Are you guilty of trying to convince yourself to eat things you just don’t like because they’re good for you?  I know I am…at least when it comes to beets.  Check out my recipe for this peach, pluot and roasted vegetable salad for a beet recipe that even I enjoyed!

I also just want to take a moment to remember all the men, women and children who were lost on this day 11 years ago.  And to say thank you to all the men and women who fight to protect us every day.  We appreciate it.

I was merely blocks away from the World Trade Center when the towers hit, in a biology lab that I don’t remember.  Then, on the fifth floor in homeroom, watching from a window as they seemed to crack at once and then fall.  And then. I ran.

It feels like a lifetime ago.  And then again, it feels like yesterday.  But no matter how much time passes, what remains true is that I will never forget.  I’ve written more about my firsthand experience with 9/11 in previous posts, so I’ll just direct you to them if you’re a new reader and want to hear more.

    I had to google pluot! I am going to read your two 9/11 blog psots now – my uncle was meant to go to work that day in the WTC and decided not to! Life is amazing that way 🙂

    P.S. Thanks for reminding me that I have beets hiding in my veggie crisper. I think I buy them mostly for the greens.

  10. Haha, I love how you hid “beet” in the title.. but please, don’t be afraid of beets. They are delicious. I think my favourite way to eat them is as chips (dehydrated). I also have a great borscht recipe… and I have a kasha and green bean salad to share later this week. I obviously love beets. 🙂

    I will check out your recipe, it looks delicious. I was home watching the news about the pane crashes 11 years ago today and it was so confusing. How scary to be so close to it. I too will always remember.

  12. I can’t believe how close you were to the towers. So scary. My fiance was living on Water St. at the time and had JUST gotten on a subway going up…so lucky.

    I totally force myself to eat things I don’t like. Why do we do this to ourselves?! I’m glad you found a way to make yourself “tolerate” beets. I happen to think they’re delish when enjoyed in small amounts 🙂

    My brother was supposed to be at his work in Wall Street, but fortunately he had an exam and he was studying at home when this happened. Thank God we were able to get in touch with him before the telecommunications were down. I still remember the agony! The salad looks delicious!

    It was a day when I was still working at my corporate job and business came to a stand still. I began to panic when I couldn’t get in touch with my family in DC – but they were thankfully all OK. Although my brother-in-law had just left the Pentagon. Thankfully.

    When I lived in NYC (well after 9/11, in 2008-09) I heard so many first-hand accounts from the learning-disabled kids I tutored. Hearing these gigantic tough 18-y.o.s from the Bronx talk totally unselfconsciously about how they cried–yeah.

    I was on my honeymoon on a cruise ship in the middle of the ocean on 9/11. I will NEVER forget that day.

    I am not a fan of beets but the salad looks good to me!

  25. I am still trying to convince my palate that beets are not just good for you, but they are delicious. They aren’t buying it. The same for goat cheese. Buuuuuuut, I keep trying. I’d definitely try this, and am sure I’d love it. I was on the other side of the continent when this happened. My brain couldn’t fully fathom what I was watching unfold, on my TV, at a very early hour of the morning on the West Coast. It’s a very sad day in history. Thank goodness you were in a safe place. I will never forget.

    I think we will always remember the moment we heard about the planes hitting World Trade Center. My eyes still well up with tears even now when I watch a video about it……thanks for sharing your memories and experience.

    I think we all remember where we were and what we were doing when the tragedy began. We had been out for dinner and came home and turned on the TV. A message flashed across the bottom of the screen saying a light plane had crashed into the World Trade Centre. We changed channels and stayed in front of the TV for the next six hours. We saw it all unfolding live and it’s something you hope you would never have to witness again xx

    great salad – you don’t have to convince me to eat beetroot or any of the ingredients – but I have come to accept that there are some things I just don’t like!!! So I am impressed you are still learning to like ingredients
