I cooked dinner at 3PM last week and none of you batted an eye when I told you.

That’s why I love you.

IMG_3214

My future husband, on the other hand?

This is one of those things we’re going to fight about until we’re 86.

I mean, in all likelihood, he’ll think it’s cute and endearing at first.  I’ll be his crazy little marathon-running food blogging wife who refuses to let him eat until she’s taken 93 pictures of a bag of potatoes.

It’ll be our little inside joke that dinner is always tepid and that we can’t ever eat at the kitchen table because it’s sacred photo-taking territory.  Until, that is, it becomes our little inside screaming match.

(“Cute and endearing” only lasts so long.)

IMG_3196

“Why do we eat like senior citizens?”

“Why is our grocery bill more than our rent?”

“Why can’t you ever just cook anything normal?”

Man, I’m so mad at him.  And we haven’t even met yet.  (That’s not a good sign, is it?)

Maybe I’ll just have to train him better.  Make him think that it’s his idea that mid-afternoon is prime cooking time.

Brainwash him into falling so in love with curry that he demands we eat it every night.  I’m not averse to such trickery.

I’ll start with this potato curry.  It has a creamy coconut cashew gravy that he’ll contemplate drinking straight from the pan. A curry so addictive that he might not want to eat anything else ever again.

But then I’ll have to remind him that I never make anything twice.

Do any of you have a good marriage counselor?  I think we’re gonna need it.

IMG_3215

To totally switch gears now, today at Eat.Live.Be. we’re talking about our progress in the five months.  Have we met our goals?  Have we been successful?  Has anything changed?

This is a loaded question for me.

Am I the size that I want to be?  Did I manage to go shopping for new pants last week without having a complete meltdown in the middle of the store?  Um. No.

I’m getting there.  But still. No.

I think, though, that my attitude and my outlook are much improved from January.  I’m committed to having a good marathon training season.  I want to feel good, irregardless of how I look.  Now that I’m finally (mostly) uninjured, I want to stay that way.  And to do that I need to treat my body better.  It can do amazing things if I let it.  And by continuing the vicious cycle of criticizing it, feeling bad, and then eating tons of crap…I’m just not letting it.

For the past two months I’ve been much better at that.  At letting go after I eat something “bad” and not berating myself about it.  And I feel it in my bones that if I just stick with this, I’ll end up back at the size that I want to be.  In the end, I’m the only one who stands in the way of getting what I want.  And I’m just not willing to let myself do that anymore.

How about you guys?  What has changed for you in the past five months?  Are you where you want to be, or at least on the road to getting there?

Check out the other Eat.Live.Be bloggers’ posts to see how they’re doing!

Coconut Potato Curry with Basil and Cashews
Serves 3-4, adapted from What’s For Lunch Honey?

500 g new potatoes, steamed for 10 minutes
1/3 cup cashews, soaked for 10-15 minutes and then chopped
1 cup green peas, fresh or frozen
2 cups cherry tomatoes
2 tbsp tomato paste
1/2 tsp cumin seeds
1/2 tsp cayenne pepper
1/2 tsp coriander
1/2 tsp garam masala
1 can light coconut milk
1 tbsp olive oil
Handful of basil, chopped
Salt and pepper

1. In a large pan, heat the oil and cumin seeds.  When they begin to sizzle, add the cashews and allow to gently roast.  Add the steamed potatoes and toss to coat.

2. Add 1/2 cup water with the tomato paste and incorporate.  Add in the cherry tomatoes and simmer for 5-8 minutes.

3. Add all the spices.  Stir well to coat the potatoes.  Mash any of the tomatoes that are cooked through.

4. Simmer for 3-5 minutes.  Add the coconut milk and peas.  Simmer until the sauce begins to thicken.  Add salt and pepper to taste.  Add chopped basil.

I am submitting this to Chaya’s Meatless Mondays and Rebecca Jean’s Maniac Meatless Mondays.

  1. Lovely, beautiful and colorful curry dish. The potatoes ae so cute whole. I can’t wait to try this.

  2. Pam says:

Don’t worry, you’ll train him. My husband doesn’t even approach his food, until he knows I have taken every last photo of it.

