You guys are not going to believe this but the reality of my relationship is that The.Boy’s biggest concern about living me with is that he is going to lose.weight.

Go ahead. Stifle a full-blown giggle attack. I’ll wait.

No, but really. I’m serious.

And no matter how many times I try to explain to him that in order to merely maintain my weight while living with myself, I need to be conscientious about everything I put in my mouth and exercise like I’m training for a marathon nonstop (which, uh, I guess I kind of am)..he still insists on weighing himself two times a day. For good measure.

In fact, just yesterday morning he proudly forlornly proclaimed that he had lost two pounds overnight.

Poor baby.

And just as he was opening his mouth to wail “Woe is me!” out of our window, I seized the opportunity and stuffed a few of these cream puffs in his mouth.

Just like that, breakfast was served.

I don’t think we’ll be worrying about that whole “weight loss” thing anymore.

These are pretty much standard cream puffs but with a meyer lemon curd whipped cream filling.  They are {apparently} perfect for breakfast, a mid-morning snack, a midnight snack, and (I think) for Mother’s Day, which is rapidly approaching.

And for calming your boyfriends irrational fears about his weight. If only we all had such “problems”.

Cream Puffs with Meyer Lemon Cream Filling
Makes 32-40, adapted from Bon Appetit April 2010

Ingredients
For the cream puffs

  • 2 3/4 cups unbleached AP flour
  • 1/8 tsp salt
  • 1/2 tsp baking soda
  • 2 cups water
  • 3/4 stick plus 3 1/2 tbsp butter
  • 6 large eggs
For the filling
  • 1 cup sugar
  • 4 tbsp corn starch
  • 2 tbsp flour
  • 1/4 tsp salt
  • 1/2 cup cold water
  • 1/2 cup fresh-squeezed meyer lemon juice
  • 3 egg yolks
  • 2 tbsp butter, softened
  • 1 1/3 cups boiling water
  • 1 cup chilled heavy whipping cream

Instructions

For the cream puffs
  1. Preheat oven to 425.  Line a cookie sheet with parchment paper.  Sift the flour, salt, and baking soda together and set aside.
  2. In a heavy saucepan, heat the water.  Add the butter.  When melted, remove the pan from the stove and add the flour mixture all at once.  Beat with a wooden spoon, then return the pan to medium-high heat, beating the mixture until it comes away from the sides of the pan.  Remove the pan from the heat and add the eggs one at a time, beating with a wooden spoon or hand mixer in-between additions to mix well.
  3. Fill a pastry bag fitted with a 1/2-inch tip with the cream puff batter.  Squeeze out 3-inch puffs, about 1/2 inch apart on a cookie sheet.  Bake 20 minutes or until golden brown.  When done, carefully slit the side of each cream puff with a knife to allow steam to escape and to prevent the puffs from becoming soggy inside.  Transfer to cooling racks and let cool.
For the filling
  1. In a saucepan, combine the sugar, cornstarch, flour and salt. Gradually blend in the cold water and lemon juice.
  2. Add the egg yolks and butter, blending until smooth.
  3. Gradually add in the boiling water, stirring constantly.
  4. Place the saucepan over medium high heat and bring to a full boil, stirring gently with a spatula and scraping the bottom (to prevent burning). Once the mixture begins to thicken, reduce the heat and simmer for one minute.
  5. Remove the curd from heat. Cool completely in the fridge for two hours or overnight.
  6. Whip the heavy cream until peaks form. Fold the heavy cream into the meyer lemon curd in three additions.
To assemble the cream puffs
  1. Cut each puff horizontally in half and pull out any soft or moist dough in the center. Pipe about 1 tbsp of the meyer lemon cream onto each puff bottom. Press on puff tops to adhere. Chill until ready to serve.

  30. I continue to find meyer lemons in the market, but have yet to decide what to do with them. A meyer lemon cream sounds amazing all on it’s own, but stick it in a cream puff and you’re golden. I can’t believe he’s afraid that he’ll lose weight! If only we could all have to worry about that.. I’m sure you’ll set him straight, Joanne.

    Uhhg my boyfriend is the same way! He’s a Dietitian so he is constantly watching his weight even though he has a fast metabolism and I want to slap him and scream JUST EAT THE COOKIE! Ha. But really these cream puffs look delicious and refreshing for the summer times!

    These are so pretty! I have made cream puffs before but mine don’t look this pretty! I never used a pastry bag for them! I have to do this! Your recipe says a 1/2 inch tip but it has to be some kind of star tip to get those lovely ridges. Could you tell me what number tip you used?

  69. Darn it, I wish my husband had your boyfriend’s metabolism!! He complains that I bake too much yummy stuff and that he’ll get fat. He eats less than I do these days, which is entirely weird. I do make some indulgent treats but mostly healthy, wholesome food. I’ll bookmark this recipe for our next treat attack. I reckon they’re worth every calorie!
