Houston, we have a problem.

It’s really no big deal.

Not a cause for concern.

{Deep breaths.}

It’s just…

…my boyfriend’s taste buds may have been invaded by aliens.  (And by “may have”…I mean “really. this is happening”.)

You see, how do I say this….the boy doesn’t like runny egg yolks.

At first, I thought he was just having some kind of feverish delusional hallucination when he told me so I kind of shrugged it off.  But then, one night at a restaurant he ordered a bacon cheeseburger with a fried egg on top…

…and couldn’t finish it.  Because the yolk “grossed him out” (direct quote).

That’s when I knew.

Because, really…what isn’t made better with a fried egg on top?  The only thing I can think of right now is cream cheese frosting, and that’s pretty much just because it’s sort of sublime all on its own.

Soooooo yeah. Not really sure what to do with this recent development.

I suppose I could either report it to the FBI (or MIB, after the FBI try to have me committed for being a crazy person)…or just learn to live with his extraterrestrial tongue. (And yes, I realize that sounds way too dirty for a Wednesday morning.  Then again…it is hump day… :P)

On the bright side, in terms of these poached eggs in curried tomato sauce – more for me?

Yes, please.

Poached Eggs in Curried Tomato Sauce
Serves 4, adapted from Cooking Light

Ingredients

  • 2 tbsp olive oil
  • 1 1/2 cups chopped onion
  • 1 tbsp minced garlic
  • 1 tbsp minced peeled fresh ginger
  • 1 jalapeno pepper, minced
  • 2 tsp curry powder
  • 3/8 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • dash of sugar
  • 1 (28 oz) can diced tomatoes, undrained
  • 1/2 cup light coconut milk
  • 1/2 cup chopped fresh cilantro
  • 4 large eggs
  • 4 whole wheat English muffins or easy skillet flatbreads

Instructions

  1. Heat the oil in a large skillet over medium-high heat. Add the onion, garlic, ginger and jalapeno pepper. Saute for 5 minutes, or until veggies are tender, stirring occasionally. Add the curry powder, salt, black pepper, and sugar. Cook for two minutes, stirring constantly.
  2. Drain the tomatoes in a colander over a bowl and reserve the liquid. Add the tomatoes to the pan and cook for 5 minutes, stirring frequently. Add the coconut milk and chopped cilantro. Return to a boil. Cover, reduce heat and simmer for 10 minutes. If the sauce is too thick then add some of the drained tomato liquid.
  3. Break each egg into a custard cup. Pour it gently into the pan over the sauce. Cover and cook for 5 minutes, just until the whites are set and the yolks have filmed over but are still runny. Arrange one English muffin, cut side up, on each of 4 plates. Carefully scoop one egg and about 1/4 of the sauce onto each serving.

  11. Oh, Joanne. You are killing me with this photo. I, too, used to be a runny yolk naysayer (years ago) but have learned the errors of my ways. Now pregnant, I miss the yolks SO much. Eggs just aren’t the same. I want this dish right now!!

    I concur. Dislike of running yolks equates alien activity (Psssst, my mom has the same problem, we should band together). Personally, I LOVE running yolks. Can’t get enough. I’ve had eggs poached in yummy tomato sauce before but never had them quite like this! Would definitely love this for breakfast. Definite comfort food 🙂

  18. I’m not a fan of runny yolks either, so I totally understand. But mayonnaise is fine:)
    Did you like light coconut milk? I recently bought a can. The one I bought was made lighter by adding tapioca… The end result was not the best. In future if I was going for light I would use half of normal coconut milk.

    oh no! how i love a runny yolk (this coming from a kid who only liked her eggs scrambled). mike doesn’t love them as much as i do so he usually cooks his eggs a little more, but this is perfection.

    I also know several people who are grossed out by runny yolk! Me, I love it, although I’m against runny white (I actually get nauseous, & then get stomachaches, so). But that just means you have to cook the eggs correctly. I would be all over these eggs in spicy sauce!

  37. Yeah. That’s definitely strange behavior. I’m think MIB is your best course of action. I, however, will hang around eating this glorious dish…heck, with two runny yolks…while you’re investigating. ;P

    As a lover of runny yolks I feel for you. No idea how anyone can stomach the hard cooked yellow centers, might as well just eat hard boiled eggs. Hope he sees the error of his ways. And soon! On the other hand, if you overcook your egg, just give it to him. Solves everything. 🙂

    You may want to reconsider your relationship with the boy…just kidding. My husband doesn’t like runny egg either, nor does he like poached eggs or fried eggs. It’s really frustrating because I actually prefer my eggs that way instead of scrambled, etc. Maybe he’ll reconsider one day.

    In the meantime you have a batch of this yumminess all to yourself. Looks delicious!

    Really? No love for the runny egg?? I LOVE me some runny egg yolk on top of just about anything, favs being salad or oatmeal with cheese (which sounds a little weird but is fabulous). Egg and tomato is a delicious and classic combo, and I love how it’s over English muffin. I’d eat this at any meal!

    I didn’t realize runny egg yolks were so popular, I’ve always disliked them. It’s not their fault, I just don’t like the taste of eggs (I know, I should be put under investigation too!). Only in the last year or so have I embraced the egg white because I wanted to conform and order omelettes at brunch like everyone else.

    I would absolutely eat that tomato sauce, though.

  70. When Jeff and I have egg sandwiches for breakfast, I have to have him make his own eggs. I make mine over-easy and make sure the yolk oozes out when I cap my sandwich. But he cooks, breaks, and presses his until every bit of yolk is hard. I just can’t do that to an egg!

  79. I have been making tomato chutney for my eggs in the morning but this sounds like a fab way to change it up! Oh my gosh it sounds wonderful. My hubby gags if he gets a runny yolk. I’ve been trying for 4 years to “fix” him, because he is clearly broken…but unfortunately, no success.
