I’m starting to be convinced that my roommate…my dearest darlingest roommate whom I could not get through life without…might be a serial killer.

Proof?

I have none.

Except…that I left one of these whoopie pies in the fridge for her.  Emailed her twice to let her know that it was there.

(I nag on occasion.  But mostly when it comes to forcing desserts on others.)

IMG_0440

That was Wednesday night.

Fast forward to today.

Friday morning. 6:58 AM.

I have checked the fridge no less than 26 times in the past 36 hours.

And it is still.  There.

IMG_0459

And what life has taught me is that the only people who can ignore the call of chocolate and peanut butter are either (a) my brother (the boy keeps Reese’s on his coffee table.  And doesn’t eat them all in the first five minutes of setting them out. WHO.IS.HE?!?!?!?) or (b) public offenders who are otherwise mentally preoccupied with plotting their next attack.

I would be fearful for my life.

But I’m much too busy thinking about how long I have to wait until she officially forfeits her right to that whoopie pie and I can reclaim it for myself.  48 hours? That seems fair, right?

Moral of the story – these are chocolate pillows with a sweet/salty peanut butter fluff filling. (SO.GOOD.)  Make them.  Eat them.  And don’t be a serial killer.

Chocolate Peanut Butter Whoopie Pies
Makes about 18 pies, adapted from the Joy the Baker Cookbook

Ingredients

      For the cookies:

    • 2 cups AP flour
    • 1/2 cup unsweetened cocoa powder
    • 1 1/4 tsp baking soda
    • 1 tsp salt
    • 1 tsp instant espresso powder
    • 1/2 cup unsalted butter, softened
    • 1/2 cup sugar
    • 1/2 cup packed brown sugar
    • 1 large egg
    • 2 tsp pure vanilla extract
    • 1 cup buttermilk

     For the filling:

  • 1/2 cup unsalted butter, softened
  • 7 oz marshmallow fluff
  • 1/2 cup smooth all-natural peanut butter
  • pinch of salt (I added 2 pinches)
  • 1 cup powdered sugar
  • 1 tsp pure vanilla extract
  • 1/4 cup coarsely chopped roasted and salted peanuts

Instructions

  1. Place a rack in the upper third of the oven and preheat to 350.  Line a baking sheet with parchment paper. Set aside.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, salt, and espresso powder.  Set aside.
  3. In the bowl of a stand mixer fitted with a paddle attachment, beat together butter and sugars until light and fluffy, 3 to 5 minutes.  Stop mixer and scrape down the sides of the bowl.  Add the egg and beat on low speed for 1 minute.  Beat in vanilla.
  4. Scrape down the sides of the bowl.  Add half of the flour mixture and mix on low speed.  With mixer running, slowly add the buttermilk.  When just incorporated, add the remaining flour mixture. Mix until just blended.  Finish incorporating the ingredients with a spatula.
  5. Spoon the batter by the heaping tbsp (I used a medium cookie scoop) onto the prepared baking sheet, leaving at least an inch of space between cookies.  Bake for 12 to 14 minutes, until centers are cooked through but cookies are soft and tender.  Repeat with remaining batter.
  6. Remove from the oven and let cool on the pan for 10 minutes before removing to a wire rack.  Allow to cool completely before frosting.
  7. To make the filling: in the bowl of an electric stand mixer fitted with a paddle attachment, beat together butter, fluff, peanut butter and salt until smooth and no butter lumps remain.  Add the powdered sugar and vanilla.  Beat on medium speed for 3 minutes, until fluffy.  Stop the mixer and remove the bowl. Fold in peanuts with a spatula.
  8. When cookies have cooled, spread a scant 2 tbsp filling onto the bottom of one cookie (I piped it on).  Top with another similar-sized cookie.  Fill all cookies and sandwich.  Cookies are best stored wrapped in plastic wrap in the refrigerator.

132 Responses to Chocolate Peanut Butter Whoopie Pies {Joy the Baker Spotlight}…and a GIVEAWAY!

  1. These are totally heaven in whoopie pie form. The peanut butter filling looks soooo delicious! I love the fact that it has marshmallow fluff in it!