  3. sofia says:

it takes a special man to deal with a food-bloggin’-lady. very special. i’d like to think i’ve found one, but also make concessions – my plate is the one that gets cold from photographs, and he usually starts eating while i’m awkwardly propped at the counter taking pictures. it works.

changing our attitudes about our bodies is certainly the first, most important step. glad to hear your mind is changing! mine certainly is too. it feels good.

  4. megi says:

I can’t decide which I love more, your writing or recipes! The potato curry looks absolutely delicious and the colours are amazing.

  5. bellini says:

If I ate healthier meals ans used mt favourite lemon only in savoury dishes and not sweets I would be a happy woman.

  6. jenna laughs says:

I laughed at the part where you were arguing with your future husband. I have actually gotten in several arguments with my family about having to shoot whatever food I made before I serve it. And the grocery bill more than rent part – totally get it. You are too funny! And these potatoes look DELICIOUS.

  7. Potato Curry? What! You continue to amaze me. I mean curry yes but I have never thought of doing potatoes with it let alongside the flavor of coconut. I am speechless at the moment surprisingly hungry too!

hey- I know my giveaways normally aren’t your cup of tea but I hope you will check this one out because as a food lover I know your going to LOVE it! See my blog today for a 9 pack sampler of infused olive oil from Devo Olive Oil! Its awesome

  8. This is a wow dish! Gorgeous!

  9. Potato curry looks mouth-watering! No I don’t have a marriage counselor but I have to say I have to start looking for one.Me and my spouse do quarrel when I take gazillion pictures of a dish before I let him taste it..Sometimes he threatens me that he will break my camera and my picture-taking fingers.

  10. Lora says:

Yum! Looks like a wonderful potato curry. My husband doesn’t eat sweets so we avoid those fights. He could care less about fresh baked anything sittingon the counter. You need to find a husband who doesn’t eat 🙂

  11. Your husband respects meatless Mondays?

  12. Adrienne says:

I love that you never make anything twice, I’m the same way! Right now I get harassed by my roommates for taking so many pictures while I’m cooking, I can only imagine what my future hubbie will say haha 😀

  13. Astra Libris says:

Thank you for sharing these beautiful posts… I too am trying to change my attitude about my body, and it’s such a challenging journey… It helps to know I’m not alone! Thank you! *grateful hugs*

P.S. Your future husband is going to know fortunate he is to be with amazing, talented you, and won’t utter a word of protest! 🙂

  14. OohLookBel says:

Love your treatment of the humble potato in this dish. I have some garam masala that I will shake over some taters next time. btw, you’ll know he’s a keeper when he asks you why you haven’t taken a photo of dinner yet.

  15. Hahaha I love this post. Your future husband will just be so thankful that he eats the most delicious food all the time that he can’t really get mad at you:-)

  16. Joanne says:

Oh Joanne, with meals like that one, no guy in his right mind would complain about 3:00 cooking … So don’t worry!

  17. Shannon says:

HAHA. You’ll find the guy who will be accepting of your need to eat early and photograph before the food is touched. Why? Because the food you make is incredible and it’s a worthwhile trade-off.

  18. ahem, why do you think I work for a natural food store? For the discount, of course! I’m sure you’ll train him – there is that thing called a courting period. But had to lol really loud (at 6am) about never cooking anything twice! Yup, with you on that! good luck with the pants, it will happen! Hugs!

  19. If your husband doesn’t kiss your toes for preparing him food that good, I think you should ship him right back!!! 🙂
My husband and kids have learned to wait patiently for their food. They have learned to put up with all sorts of weird experiments. They have learned to ask before taking food. (Ma, is it ok to start feeding our hungry bellies yet? Are you sure 226 photos is enough? Did you get the baguette from every angle?)
In my opinion, it’s a very small price to pay for delicious (blog-worthy) food.

  20. I love how you are already fighting with your husband and you haven’t even met him! Too funny! Train him well.

  21. Wow, this looks amazing. My bf claims he doesn’t like curry (or coconut), but I think I’m going to prove him wrong by making this.

  22. Those potatoes look so good!
My husband is so thrilled not to have fast food every day that he can tolerate the pictures and the cold food, he still remembers Taco Bell dinners! Your future husband is a lucky guy, he just doesn’t know it yet!

