    Mexican food does get a bad rap for being heavy and not so healthy. So glad to see you show us how to make a healthy Mexican enchilada with a light cream sauce – love the cauliflower inside.

    Cauliflower has to be in my top three favorite vegetables and I love a cream sauce. Add poblanos and roll them into enchiladas? Yes, double please with cream (sauce) on top!

    This looks like a tasty enchilada variation and I love cauliflower! Real Mexican food (as opposed to American Mexican food) uses all kinds of fresh vegetable year round and is more often baked and cooked on a grill than the fried stuff Americans associate with Mexican food. So really, this is closer to the “real thing” than you think. ๐Ÿ™‚

    I once had an enchilada that had zucchini and butternut squash in it. I’d never considered putting chunks of veggies in an enchilada but it was tasty!

  38. Great filling (and topping!) for enchiladas. It’s nice to switch up the traditional chicken/black bean things once in a while.
