    sounds lovely – I must remember your trick of squeezing the water out of the zucchini to fry it – we haven’t had much zucchini over winter and I am quite looking forward to it over summer

    This lovely dish will probably be my dinner tonight. Of course since it’ll be 105F+ I’ll attempt to substitute sun-dried tomatoes vs. turning on the oven. That photo’s one where I want to reach through the screen and grab a bite!

    Plain Jane nothing, simplicity rules! I love it when you can actually taste each and every ingredient- It makes it so clear that they’re all used to their full potential in the dish. Plus, those curly noodles could just be tossed in olive oil and they’d still be fantastic. I haven’t had them in so long (used to call them “telephone cords” as a kid) so thanks for reminding me about that fun shape!