Lol. The first half of the post…it’s as if I wrote it, except in the present tense, not future. Paul would give anything to eat at a normal hour, have it served warm, and god forbid I ever make the same thing again. His head would spin if I actually did that. If you find that marriage counselor, you let me know.

p.s. and don’t you find that you could take 100 pictures, but it’s always the first 5 that are the best.

    Ah, blogging.

  24. Sounds like a positive attitude wrt your changes, Joanne… and about your future husband! Curry looks great! 🙂

  25. Betsy says:

I looooooooooooove curry! I wish I was eating this for breakfast right now

  26. My mortgage broker nearly keeled over in shock when he was interviewing me for a mortgage application and asked me how much I spent a month on food – and that was even after I’d played it down a little to what I thought might be normal. Obviously, I still don’t get how little normal people spend on food!!

This curry looks absolutely wonderful – I have it bookmarked and it will be I think one of the first things I’ll make when I get home from holiday – the perfectly warming, and comforting dish after a bit of long distance flying.

    Sue xo

  27. Deborah says:

Go figure – my husband is ok with the eating at 3pm, or waiting until pictures have been taken, but he is not a curry fan at all. But I would make this and eat the whole thing myself!!

  28. My husband would drink the curry sauce right from the pan. Don’t worry about the future husband. You cook, write, the whole phd thing. Trust me he’ll think you’re pretty darn awesome.

  29. Sippity Sup says:

You husband will get used to the photography and potato thing. But keep him guessing about all the rest. That’s the key to happiness. GREG

  30. Something tells me he’ll know what to do 🙂 I love your attitude. Life’s short – live it well and have fun!

  31. That Girl says:

I firmly believe you will find someone who fits your lifestyle and loves you for all your quirks, not despite then.

  32. tigerfish says:

There are little changes in me for the past 5 months that I did not even notice!

I like that you keep the potatoes whole, in the curry 🙂

  33. My mouth water instantly seeing your delicious curry. This will always welcome in my home.

  34. Kristen says:

We eat dinner around 4pm. No one even cares that we eat that early. It leaves plenty of time for a before bed snack.

  35. OMG, HaaaHaaa! ‘I’m so mad at him and we havn’t even met.’ Your hilarious. 😉
This is seriously a wonderful recipe. I love the coconut cashew sauce and would totally drink it right from the pan! Special curry straw?
Oh, and I wouldn’t sign up for counseling just yet. I’ve been super happily married for 10 years and my husband not only is understanding of my food photography/blogging obsession but brags to his co-workers about it and sends them my site. 😉

  36. wow this makes my tummy growl! Yummy!

  37. I couldn’t take any picture if my husband stood around and complained that his food would be cold if I didn’t stop taking photos….

  38. Hahah I think all food bloggers are on the same boat 🙂
    The potato curry sounds DELICIOUS!

  39. Danielle says:

This looks delish – and so simple!

This looks gorgeous. I never tell my husband that dinner is ready until after I’ve taken the pictures. He’s forgotten what hot food tastes like!

  42. Hmm, yep, the honeymoon period wears off … maybe you are destined to marry another food blogger though? There are some men popping up out there now. Oooh, or a chef!

  43. Juliana says:

Joanne, you are so funny 😉 I love your potatoes, they look like they are blasting in flavors…love the coconut milk and all the spices. The pictures are gorgeous. Have a great week!

  44. teresa says:

haha! yeah, i’m pretty much living that life now. “hold on kids, we have to wait until mom’s done with her pictures.” but for a dish like this, it would be worth it!

  45. Hahhah that sounds so much like at my place. My partner asked the other night: “Are there any special instructions on how to eat this dinner?”
What a delicious curry, I’ll have to try this one!

  46. Hahaha! Okay, that has been my house for almost two years – here I am rushing to take a picture and there is my husband standing over me rolling his eyes because his food is getting cold. Then I introduced him to Tastespotting. He likes to eat and turns out he likes to look at pretty pictures of food just as much. So I have started asking him to find a picture he likes of whatever I’m cooking to give me an idea of how to set up the shot. Now he’s actually getting into the whole photography thing!

  47. Yum, love it Joanne. Simply superb. That pot looks so inviting 🙂

  48. I’m doing better too, Joanne. 🙂 My ideals of perfection have diminished and I’m very happy with “better than I was” and “farther along than I used to be.” 🙂 I may not be as small as I like, but I’m ALIVE, I’m stronger, healthier, braver, and bit by bit I’m getting smaller and more athletic. That is GOOD! And I adore this curry. I’d totally be drinking out of the pan!

