If you’ve been in the blogosphere for long enough you’ve almost undoubtedly heard of Lori Lange of RecipeGirl. She recently relaunched another site of hers, Culinary Covers, to which I will be a contributor, along with a whole slew of other awesome bloggers, in the months to come! If you’ve asked yourself whether a given recipe deserves to be on the cover of a cookbook or cooking magazine, then this is definitely the site for you because that’s exactly what we’ll be doing!! For my first post, I made the cover recipe from The Smitten Kitchen Cookbook – Tomato Scallion Shortcakes with Whipped Goat Cheese. Head on over to check it out here!
Now, I do realize that Earth Day has passed but we are still in April, which is Earth Month, AND we kind of live on the earth all day every day…so it should really be Earth Day 365 days a year. Recently, I stumbled across this fun site that Whole Foods has put together to celebrate Earth Month – EarthlingMonth.comhttp://earthlingmonth.com/. Basically, this site is a collection of photos, tweets and videos that give a snapshot of all the things people are doing around the world to celebrate Earth Month, no matter how small or significant that action is. It really is a celebration of earth’s beauty and bounty as well as an inspiring snapshot of all that is going on at a given moment in time to inspire change and maintain our planet’s beauty. To participate, feel free to upload a photo, tweet, or video here or tweet or instagram using the hashtag #WFMearthling.
In addition, there are a series of fun Earth Month-centered events going on at Whole Foods this month. For instance, I know at my local Whole Foods there have been awesome events centering around Earth Month including interactive classes and sales on eco-friendly spring cleaning products. To encourage you to head on over to your local Whole Foods and check out what’s been going on, Whole Foods has been kind enough to give me a $25 WHOLE FOODS GIFT CARD to give away to one of you guys! All you have to do to enter is leave a comment telling me what you’ve done to celebrate Earth Month (or something that you plan to do). I will choose a winner next Tuesday!
What I’ve done to celebrate the month…I’ve used less than 1 tank of gas all month. Walking as much as I can and just driving less!
And I have always wanted to make Deb’s cover recipe. You did it proud!
I’m getting my front yard re-landscaped and insisting that they reuse as many of the existing plants as they can. Some bushes are dying and have to go, but there’s no reason to let hundreds of bulbs go to waste in the process!
Awesome giveaway and recipe!
To celebrate Earth month I am doing a lot of spring cleaning and plan to donate a lot of old clothes and I am not using Ziploc bags or plastic grocery bags anymore, only Tupperware and reusable bags!
These shortcakes look so good. I am celebrating by trying to encourage my friends and classmates to use fewer disposable products
Thanks for a lovely giveaway! To celebrate, I’ve been reducing water usage as much as possible.
This is such a gorgeous creation! I loooooove my smitten kitchen handbook, and have made almost every recipe from it… guilty. To celebrate Earth Day I helped preschool kids learn to garden at a local community center.
Beautiful photo!!
I love Earth Day (wish it was every day in people’s minds). I have just started a balcony apartment garden. I am trying to grow herbs and small vegetables myself that I can use in the kitchen. I just noticed the first little signs of life peeking up through the soil! Exciting.
To celebrate Earth Month and Earth Day, I pulled weeds, and I am starting to get my garden ready for vegetable planting.
Love your recipe, a nice savory shortcake, I love it!!
I’m going to try very hard to save on water and electricity! 🙂
I am trying to reduce my consumption of animal products (I am a lacto-ovo vegetarian) for Earth week, and planning to start a vermicomposter in my apartment!
Oooh that’s so cool!!!! I love the idea of that site!
And I’m currently growing some scallions for Earth Day 🙂
Just saying hello… don’t enter me on the giveaway, I don’t have a Whole Foods nearby
Loved the idea of the cookbook cover, will jump over there to find out more
i am always acting like it is earth month anyway…… this month i am planning on making my own kombucha … saves $$$ and resources!
I have to admit that my 5-year old is responsible for our only Earth Day celebrations. Last night we went outside and picked up any trash he could find on our block. Luckily, there wasn’t much, but he felt so proud that he had done something. We also talked about how we recycle and various things that we can recycle. Thanks for the great giveaway! I’m there every week, so this would definitely come in handy.
Just found you through The Cooking Actress–I love the premise of your blog!! (I want to move to NYC someday :))
What a great giveaway–I’m so addicted to Whole Foods’ bulk section! For Earth Day, I’m making extra sure to bring re-usable bags when I go grocery shopping. I just put a bunch in my car today for my trip after work!
It sounds like a great site, Joanne! I love her other blog! Going to check it now!
Earth day is everyday for me. Or I try it to be anyway, I always walk everywhere or take public transit. I also never let water go to waste and never let it run. It annoys me so much when people let water run. Such a waste.
I love this recipe, it sounds and looks gorgeous. Ohh and by the way, you should make it so that in your mailchimp emails, we can click on the title of your post to be directed to the post 🙂 just a suggestion! xo
Tomato scallion shortcakes sound so darn good! Whipped goat cheese too?! Oh. Man.
To celebrate Earth Day/Month, I’m driving less and walking more…and shopping locally!
I’m always trying to keep the Earth in mind! I eat vegetarian, have a set of dishes at work to avoid using throw away plates (yes, I do get funny looks in the break room!), I purposefully sought out a fuel efficient car, use energy efficient bulbs — all the small things!
We walked to the local Earth Day festival!
I give hand made (by me) crotchet grocery bags to family and friends. Avoid getting plastic bags and use energy efficient bulbs. I have also started using dish cloths more often than kitchen tissues.
Lovely brunch….cant wait to make some for my son.
We participated in our city’s clean-up day and brought in all our old electronics to be recycled.
Trying to eat more locally as well as limit our electricity and water usage 🙂
It looks delicious! Off to check out the new site.
wow, that looks really delicious! i’m always trying to walk when doing errands
Earth Month is every month!! But this month, I’m hoping to get worm-composting started in my apartment.
That looks awesome. I loveeee the sound of Whipped Goat Cheese.. Have a ton of chopped tomatoes -as i chopped it for a stir-fry last night. Perhaps i can use them Perhaps I’ll add in a side of iced coffee with it.
Earth day- No plastics+ all taps /electric switches are off when not in use.Ah well.
I’m trying to work o water conservation. Not so many long showers!
I am doing everything I can to reduce waste by being conscious of products I buy.
For Earth Month, I am trying to just spend as much time outdoors as possible! Working at a desk all day makes me truly appreciate being outside–and particularly at this time of year when the weather is starting to warm up! And since I was BORN on Earth Day, I celebrated that yesterday 🙂
I recycle like a madwoman… including ripping the plastic windows out of all of my junk mail before recycling it haha.
What a fun project – so cool that you’re a part of it 🙂
My co-workers and I went out during our lunch break and picked up litter along the road.
These look delightful my dear. Hope you’ve been well.
On earth day, I biked to my yoga class instead of driving! Double workout!
My family and I have switched to cloth napkins and reusable paper towels.

