Did you guys know that April is Grilled Cheese Month? If you didn’t, don’t worry, you still have exactly thirteen days to stuff yourself full of as much grilled cheese as possible.

And when you do, I truly hope you’ll consider incorporating this open-faced grilled cheese with refried beans, caramelized onions and avocado on cornbread into your menu plan.  While I do crave a simple grilled cheese every once in a while for nostalgia’s sake, I also like to try new takes on this classic.  And with all of these awesome flavors that are topped off with a good smear of Hidden Valley’s Spicy Chipotle Sandwich Spread, this is truly a grilled cheese to be reckoned with.  To check out the recipe, head on over here to Relish!

    oooh, refried beans and melting cheese AND avocado on cornbread? This is brilliant. You’ve turned my fave chili into a sandwich option!

  4. When I am hungry but nothing sounds good, I find a pot of beans and pan of cornbread always hits the spot.To melt all the grilled cheese, I go the old fashioned way and use a cast iron skillet. Never tried avocados with it, but i will now.Seriously this, to me, is the epitome of Spring cooking!

    You just put all of my favorite things into one recipe! I love anything with cornmeal, I really like Bob’s Red Mill brand, the big chunky cornmeal. But guess what? My mom has some dried corn and grinds her own, I am going to steal that idea asap.

    Also avocado’s, love em, caramelized onions, check.

    Hooray for grilled cheese month! There’s nothing better than a sandwich full of cheesy goodness. I don’t think I’ve ever used refried beans in an actual sandwich before–super interesting!

  21. We we don’t have time to buy or cook anything for dinner a grilled cheese is always our first choice. I love avocado on mine too. The cornbread is such a great idea!