  49. Suman Singh says:

🙂 I think every food bloggers have the same story to share..On the other side they get to enjoy all delicious dishes every now then, correct? Potato curry looks so yum..and Love the pics!

  50. Appoint him as a spot boy and keep him enagaged- that’s one of the best ways to tame him while u shoot- trust me on this one.Secondly send him to electronics store while you go grocery or prop shopping..I tell you that WORKS!!
I dont know which ingredient I should pick that I do not love in this recipe- potatoes, coconut milk, basil & cashews …I m in culinary heaven!! Very Very creative recipe!

  51. Ah, this recipe looks and sounds gorgeous. The flavors are so enticing and lucky for me I have everything I need here to give it a go. Your posts are always so fun.

  52. Dana says:

If you make me that for dinner, hell I’ll marry you. And I won’t care what time we eat. I have three hours until dinner and now I’m cranky.

  53. Too funny about your designated photo spot…yes we are an odd breed 😉 Lovely dish here, looks like my kind of meal 🙂

  54. daphne says:

look at that curry gravy! I made a curry once with pistachios! Will share that soon. Meanwhile, keep practising those conversations- i have them with hubby on a weekly basis! LOL

  55. Tasha says:

Your future husband will be willing to forgive all of the quirks of blogging as long as you are feeding him delicious, wonderful meals such as this curry!

  56. Veronica says:

I almost always have a good laugh while reading your blog and finally had to share you with my husband today, who totally empathized with your future husband. He wants you to know, though, that if you find the right man, he will put up with your food blogging antics. Endlessly. (Mine does, bless him!) And by right man, he means one that likes to eat. So you’re probably safe. The food is worth the irritation!

  57. Reeni says:

I didn’t bat an eye because I knew you were probable starting early to catch the good light for pictures! Been there. I think your husband will love everything you do – he’ll enjoy the fruits of your labor – even a little cold! I love your curry with the whole potatoes! So cute!

  58. crustabakes says:

the curry definitely looks thick and delicious. and i would totally drink it with a straw please.

  59. these look super yummm….

  60. Cara says:

I hope you can find a man like mine who will just go with the flow… and eventually succumb to the “brainwashing” that vegetarian, lukewarm meals are desirable for real men 😉

  61. Pam says:

No marriage counselor needed… just marry a man like mine. He loves being a food blogger’s husband (cold food and all). The second picture literally has me running to my cupboards to see if I have all of the ingredients – it looks THAT good.

  62. Catherine says:

Dear Joanne, You have to like yourself for who you are, what you are and not how you think someone thinks you should be. It is a long journey home to find that serene place and not really sure when we reach that place.
Anyway yes, I have changed since January and still changing everyday.
The potatoes look very beautiful and I am sure tasted divine. Blessings, Catherine

  63. Oh, I love a good curry and this one has me wishing it was dinner time. :)We’re doing a lot of meatless meals here and this one would be well received. In these last five months I haven’t lost as much weight as I would have liked to, but I have gotten my blood pressure down so that my dr. no longer wants me to take meds for it- I’m pretty pleased!

  64. And to think…marriage counseling stemmed from photos of potatoes! You just never know these days. 🙂 Good luck with your goals. Each and every one! Bet you didn’t need luck to polish off those taters. They look great!

  65. What a great curry! Perfect at any time of day 😉
I’m on my way to getting where I want to be – just wish it would happen sooner. Actually, if I applied myself a bit better then it prob would but I dont want to deprive myself cos then I’ll binge later

  66. Very flavorful and yummy! Your clicks make me want to dig in right away..

  67. Johanna GGG says:

hmm not sure that my comment was taken by blogger but I love the recipe and I wouldn’t care when it is made – and microwaves make leftovers a really quick meal

  68. Lenna says:

I never thought about making potato curry, but this seems sooo tasty that I have just changed my mind :)Thanks for the recipe!!

Lenna from the former czechvegan.wordpress.com now blogging at veganlenna.wordpress.com

  69. This recipe and the photo’s are perfection!

  70. Faith says:

Now that is a stunning curry! Full of veggies in a creamy, spicy sauce…life doesn’t get any better!