Hmm, I’m trying to walk more places rather than drive!
Trying to use/purchases more eco friendly products 🙂
Plus, I am an environmental scientist, so I try and celebrate earth day EVERYDAY!
Savory shortcakes filled with veg? YES PLEASE. 🙂 And thanks for the giveaway opportunity! I celebrate earth day/month/year the same way all the time: by not owning a car and walking or biking 98% of the time. Yay!
I bought a bunch of reusable bags and volunteered with the city to replant plants and trees!
cool and congrats on the new gig
Earth day support for the win my friend 😀
Love this recipe!
Cheers
CCU
We got some solar lights for our driveway and front garden so we can stop using the electric ones.
i’m transitioning to all homemade cleaners (mainly baking soda, vinegar, and lemon).
For Earth Month (and beyond), I’m going to try to focus more on buying local!
The tomato scallion shortcakes look so good. I will have to hop on over to the other site 🙂 And congrats on the newest adventure. Sounds like it will be fun. I don’t know how you find the time to do all that you do! For earth day/month we planted 500 trees, we do anywhere from 50 to 500 each year too 🙂
You certainly are busy. Congrats on being selected to contribute to another site. Hmmm…not sure I can enter the comp. No Whole Foods outlet down here! xx
We’ve been shopping almost 100% locally to celebrate earth month. Local meat, local cheese, local eggs. Love it 🙂
I’m a preschool teacher and we celebrated earth month by planting green bean seeds and flowers in our garden on the playground!
Biking to work 🙂
The shortcakes look amazing! I’ve been composting our food waste!
What a cool idea for a site, I will check it out. I have been trying to buy more local and in season food.
Oh congrats! That sounds marvelous!
The shorcakes look amazing Joanne…as for the EarthDay…we got a hybrid car 🙂
i’m sorry to say i’m not doing anything special for earth month (didn’t even know it was a month). just continue to reuse, reduce and recycle ….

