We are wedding-dieting in the Eats Well With Others apartment.

Now before you get your hopes up, I will not be donning a long white dress any time in the next year (although I’m personally crossing my fingers for an October 2014 ceremony with a reception that features at least 10 different types of winter squash…HINT HINT dear boyfriend)…but between the.boy’s friends and mine, we have five weddings to go to this summer and, between us, I would kind of like to not have to wear a dress with an empire waistline for any of them. If you get what I’m saying.

When I informed The.Boy of this lifestyle change we were going to be embarking on, his response was, “But baaaaabbbbe, I’m already on a diet.”

Oh yes, I forgot. The diet that consists of eating cookies/cupcakes/muffins for breakfast and a nonstop stream of chocolate and Oreos before and after dinner. Obviously.

Except that while he can eat that way without gaining even a tenth of an ounce, I merely think about eating a peanut butter cup and all of a sudden I have to button my jeans while lying down to get them to close.

Really. Not fair.

Anyway.  So to kick things off I made us some samosa-stuffed sweet potatoes, loving the fact that they were perfectly portioned and full of so much nutrition and flavor that I wouldn’t even miss my daily Reese’s “nightcap”.

In fact they were so delicious that the.boy pretty much inhaled them after I left for Eat.Write.Retreat and it was really a lucky thing that I had taken one for lunch the day I left otherwise I’m pretty sure there would have been none left when I returned.

And if you’re doing the math, yes that means he {only} ate 1.5 servings at each meal. He’s on a “diet”, after all.

One year ago…Savory Tomato Crisp, West Indian Style Channa Wrap
Three years ago…Sauteed Cauliflower with Feta and Mint

Samosa-Stuffed Sweet Potatoes
Serves 4, adapted from Veganomicon

Ingredients  

  • 4 sweet potatoes
  • 1/4 cup soy milk, almond milk, or regular milk
  • 3 tbsp olive oil
  • 1 tsp yellow mustard seeds
  • 1 tsp coriander seeds, crushed
  • 1 onion, cut into small dice
  • 1 medium carrot, cut into small dice
  • 2 cloves garlic, minced
  • 2 tsp grated fresh ginger
  • 2 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/2 tsp salt
  • 1 cup frozen peas
  • juice of 1/2 lemon

Instructions

  1. Heat oven to 400.
  2. Poke the potatoes with a fork so that they are pierced all around. Cover with aluminum foil and bake for 50-60 minutes or until fork-tender. Unwrap and let cool.
  3. Cut potatoes in half lengthwise and scoop out the insides into a bowl, leaving 1/4 inch rim of potato in the skin. Mash the potato insides with the milk. Set aside the skins.
  4. Heat the oil in a large skillet over medium heat. Add the mustard seeds and coriander seeds to the pan and cook until they start to pop. Let them pop for about a minute, covering the pan if necessary. Add the onions and carrots to the pan and saute for 7-10 minutes or until the onions start to brown. Add the garlic and ginger and saute for a minute more. Stir in the cumin, turmeric, salt, potato insides, and peas. Cook until heated through. Add the lemon juice and season to taste with salt and pepper.
  5. Brush the insides of the potato skins with a bit of oil. Fill the potato skins with the potato/pea mixture. Bake for 20 minutes.

  1. Wow! Five weddings–I hate to say it, but I am not envious. Your sweet potatoes look like a healthier twist on the ‘loaded’ potato skins that were such popular diner staples in the 80s and 90s.

    These potatoes sound awesome. I love Indian spices. So unfair about boys and their eating…ugh.

Also, these sweet potatoes sound much more than lovely. I’d probably eat just 1.5 servings per meal, too! What a fantastic idea! Indian spices go so well with them. I actually happen to have a sweet potato in the oven right now, so obviously I’m going to be changing my plan for a plain baked sweet potato to a samosa stuffed sweet potato. You made my day!

    then he grabs a huge bowl of strawberry frozen yogurt, tops with a load of fresh strawberries with a sprinkle of sugar (granted, just a little sugar) – and when I stare at him, he says” BUT THIS IS FRUIT

    Haha, love it. I’m the same way these days–eat a cupcake, gain a dress size. Boyfriend just eats meat and potatoes, looks like a model. Oof. Trying to be better though. I love sweet potatoes but get disenchanted with them pretty quickly. This is a creative way to put them back on my plate!

    Oh man, wedding season. I think everyone has that one year when there seems to be a wedding every single month–and the plane tickets! OH.   29. Haha, that was us last summer. I think we hit 7 weddings… what was most impressive was that NONE of the guest lists overlapped so I could wear the same dress to all of them. HAHAHAHA. 🙂

    These samosa-stuffed sweet potatoes look ridiculously good. A spring/summer update on a winter veggie. Nice!

    Yes! This is the answer to my lunchtime prayers. The best part of a samosa is of course the filling, and I could so happily just eat bowlfuls of the stuff. This is absolutely perfect!

    I had a summer once where I was invited to 13 weddings. There was minimal overlap, so I got two dresses that I alternated. It was insane–I was missing bachelorette parties because I was at other weddings. I think I lost weight that summer from a combination of dancing and being broke. 😉 I would have rather eaten lovely meals like these sweet potatoes to make that happen though. They look amazing!

    Hi Joanne! Question: Do you need to brush the potato skins with oil before baking, since the filling already was cooked in oil?