  2. Amy says:

Peanut butter + chocolate = heaven! These look great! I’m not sure if I have a favorite condiment… maybe dijon mustard or hot sauce…

  3. I’ve never had a whoopie pie. Any rooms available in your apartment:)
BTW one can look at the situation completely differently. Such desserts are a sought after commodity, they usually don’t last long. You usually have to hide them, even from yourself. If there is one sitting for a while and someone gets many reminders to eat it, its probably because there is something wrong with it or its been poisoned:)

  4. Johanna GGG says:

oh these look very difficult to resist – but I am wondering if your room mate is after you for your gorgeous plate – I would be plotting if only I was a bit closer to it

  5. Pierce says:

    I’d eat that whoopie pie…in a heartbeat!

  6. Elizabeth says:

I’m pretty in love with mustard, also love a good homemade ketchup. And boy, the number of times I’ve had the whole, so roommate hasn’t eaten her ___ yet, can I eat it now?

  7. 1) Does peanut butter count as a condiment?
    2) What is wrong with your roomate? Seriously!
    3) Really wish I could go to the Veg festival this weekend!

  8. my favorite is frank’s hot sauce. mustard is #2 on the list.

  9. Pam says:

I would LOVE to be your roommate!!! AND I would love to win some mustard!! My favorite condiment is…wait for it…mustard!

  10. sofia says:

ooooh, these look great. and i think those people like your roommate and brother must have other vices. seriously now. how can one resist?!

i am all about salsa abuse. on mexican food, of course. ketchup on everything else. yep. i’m a child.

  11. Lora says:

These are gorgeous. I especially love the photos.

  12. Ha! You be careful in that apartment…something sounds fishy ;P I know I wouldn’t be able to resist that whoopie pie. YUM!

  13. I’m trying to loose a couple of pounds from my travels and now I’m drooling over this recipe.

  14. I’d have claimed that whoopie by Thursday morning!
    Chipotle mustard sounds fantastic!

  15. london bakes says:

I’ve never really been a whoopie pie fan but I bet that Joy could make me like them! They look absolutely delicious.

  16. Mary says:

These look ridiculously good! I’ve never been tempted to make a single whoopie pie before, but these have my mouth watering. Your roommate? Yeah, she’s a weirdo. 😉

My favorite condiment is easily ranch dip. Classy, right? I’m judging that solely by the amount of the condiment that is made in my house on a regular basis. Next runner up is definitely homemade ketchup. YUM

  17. I am so sad I will miss NYC’s veg fest… although Toronto has their bike show this weekend. 😛 As for mustard, I must admit that is my condiment of choice. A nice Dijon. 🙂

  18. Anonymous says:

I can not live without ketchup – and only Heinz ketchup! : )

    [email protected]

  19. Amy says:

I have to ignore the call of the choc/peanut butter combo because of Haley’s allergy and all. I promise I’m not a serial killer. Just sad. I miss peanut butter. Siiiiigh. Also? I want to lick my computer monitor.

  20. Nicole, RD says:

    2 confessions.
    1. I love Joy after meeting her at Foodbuzz. What…a…sweetie.
    2. I’ve never HAD a whoopie pie. My heart breaks a little knowing that I’m missing out. So, I think I’ll make these this weekend. After I made grapefruit cardamom pancakes!

  21. MarthaT says:

These look wonderful and are the first whoopie pies that I have been tempted to actually make! If I have a favorite condiment, it is probably Tabasco Sauce, the original!!

  22. Christina says:

If I were a condiment, what would I be? All I can think of is spicy mustard, but a fresh cilantro mayo is also quite delicious. My hubby is the condiment king. His friends sent a goblet of ketchup over to our table at our wedding – to make a toast. Hardy, har, har. 🙂

  23. Heather says:

I’m a big mustard lover and would love to give Saucy Mama a try as I love all kinds of mustards… on sandwiches, to dip things in… you name it. I haven’t tried your recipe yet, but as soon as I saw mustard, I was sold… now if I can only talk the husband into eating brussel sprouts.