You have me at whipped goat cheese, Joanne. The shortbread looks fantastic.
be better about water waste!

I do whipped cream cheese and whipped butter – whipped goat cheese sounds right up my alley.
When the weather is nicer, I plan a nice day in the park, thinking a picnic may be part of it. Until then, I will keep recycling and reusing everything possible (love that being earth friendly is also often frugal).
And these shortcakes look amazing. And whipped goat cheese? Gahhh
Oh…these Tomato Scallion Shortcakes with Whipped Goat Cheese looks awesome. I gotta go check out the recipe. To celebrate Earth Month, I planted some cherry tomatoes and herbs with my kids. We all had a great time and can’t wait to harvest some sweet juicy tomatoes soon. Thanks for hosting the giveaway. I love Whole Foods market.

I have been walking in the park to celebrate Earth month and reveling in the green-ness of it. 🙂
You had me at whipped goat cheese…
Always recycle and we use refillable bottles for our drinks during the day. I have switched to natural cleaners and hand soaps.
Janet
I like that point about earth day every day – exactly!
i have no access to whole foods [:(] but i wanted to say kudos for being part of culinary covers and for recreating a terrific dish!
I always recycle, but this month I’ve tried especially hard to turn off the lights when not using them and walk to places instead of driving when I can.
For earth day, we’ve been taking care of our lawn, shrubs, plants. And I always try to recycle as much as possible throughout the year. Thanks!
Working in my garden (tomatoes, squash, beans, peppers!!)! And trying to convince my family and friends that recycling really is worth it 🙂
I just popped over from your post on Culinary Covers, where you convinced me to buy Deb’s smitten kitchen cookbook for sure! 🙂
For earth day/month, I am trying to buy fewer fruits & vegetables that come packaged in plastic.
i need to make this recipe, stat 🙂 always walk and take public transportation when I can, recycle everything, and this year, perhaps expand our garden?
To celebrate Earth Day, I cleaned out the recycleables and took them to the recycle center!
We try to celebrate the earth all year long by recycling and upcycling as much as we can, buying organic as much as possible, and using earth friendly household products. I also plan to purchase a Hybrid at the end of the year!
I love planting trees on earth day! And going on picnics…
Hey Joanne, your recipe again is divine! And congratulations on your photo cover for the cookbook! For earth week I have already planted my herbs on my deck and we as a family have been recycling almost about 90% of what we use.
You inspire me every week! Thanks for your wonderful and tasty recipes weekly I truly enjoy them. 🙂

What an awesome take on strawberry shortcake! This would be so delicious when fresh tomatoes are in season.
For me it’s Earth Day every day that I go grocery shopping. I have two awesome Whole Foods tote bags so I never have to ask for a paper or plastic bag when I check out.
Oh my, this looks amazing! I love goat cheese 🙂