  71. Candace says:

omygosh, Joanne! You keep raising the bar here with more incredibly delicious meals with every post. This one looks absolutely amazing! My husband will think he’s gone to heaven if I serve him his beloved potatoes in a curry gravy. oh.my.gosh. I will be a hero for sure. Thanks for sharing your wonderful recipe!

  72. You seriously might have to hide ALL OF THIS from your future husband until you’re into the marriage a few months. THEN spring it on him! My husband gets a little frustrated w/the pictures but has gotten used to it… 🙂 This dish is AMAZING! BTW

  73. marla says:

I am always sold in anything with curry & nuts. Joanne, this dish looks wonderful!

  74. That’s a heck of a lot of taters! If your future husband is anything like me (a carb addict), he’ll love this. Boy is not anything like me unfortunately. We have much training to do!

  75. Marlis says:

Maybe more Thai than Indian. Basil, known as Tulsi Patta in India is considered a sacred plant and would not be used in cooking. I like your inclusion of cashews, sounds really good.

  76. I love that little anecdote with your future husband! I admit I’m not the biggest fan of curry but I do love anything coconut (and uh, anything potato) so I’ll give this a shot 😉

  77. megcjones says:

this looks delicious. and the guy you end up with will love it – my husband just looks on the bright side, that we always have fun food around and he gets to eat cool stuff that none of my other friends would ever bother preparing. all the money on cameras and computer programs and ridiculous ingredients? that’s just the price we pay for fabulous food 🙂

  78. this looks amazing!! i have been wanting to make a curry dish for such a long time, i will have to give this one a shot. i would love to follow your blog, but can’t find a ‘follower’ button??

  79. Pam says:

Joanne, I don’t think your future husband will complain about anything connected with your meals after seeing all of the good food on your blog! He will be one lucky man! This dish looks awesome; it has to be delicious!

  80. Kely says:

Joanne, this is gorgeous and I can smell the flavours coming off the page… coconut, curry, basil – heaven!!

  81. Nicole, RD says:

NO SHAME! I was grilling at 4pm yesterday! Hey, when you work full-time and teach and night and you will want a great meal, you make it happyen. And you know I love all your recipes, but this…PUFFY HEART. I can’t WAIT to make this!

  82. sra says:

I understand perfectly about being mad with your husband even if you’ve never met him so far.

Those potatoes look almost like whole eggs in a curry, close up! Looks beautiful.

  83. Jeanette says:

What a gorgeous curry dish! I think eating is all about making choices and balancing those choices. I try to eat as healthy as I can whether I eat at home or at a restaurant, but that doesn’t mean I’m going to deprive myself of a special treat once in a while. I’m just much more picky about what that treat will be.

  84. girlichef says:

Slide that pan on over…so I can serve it to the hubby already used to tepid (yet totally delicious) meals 😉 No worries, he…whoever he is…will eventually not even notice it anymore. ha ha ha ha…

  85. Claudia says:

Oh, I do love curries, and especially ones that don’t require a million steps. And, your photos are so awesome, I’m blaming that on why I have to, need to, get myself a better camera, finally. Even if the one I have just won’t quit.

  86. What a beautiful dish! Love the colors! I think you should marry another food blogger. Or a food photographer. Or a chef. for your own safe.

My husband is totally trained as are my boys, my family, my husband’s family and our friends. It’s pretty hilarious when you think of it. And what’s not to like about a bad of taters, right. I mean they’re pretty sexy in the right light. Okay. Loving this curry dish. Really. Been craving curry like crazy and thinking of doing a week of curries just so I can figure them out better than I have. 🙂

  90. Carolyn Jung says:

I see no problem with eating dinner at 3 p.m. After all, that leaves plenty of time for midnight snacks, right? Who wouldn’t want that? 😉

  91. kankana says:

LOL LOL funny post out there 🙂 🙂 last weekend .. hubby got tired of my photoshoot as he was hungry and i was not giving up the dish 😛 That’s life 😀 😀
I love potatoes and specially these baby ones which looks so cute and cooks perfectly 🙂

  92. sweetlife says:

  93. Vivienne says:

i reckon this dish will make it on my dinner table sometimes this week…hmm if i can start at 3pm!

im sure you will find a guy who will still find u cute and endearing even at 86! lol.

im also learning to feel good about myself regardless of how i look..my weight goes up and down pretty constantly tho…just a mental thing to overcome!

