “the weird girl”?

Did you know that when I take naps, I sleep with my head at the foot of the bed and my feet on my pillows?

Or that I get really grossed out when I find coffee grinds in the sink?

Or that I actually like doing the dishes?  (But only when there are no coffee grinds involved.  None.  At all.)

Sigh.

Don’t tell any of the virile 20-something men you know about these things.  I need to keep all my options on the table.  Because, you know.  Who really wants a future wife who freaks out about coffee grinds?

If you could also not mention the fact that I still have fifteen cans of pumpkin sitting on my shelves (to which I may or may not have assigned names, dates of birth, and favorite colors, thus making it all the harder to actually use them) and that I crave pecan pie in the middle of April.  And, you know.  That I would be perfectly happy to live in a world where the only two months were October and November.  That would be awesome, too.

In my opinion, though, when you crave something as utterly specific as pecan pie, you have no choice but to do something about it.  Even if it’s April.  Even if, as of tomorrow, you are going to have to start studying for the medical boards for 12 hours every day (and yeah, I wish I was exaggerating too).  Even if you are going to be running 26.2 miles on broken calves in a week.  Even if you are going to start training for another marathon with Team In Training almost directly after that.  Even with all of these weird, random things going on in your life.  You just have to do it.

And with a recipe this rock-star good.  You really have no excuse.  There were lots of pecan pie bar recipes I could have chosen from, but what I liked about this one was that it used honey instead of corn syrup.  I really hate using corn syrup.  It makes me shake in really unattractive ways.  Thus counteracting any kind of appeal that may arisen now that I am “the girl who makes pecan pie bars”, weird notwithstanding.  So, yeah. If you want to tell your 20-something virile male friends that.  And leave out all the rest.  And then send them to NYC by red-eye because I’m still looking for men whose arms I can fall into at the end of that marathon next week.  That would awesome.

Pecan Pie Bars
Makes 1 9×13-inch pan, adapted from Gourmet

1 1/2 sticks unsalted butter
2 cups AP flour
1/2 cup light brown sugar
1/2 tsp salt
8 oz pecans (about 2 cups)
1 stick unsalted butter
1 cup packed light brown sugar
1/3 cup honey
2 tbsp half and half

1. Preheat oven to 350.  Cut butter into 1/2-inch pieces.  In a food processor, process the first four ingredients (butter through salt) until mixture begins to form small lumps.  Sprinkle into a 19x13x2-inch pan and with a metal spatula, press evenly onto bottom.  Bake shortbread in the middle of the oven until golden, about 20 minutes.  While shortbread is baking, prepare filling.

2. In a food processor, coarsely chop the pecans.  In a heavy saucepan, melt butter and stir in brown sugar, honey and cream.  Simmer, stirring occasionally, for 1 minute.

3. Stir in pecans.  Pour pecan mixture over hot shortbread and spread evenly.  Bake in the middle of the oven  until bubbling, about 20 minutes.

4. Cool completely in pan and cut into 24 bars.  Will keep, covered, for 5 days at room temperature.

    Oh yes, I am a hoarder, too! Canned food is great because it keeps… but it sucks if you have to move because they are heavy! Gah, such is life in Janet’s world. The quandry… pick up fresh spring produce or try to eat my way through my cupboards before I move…. I vote the former!! 🙂

  5. My husband and my dad are going to go insane when I pull these out next weekend. Pecan pie/bars, candy, or just plain pecans they go crazy for. They are obsessed. My dad brought us last year 2 huge huge bags of fresh pecans. I was like thanks dad but I have no idea what to do with all of these! LOL! I just stashed half in the freezer and now I know what I am going to do with at least some of them. Make your pecan bars! When I do and when I post them I am definitely linking it back to you!     I have a twenty something male friend who has his weird habits too! I am sure you would make a good company but you would have to come stay here I’m afraid. If you ever want a big change in your life and I mean a huge one then just let me know! The bars are absolutely decadent and yes honey is much better than corn syrup, I agree!

    I bought 9 29 ounce cans of pumpkin last week. It actually gave me a high that lasted a good few days. I smile every time I see them in the pantry.

    I have a bag of pecans in my pantry too… and everything else this recipe calls for. I want to leave work immediately and make these.

    Your pecan bars look amazing, Joanne. I have been enamored with honey lately myself. A friend gave me a jar of locally produced stuff that is out of this world — a real citrus-y tang to it. So of course I had to buy a few more jars of it 🙂 Aside from the banana-lemon honey syrup I posted about a couple weeks ago, I have been loving it on toasted English muffins with peanut butter. Maybe not your everyday breakfast because of the calories, but surely if you’re going for a long run in the near future 😉 Best of luck on your marathon. You go, girl!

  24. I have it on very good authority that ingesting pecans suspended in sugary sweetness is the key to acing medical boards. I mean, what other reason would create the ratio of 1 doctor to every 5 patients in Atlanta?? Now, just find a man who drinks instant coffee and you will be in good shape.

    Isn’t this recipe the BEST?! I’ve been making these since I was first married and have been enamored with them ever since … we’re going on 10 years now. I made the pecan pie bars first then used the shortbread in the lemon bar recipe and the fudgy brownie bar recipe. Can I tell you that they are all darn delicious?! Oh gosh, I just weighed myself yesterday and saw I lost 9 pounds in the last month … you are not helping me here by reminding me of these!

  53. This bars look so wonderfully ooey gooey in the best way possible. I don’t think you’re weird, you’re just intense and idealistic. There’s nothing wrong with that. And you shouldn’t leave coffee grounds in the kitchen sink, it stains the porcelain.

  89. Mmm! The filling to crust ratio is so much better here than in pie. Normally I’m not a huge crust person but pecan pie filling is just usually toooo sweet. I need that buttery salty crust to balance it out. These are a must try.

  124. I laughed when I heard about your excess pumpkin dilemma. I had the same problem up until last week then I threw them in my chocolate chip cookie recipe. I highly recommend it. They came out really light and flulffy with this gooey, sticky quality to them. 🙂 Post to come soon.

    There is absolutely nothing wrong with making holiday dishes in the middle of the year. ESPECIALLY when it involved pecan pie.

I did use a pastry cutter instead of a food processor so a little more hands on time, but still incredibly easy and will definitely be repeated often in our little kitchen im sure 🙂