  24. These Whoopie Pies look utterly amazing! I have all the ingredients at home, he he! I know what I’m making tonight!! I can’t believe your roomamte left it in the fridge. I would of gave her less then 12 hours then I would of ate it. You snooze, you lose!!

Favorite condiment: Spicy Ketchup! Yum!! Or Spicy Mustard! Whatever has peppers in it!! I’m going to vote for ya again! Hope you win!

  25. Rachel says:

I love a good, smoky barbecue sauce on everything from pizza to fries to black bean burgers.Yum. Those mustards sound great too!

  26. Kari says:

My favorite condiment has got to be ketchup.

  27. Lynn says:

What’s wrong with her? If you had told me that whoopie pie was waiting for me in the fridge, I would have run to it, flung open the door and eaten that thing right away!

Favorite condiment – mustard! Dijon mustand, more specifically.

  28. This is such an awesome idea! Lovely!

  29. Beth says:

Your whoopie pies look delicious. I’m struggling to imagine why your roommate hasn’t eaten them. Is she trying to lose weight for a big date this weekend? Has she given up chocolate (or peanut butter) for Lent? Or is she just so accustomed to your wonderful baking that a whoopie pie isn’t that big a deal any more?

  30. Kay says:

My favorite condiment is A1…on a sirloin steak…well done. Then I would be ready for a Chocolate Peanut Butter Whoopie Pie!!

  31. Kim says:

Omg…where to start. First of all, my Dad always says chocolate and peanut butter is the classic All-American combination and to not like them is akin to being a traitor. I think you are right to worry about your roommate 😉

And, I’m sure you know that my favorite condiment is mustard 🙂 And, I don’t see anyone else more fitting to win this giveaway! LOL!

Those whoopie pies look addictive. As in I have to make them. Except that peanut butter birthday cake is nagging me too. I need a reason to make them both!

  32. JoAnn says:

FRANKS RED HOT!! I put that (stuff) on everything! 🙂

  33. Epicurea says:

all this is just a plot to make me weak on my lent resolution… it looks soooo good and i love your plates!

  34. Dining Alone says:

I am simple, mayo! I had some peanut butter whoopie pies (known as gobs in western PA) this past fall when I was visiting my sister. Your roommate is NUTS for not eating one yet!

  35. Lexi says:

My favorite condiment is Sriracha, love that stuff.

  36. Tara Bradway says:

Ranch dressing makes everything better. Well, ok, not *everything* but many things.

  37. Danielle says:

    voted again – good luck!

  38. Hi Joanne!

I wouldnt wait longer then 12 houres if I was u. food is not forever good, her bad luck if she missed it. next time for her. =) I wish it would have been waiting there for me.

  39. Ranjani says:

I’ve made several kinds of whoopie pies but you made me realize I’ve never done the chocolate + PB combo! Must make more whoopie pies asap

  40. Hot sauce or mustard are my fav condiments. I guess that means I should win:)
    http://www.nellyspantry.blogspot.com

  41. Rachana says:

Those whoopie pies look so addictive. I am drooling over this recipe 🙂

  42. romanholiday says:

I am a mustard FIEND, so winning this contest would be condiment heaven. I also can’t love without Tobasco, but is that truly a condiment? I prefer to classify t as a seasoning, like salt and pepper. 🙂 thank you for this giveaway!

  43. Gloria says:

of course look amazing!! love the pictures!!

  44. Lyndsey says:

These whoopie pies do look tempting! Now my daughter could leave dessert for a long time….but peanut butter cups were always the first to go in he Halloween bag! We shouild make these for sure! Yum!

  45. OMG!!! WOW!! I want one right now

  46. Marcia says:

Man, those look so so good. But I gotta stay away. Because I gained 10 lbs between my last 2 prenatal appointments. In 4 weeks.

My favorite condiment…that’s a tough one. Does avocado count? Because I kinda use it like a condiment.

    But probably it’s Sriracha.

  47. Jenna says:

Yup. Your rommie is officially an insane person. I wouldn’t have waited more than 1 second after you offered to rush to the fridge and consume that little chocolatey treasure.
And my favorite condiment is: ketchup + horsey sauce to dip fries in. Ketchup with mayo and Tabasco works too–I can’t get enough of it piled on my fries. It’s a good thing I don’t eat fries too often!