  94. Amy says:

Jo, I can totally relate to your Eat.Live.Be. contemplation for the week. Too many times, I beat up myself when I look in the mirror or make a particular food choice that I just stay in a constant fighting funk with myself, and it’s really hard to crawl out of that hole. But over this past year, I’ve started to claim myself–and, consequently, my choices. Cooking for myself is so satisfying; when I choose what I do with my body, I feel empowered. And I’m starting to feel that on a consistent basis–exciting!

Oh, and your curry? I would totes marry you if I was a boy. Lucky fiance. . .

  95. Victoria says:

Wow. Za. As a lover of all things Indian, this dish sounds like it could complete me. Potatoes, and cashews, and coconut milk? Heaven! Great job!

  96. Hmmm…I am not where I wanna be and I haven’t started doing anything about it 🙁
I blame all the deliciousness I’ve encountered in KL 😀
Your dishes have the BEST colors!

  97. Oh these look so delicious!! Really excited to try this recipe. Thanks!!

  98. Beautiful blog. Everything on a stick is fun to eat! Those potatoes look delicious too. I bet they could be skewered as well for a great party appetizer.

  99. I think you’ll be cute and endearing to him for a long, long time. Especially if you feed him meals like this. Yum! 😉

  100. Chris says:

I book marked this one to try since I have been craving curry of late. I need to get some new potatoes but have plenty of fresh basil in our yard.

  101. What a delicious curry! I love it.
So far Charles has not complained a bit about the food blogging, in fact I think he is more into it than I am! I worry that if I retire.. what will he brag about? 😉

  102. Chaya says:

Your future hubby is going to be one lucky man. No one is worried about his being fed.

He will run with you, blog with you and go to med school classes with you or if you are a doctor, he will play patient.

This is one fabulous recipe. Thanks for linking it to My Meatless Mondays.

  103. Nicole says:

Well if you made this for me every day, i’d marry you… alas i’m already married right now, but i might consider switching team and ditching the man!

  104. I could have these lovely tasty potatoes for my breakfast, at tea time or any other time! This is such a gorgeous curry!

  105. LOL! Love the dialogue with the future husband that you have yet to meet. My poor husband gets the same treatment, weird ass meals that I take 1000 pictures of. However, you food looks gourmet and amazing and the pictures come out beautifully!

  106. This is one of the most delicious looking curries I’ve ever seen! I love your attitude towards health. I’m always struggling with feeling good versus looking good, and I know the feeling good is more important but it’s a struggle. Good for you for breaking the vicious cycle!

  107. Anonymous says:

wheres the curry in this dish?? It isn’t in the ingrediants?

  108. Joanne says:

Anonymous – Thanks so much for your comment! there is actually no curry POWDER in this dish. When it comes to Indian cuisine, curry typically refers to a hot, spicy gravy-based dish…which this is. Many of the spices in this dish are found in curry powder, however, so adding them separately replaces the powder.

  109. landly says:

Being very very old, I give unsolicited advice to people.
Honey, here’s what I want you to do.
I want you to dump the medical degree, dump the potatos in plastic sacks, rent a tiny small-holding just out of town from a farmer (who will charge almost nothing, he’ll probably be charmed if you offer some organic veg in fact) and plant some vegetables. Then, I want you to commute out there once a week to labour in it. While the veg are growing, I want you to open a little modest bistro in a nice neighborhood within commuting distance of the small-holding, and have it open from 4pm to late.

this is my second time making it – i omit the cayenne and use a mild curry powder instead for a very modest heat. we have a serious chicken little in my house, and to accommodate the masses at a potluck, mild seemed the better option. one day i will make it with the cayenne for DH and me. we absolutely love this recipe! i serve it with rice that i make with bay leaves, whole all spice, and whole cardamom pods (just make sure you don’t eat any of the spices!). thank you so much for sharing such a fabulous recipe that the omnivore in my house likes just as much as i do, you rock!

I made this last night and it was heaven. Your directions were gold! I did have to steam my potatoes a little while longer; I used assorted fingerling potatoes in my curry. I am so happy I found this site. Some wonderful yummies I am dying to try! 🙂

I really liked this. I didn’t really like the crunch of the cashews. I should have shopped them more finely. Otherwise, very tasty!
