My parents’ fridge is always “stocked”.  By which I mean, there’s a sixty-gallon tub of mayo, at least four bottles of ketchup, and multiple mustard containers with varying degrees of crusting going on in their lids sitting in there at all times.

Is it any wonder, then, that I grew up totally condiment averse?  That the little packets that come with just about any take-out meal give me nightmares?  (Ummm unless we’re talking soy sauce. Which I could, and sometimes do, drink straight.)  That I gag a little bit at the sight of those signature squirt bottles?

Right now I bet you’re seriously amazed that I had any friends growing up. Yeah, me too.

After years of dry sandwiches, boring burgers, and less-than-stellar tacos, I’ve worked myself up to the point where I can allow sauces on my foods.

Pesto, guacamole, hummus, tabasco…all totally acceptable.

And now, romesco sauce can be added to that list.  Infused with bell peppers, tomatoes, and almonds, it’s no wonder that this puree was pretty much love at first spoonful(s).  (I had to “taste test” it at least five times to be sure I liked it. Obviously.)

I have grand plans to smear it on everything I eat, love and cherish (friends and family – be wary if I come at you with a spoon), but first up was these tostadas.

Inspired by the recipe for Roasted Potatoes with Chicken and Romesco Sauce from the Food Matters Cookbook, which was Mireya’s Food Matters Project choice for this week, I decided to roast just about every veggie I had in my fridge, toss them with this romesco sauce and then place them atop a crispy delicious Tortilla Land tortilla.  And thus, these tostadas were born,.

Both light and satisfying at the same time, these make for an excellent summer meal.

And while they won’t necessarily cure me of my mayo/mustard/ketchup disdain…they’ve at least given me one more sauce that I can use to lubricate my food.  And/or eat straight from my fridge for a midnight snack.

Obviously they’re not helping with the not-being-a-weirdo-at-the-lunch-table thing.  Oh well. Whatever.  Fitting in is overrated anyway.

Roasted Potatoes, Zucchini and Corn Tostadas with Romesco Sauce
Serves 5, adapted from The Food Matters Cookbook

Ingredients

  • 2 tbsp olive oil
  • 1 1/2 lb new potatoes or other small potatoes, halved
  • salt and black pepper
  • 2 sprigs fresh rosemary
  • 3 zucchini, cut into thin half moons
  • 4 ears corn
  • 1/2 cup almonds
  • 1 large red bell pepper, roughly chopped
  • 1 large or 2 medium ripe tomatoes, cored and roughly chopped
  • 1 garlic clove
  • 1 packed cup fresh parsley
  • 2 tbsp red wine vinegar
  • 5 Tortilla Land tortillas (or other flour tortillas)

Instructions asdf

  1. Heat the oven to 400.  Put the potatoes on the pan.  Drizzle 1 tbsp olive oil over the top of them and toss to coat.  Spread in a single layer and sprinkle with salt and pepper.  Roast, undisturbed, until they’re just beginning to sizzle, about 10 minutes.
  2. Top the potatoes with the rosemary, then the zucchini and corn kernels.  Sprinkle with salt and pepper. Roast for 15-20 minutes or until zucchini is starting to brown.
  3. Meanwhile, combine the almonds, bell pepper, tomato, garlic, parsley and vinegar in a food processor.  With the machine running, add 1 tbsp of olive oil and puree into a thick paste.  Season with salt and pepper.
  4. When the potato mix is done, toss it with the romesco sauce.
  5. Heat a nonstick skillet. Place one tortilla on the skillet and cook 1 minute or until bubbles start to form.  Flip it over and cook for another 30 seconds.  Top the tortilla with some of the potato romesco mix.  Repeat with remaining tortillas.

    I’m really not a condiment person either. I’ve trained myself to like mayo (with fries only) but other than that, they leave me pretty cold. I think I could get behind a romesco sauce though!

  5. You know what else is great with romesco sauce? Chickpeas! Got that recipe from you and it is so delicious.. I should definitely make it again, infusing it with roasted veggies… yum!

    Other kids’ ketchup addictions (in sandwiches, on chips, straight up) always mystified me. I’m a mustard girl. I love a good crispy french fry and some honey mustard. Never tried romesco sauce but it sounds spoon-lickable to me…The veggies look awesome too.

    I’m a mayo gal. I put it on everything. Always have. It makes my Dad shudder. It was only when I reached my 30’s that I came to understand most people think it’s disgusting. Your parents would love me!

    Potatoes, Zucchini and Corn should pretty much be allowed to marry. They simply belong together and I can not get enough of that combination. Romanesco sauce on top? Most definitely!

  19. That’s not stocked it’s overstocked! I was never one for putting anything on my sandwiches growing up except potato chips 🙂 My mom always used Miracle Whip which I couldn’t stand! 😛 She called it mayonnaise…so i grew up thinking I didn’t like mayo, but it was really MW. To this day I don’t use ketchup, I don’t think I have any in the house. My daughter is now liking sauces on things now and this one sounds great! I do have a lot of pesto and hummus around, and the mayo is a wasabi mayo or sriracha mayo!

    I can’t wait to try your famous tostada! Perfect way to use the summer veggies! Tasty too!

    Or maybe not.
    As a kid my parents did not cook. With all the traveling we did, we ate out a lot.
    I think our fridge held water and juice.

    romesco sauce is definitely heads and shoulders above mayo 😉 my favorite condiments these days are definitely hummus and guacamole, but pestos have been frequent as well with my basil plant going crazy.

    Haha, you sound like my boyfriend. He HATES all kinds of sauce. Whenever he eats spaghetti, he eats it plain, no sauce. When he eats salad: plain, no dressing.

  32. I’m kind of with you – loathe mayo, unless it is made properly, with eggs, in my own kitchen. Not that fussed on ketchup and bbq sauce either. On the other hand I adore things like mango chutney, lime pickle, fig and lemon preserves, and my latest fad – chilli jam. I’m pretty sure I’d love this romesco sauce too.

    I used to dislike sauces and condiments because of the sliminess. It just icked me out. The one exception was sweet chilli sauce. Over time, I’ve expanded out, and now I’m keen to add this to my repertoire too – what a wonderful sauce, and dish 🙂

    My parents wouldn’t allow us to many condiments. They said they were paid for us and would prevent us from properly being able to taste our food. So when I’d go to friends’ homes I would drown my food in mayo and tomato sauce! Love the look of this dish Joanne. Great flavours there xx

    Fitting in IS overrated – and so are condiments! E loves lots of condiments while I am just not keen on them on most foods – even the smell of tomato sauce (ie ketchup) is just horrid on some days.

    If I’m at a restaurant and someone I’m with gets a side of mayo, the sight of the mayo jiggling in the cup alone is enough to give me nightmares. I’m not huge into condiments, either. Tostadas, though, I can get behind 100% of the time.