  48. Claudie says:

I think that 1) that’s way more proof than needed, 2) actually 24 hours is already more than enough to reclaim something like this. As for your brother, I agree. There’s no way I resist chocolate on my desk. I mean, seriously? :)) Not eating such things means not having them in the apartment, right? heh.
Anyway, those whoopie pies look fabulous. You can be sure I’d never have to be forced to get me to eat one of those 🙂

  49. Kristin says:

Oh gosh, these whoopie pies look so good…I wish I was your roommate!
My favorite condiment is probably mustard…unless you count pickles which would drastically take the lead.

  50. Pam says:

How in the world has she not eaten it yet? I would have been waiting by your side while you made them for mine. They look amazing and I know my children would think I am the worlds best mom if I made these for them.

  51. Oh my goodness…why do you do this to me?! Hey, if you get tired of making these yummy desserts (funny, right?) and having to take a bite out of them to get nice shots for your posts, I would be more than happy to lend you my services for a small fee and a whoopie pie on occasion. I have nice teeth 🙂

  52. My favourite condiment is garlic mayonnaise! With fries dipped in… heaven!

  53. Hummus! Is that a condiment?

Those whoopie pies look amazing, I am drooling over here!

  54. Lorissa says:

My favorite condiments (i can’t choose one!) include:
    Honey mustard (sweet n spicy)
    Guacamole
    Peanut butter

    So good!

  55. Claire says:

Mustard is my favorite condiment, no contest. One of my favorite snacks is celery sticks filled with mustard. People think I’m crazy but its delicious.

  56. Zac says:

my favorite condiment is a tie between sriracha and this sweet traders joes mustard.

  57. Shannon says:

seriously, don’t know how you can resist these!! i would’ve run to the fridge!! i tried to make mustard a month ago… turned out horrible. i like a good and spicy one 🙂

  58. My favorite condiment is honey mustard. I use it on my fries instead of ketchup 🙂

  59. kankana says:

That looks delicious! Heading over to read the interview.

  60. MMM. Wow. Is there a way of making marshmallow fluff at home (ie, DIY marshmallows)? Just curious.

Favourite condiment by far is Tabasco sauce. Cannot live without the stuff.

  61. Your room mate scares me whether she is as serial killer or not. Resisting that whoopie pie is all kinds of wrong. 😉 They look irresistible! My favorite condiment is hummus!

  62. Geni says:

Wow! These looks rich, creamy and chocolaty. We have a 24 hr. rule over here. If something delicious is here after 24 hrs, then it’s up for grabs.

  63. Yummy! I think the chipotle mustard sounds like it would love to live with me forever. I am in general very curious about condiments and spices- ask my hubby. He thinks I am crazy 🙂

  64. Michele says:

It just so happens that my favorite condiment is mustard!!

  65. My favorite condiment is spicy mustard!!!

  66. Megan says:

Those look so good, and I don’t even get excited about whoopie pies! Something about the cake part looks more brownie-like to me, so they look even more appealing.

  67. tigerfish says:

I have peanut butter almost every day! so of course I like your chocolate PB creation! Yippee whoopie!

  68. Candace says:

No way would that lovely little pie have lasted that long around me. That looks amazing, Joanne! I’m thinking you can snag it by now. I don’t know if I have a favorite condiment. It depends on what I’m having. I’m a condiment fiend though as my fridge bears evidence of this addiction. BBQ sauce, Mustard (4 different kinds), Ketchup, Padang, Sriracha, Cholula….you name it. It’s in there.

  69. Kristen says:

I am not entering the giveaway because I have all six bottles in my fridge, so DON’T pick me. However, those whoopie pies cannot pass without a comment. Truly, I am surprised you waited even 24 hours before telling the serial killer that she had lost out on the treat. Seriously.

  70. My favorite condiment is what I affectionately call “Green Goya”. It’s proper name is the jalapeno salsita. After moving from the Northeast to the Midwest, we went into panic mode when there was less then 1/2″ at the bottom of the bottle. Joyfully, we found a European market that stocks it.

