If you have cold air seeping through your windows and a housing office that refuses to turn on your heat like I do, then this roasted winter squash, apple and spelt berry soup is exactly what you need to stay warm. Check out the recipe over at Marcus Samuelsson’s blog!

It has definitely turned into soup season! And this is a beautiful one!
This soup was made for me, how did you know? 🙂
What a beautiful looking soup! I miss long yellow American squashes. Is that weird?
Beautiful photo! I love squash and apple together.
Just have to tell you that is a seriously gorgeous photo of a bowl of soup! One of my biggest challenges is taking photos of soup.
That looks gorgeous! Heading over now!!
Looks so pretty!
It’s cold and rainy here today and I have a husband that refuses to turn on the heat. This soup is beautifully perfect to warm me up. Yum!
It’s cloudy over here and I am in the mood for a good soup! Love the whole spelt in the soup.
Sounds fantastic and what a gorgeous photo! It’s cloudy and rainy here, wish I had some of that. Heh, I’ll have to make do with mac and cheese.
GORGEOUS!!!
I have been craving soup since last week…great picture btw =)
I am a hige fan of Marcus! His recipes are always so comforting and homely. This looks lovely 🙂
What a beautiful bowl of soup!
I don’t know that I’m ready for squash yet!
Your soup in beautiful! (I replied to your comment on my Aloo Bhaji, but I wanted to comment here too, so you would know I saw it.)
I’m going to research a spice store here in my area. I’m in a huge city, so there has to be a store like that here. Besides, just think of all the trouble I could find at a cool store like that?! I hadn’t even thought of looking for a store with just spices.
SO beautiful, Joanne! This post is getting me all excited for the cooler autumn days! 🙂
I’m off to check it out~
Hope you are having a great weekend,
Tammy
I’d say I do but the weather wouldnt agree 😉
This soup is very good for cold winter nights.
Interesting… my instinct is that I wouldn’t like this but I usually like Marcus Samuelsson’s recipes so now I’m intrigued.
Ah, soup season has officially arrived. I love the autumn warming spices paired with the fresh zing of mint.
This looks delicious! Its pretty hot in Sydney at the moment but i’d sit in a cold room and eat this baby!
gloriously golden!
What a perfect fall soup!
WINTER squash already?? Girrrl, you’re rushing the year, when I already have a hard enough time thinking fall is nearly here. Hah. What happened to summer? Heck, what happened to spring? 😉
I’ve only ever baked with spelt flour, but now I am so intrigued! I want to try this! Sounds yummy!
Your soup looks so beautiful…
Soup season is here and this looks just perfect.
Also I want to thank you so much for your support and kind words, my blog is up.I was able to restore some post, rest will do again. But atleast it is back up.. right.
Ooh hey! That’s one of my favorite soups!!! I love winter squash soup…I usually use kabocha, of course. I don’t have spelt, but wheatberries will substitute perfectly. xD
One of the best things about fall is the squash you see at farmer’s markets. I even remember it from childhood! My mother made the BEST baked squash dish.
I’ve never tried a squash soup, Joanne, but this looks delicious and we would love a little fall in Florida!
Nice hearty soup for fall. Love kabocha and butternut squash!
I looove spelt. I made a bunch of squash and apple soups last winter. Definitely adding spelt next time.
I like that we both eat kabocha with skin. I wonder if anyone looks at us funny?
Perfect fall fare!
Is it time for “winter squash every day until Christmas” yet? Summer just ended.