  71. I am not entering the give away… got too many bottles darl! I can die for those cookies….Darn the diet!

  72. MM says:

    48 hours? You are generous.
That filling was so good–I really do want to turn it into frosting for a cake. any cake. All cakes!

My favorite condiment is Creole mustard.

  73. grace says:

hard to believe anyone could pass up something like this!
as for my favorite condiment, it has to be something involving sugar, so i’ll say apple butter or some sort of chutney.

  74. Katie says:

I wouldn’t pass on that chocolate peanut butter whoopie pie. It’s pretty much my all-time favorite combination. These whoopie pies look delicious. I think my all-time favorite condiment is mayonnaise spiced with chili powder.

  75. Marshmallow-peanut butter frosting? I’m seriously going to cry if my husband doesn’t make that tomorrow. Just the frosting. The third molars came out today, so no solid food just yet.

And favorite condiment? Actually it’s mustard–usually in powder form! I keep two different jars of mustard in the house at all times, one of McCormick’s and one of Chinese hot mustard. More than half of my savory recipes include it, and we have three bottles of mustard in the fridge as well, for dipping!

  76. I tried whoopie pies recently and that left me wanting to try other versions like this one; I agree your room-mate must be plotting something sinister.

  77. That Girl says:

Maybe your roommate isn’t a serial killer, maybe she’s been killed by a serial killer. Which would also prevent her from eating the whoopee pie.

  78. That Girl says:

Maybe your roommate isn’t a serial killer, maybe she’s been killed by a serial killer. Which would also prevent her from eating the whoopee pie.

  79. Joanne, those whoopie pies are impressive. Even thought I’m not a dessert or sweets fan, I might kill for these. Which I guess proves your point 🙂

  80. daphne says:

that filling looks sooo creamy and rich! I could do with one of these on my cheat days!
    Fav condiment- Sambal chili sauce!

  81. Ben says:

Yes, be very careful. Those people are dangerous! OK voted twice already and I’m putting a reminder on my calendar to do it every day until it closes 🙂

  82. Maureen says:

I’ve always been a whoopie pie purist — until today. OMG I want one of these right now. Your brother and your roommate are up to something together. I’m sure of it. Reese’s on the table? Just lying there? (rolling my eyes) Not at my house.

  83. Katerina says:

OMG, how can anyone resist on these whoopies? I certainly wouldn’t Joanne! They look totally irresistible and if they were in my touch perimeter, they would last for long. Good luck with your date dear!

  84. Gorgeous whoopie pies! Love the creamy filling a lot!

  85. What a perfect marriage of flavors in these whoopie pies! They look beautiful and so delicious.

What a great giveaway too because mustard is seriously my favorite condiment. It has so many uses too – in salad dressings, as a marinade, and it’s delicious on a Wisconsin (forgive me) bratwurst.

  86. Valerie says:

My favorite condiment is mustard (really!).

  87. Lori says:

For whoopie pies like these? Oh man, I’d say no longer than 8 hours. Maybe even 4. One should act quickly for desserts. These sound so good!

  88. dang! I’d love to win some mustards. My favorite condiment is my husband’s homemade spicy mayonnaise. I put it on sandwiches, crackers, cheese, and sometimes even lick the jar!

  89. Jan Walker says:

I am a Valentina sauce girl, BUT I would love to try any and all of these Saucy Mamas condiments! And I hope you win…heading over to vote for you now! Thanks for all the mouth-watering recipes! (And, uh, hope your roomy is okay.) :0)

  90. Hannah says:

Aw, I really hope you have a good time at the Festival this weekend… Meanwhile, I’ll just have to drool over these stunning whoopie pies, wishing I was there. Hope you’ll blog all the details!

  91. Anonymous says:

i don’t think i have a favorite as i don’t tend to use condiments. though that doesn’t seem “right” – perhaps i use something that i’m not thinking of as a condiment….

    jacquieastemborski AT comcast DOT net

  92. i’m actually a HUGE mustard fan. made with whole mustard seeds. incredible.
    a close second…homemade ketchup
i REALLY like condiments so it’s kind of pathetic that my two favorites are actually the two most common. but maybe that’s why they’re so common(?)

  93. Lol Serial Killer! these look yummy, I would have eaten at least one by the end of Wednesday night!

  94. Kristen says:

Wow those look delicious!! Chocolate and pb is my weakness….I could never leave that whoopie pie in the fridge like that! Did she finally eat it?? Unfortunately, I won’t be able to try this recipe any time soon because of my no processed sugar challenge so instead I’ll just drool over the pictures 🙂

  95. Monet says:

I like dijon mustard…a lot. I eat almost daily! As for this recipe? HEAVEN. I think I might have to do something with peanut butter and chocolate now. This looks too good to pass up.

  96. Jennifer says:

OMG STOP. I need/want/have to have this now. Peanut butter and chocolate? Heaven.

  97. love! i just got the joy the baker cookbook from the library, and it’s fabulous!

  98. Karen says:

I love different kinds of mustard, so it’s right there at the top, but horseradish might just be my fave. I swear I can taste those whoopee pies!

  99. I don’t even pretend to understand this, but Kurt, my beloved, does not enjoy peanut butter with chocolate. I have never understood this and never will. I would have nabbed these whoopie pies from the refrigerator in the first few minutes!

  100. Norma Chang says:

Peanut butter and chocolate, two of my favorite foods.

  101. Miriam says:

Has there ever been a better combination than peanut butter and chocolate?…Ever? They look awesome!!! Miriam@Meatless Meals For Meat Eaters

  102. JasmyneTea says:

I’m ashamed to admit I’ve never had a whoopie pie, ill have to give this recipe a go! They look scrumptious 🙂

  103. Donna says:

ONLY you, Joanne, could make me reconsider my dislike of peanut butter. Fluffy, light, creamy with a little peanut butter flavor. Well, that might just work. Thanks for frequently shaking up my culinary world.

  104. kyleen says:

I feel the exact same way about chocolate and peanut butter. How could your roommate NOT jump at a whoopie pie like this? These look so delicious.

  105. Raina says:

These look amaaazing! I really want one now. Your roommate must be crazy…lol

    I voted for you…good luck!

My favorite condiment, I am embarassed to say is mayo; I slather that stuff on everything…lol

  106. teresa says:

haha! i loved this post so much i read it out loud to my husband, you crack me up!

these look fantastic, i would not be able to leave this alone either.

my favorite condiment has to be Tapatio hot sauce. it just makes everything better.

been having a rough couple of days and missed out on baking for a while.
sorry i missed so many of your posts and THESE whoopie pies. my stars!

  108. Reeni says:

I’m going through the same thing with my chocolate cloud cookies! I gave them away but their still within reach and not disappearing fast enough. The temptation. . . is killer. I don’t know how long I could resist these! I might be prone to sleep walking and eating… you could blame it on that.

  109. Kerstin says:

    I’ll take some! YUM!

  110. You can mail me it if your roommate doesn’t eat it. These look wonderful–great pick!
    😉

  111. Carmen says:

Hmm…my favorite condiment is Sriracha mayo. I don’t know if that’s an ACTUAL condiment, but I love it.

These look amazing, by the way!

  112. ohhhh I’d be totally powerless in the face of these whoopie pies!!

  113. Tricia says:

  124. I love Joy the Baker, I love chocolate, I love peanut butter–I would flip for these! I don’t know if the giveaway is still open, but if it is, I would love to win that champagne honey mustard (and dip my apples in it haha).

  125. Claudia says:

Those are seriously good looking Whoopie Pies. If your roommate is crazy enough not to take you up on one, might you possibly mail one to Hawaii?? Well, might have to make some myself as one would not be enough. I’d also go for some Champagne Honey Mustard, thanks.

Voted 🙂 And my favorite condiment? Ummm…. is peanut butter whoopie pie filling considered a condiment on a spoon, or better yet, my finger?

Would hummus be a condiment? I love to mix plain hummus and BBQ sauce, and I eat that on everything. Best on things like potatoes, or on a black bean salad.
