That moment of panic when your fiance walks in the door and asks you whether the tart you are making have already put in the oven for his Thanksgiving potluck at work has nuts in it even though you had discussed what you were making ad nauseum the night before and never did he once mention so and so’s nut allergy.

Or when a potential wedding caterer emails you a sample menu that has not a single vegetarian item on it. And then you have to awkwardly email them back being like, “So…we were really hoping this whole shebang would be veggie-based. And if you try to suggest serving caprese salad in November, I will personally slap you.”

Anyone who thinks late fall/early winter tomatoes are acceptable to serve to paying customers should not be in the culinary profession. Amen.

And then there’s the situation of the surprise allergy. The kind that your guest announces as he/she (okay fine…probably “he” since “she’s” wouldn’t be so inconsiderate) walks through your door at the start of a dinner party.

Like, “Hey, nice to see you! Thanks for having me! Here’s a bottle of wine. By the way, I have Celiac’s.”

Uhhh, what now?

I like to think I’m pretty overly considerate of other people’s dietary restrictions since I have some of my own, but even I have been on the receiving end of such proclamations. And the key to surviving them is to always have a plan B.

Or, in today’s case – a plan “P”. That’s right, Pillsbury has you covered with their new line of gluten-free products! These include Gluten-Free Pie and Pastry Dough, Gluten-Free Chocolate Chip Cookie Dough, and Gluten-Free Thin Crust Pizza Dough.

I got to try their Gluten-Free Chocolate Chip Cookie Dough and was definitely impressed. Not only could you not tell it was gluten-free AT ALL, but the cookies that it made were perfectly crispy at the edges and chewy on the insides. Just the way I like them. Normally I’m not such a fan of pre-mixed baking supplies and much prefer the DIY route, but the convenience factor of these is pretty appealing. All of the gluten-free products come in tubs, so they are easy to store and use as you go, and they totally negate the need for you to buy a whole bunch of specialty flours that you’ll only use a handful of times. Not to mention that gluten-free baking is often a bit finicky, but these take all the guesswork and stress out of it.

Never one to leave well enough alone, I turned these cookies into sorbet chocolate chip cookie sandwiches! Kind of like ice cream sandwiches but with a sweet tart cranberry grapefruit juice twist.

The sorbet is bursting with big fruity flavor and it’s kind of the prettiest color of all time. Hot pink. 

And it’s au natural. Winning.

Plus it fits kind of perfectly between two chewy CCC’s. Even the non-GF eaters will be fighting over these. I speak from experience. AKA – the.boy and I might have dueled over the last one.

Cranberry Royale Sorbet Chocolate Chip Cookie Sandwiches {#glutenfree}
 
Sweet tart cranberry royale sorbet is sandwiched between two gluten free chocolate chip cookies to make a festive frozen treat!
Yield: 8 sandwiches
Ingredients
Instructions
  1. For the sorbet, use a vegetable peeler to remove three large strips of zest from the grapefruits. Set aside.
  2. Squeeze ¾ cup of juice from the grapefruits.
  3. In a 4 quart pot or saucepan, combine the grapefruit juice, zest strips, cranberries, water, corn syrup and sugar. Bring to a boil, and then continue boiling just until the cranberries begin to pop, about 5 minutes. Remove from the heat and let cool.
  4. Remove the grapefruit zest from the pot. Pour the cranberry mixture into a metal bowl and place in the freezer, stirring every 30 minutes or so until cold but not frozen, about 30 minutes.
  5. Pour the cranberry sorbet base into a frozen ice cream maker canister and churn until it is the consistency of very softly whipped cream, about 25-30 minutes.
  6. Put the sorbet into a storage container. Press a sheet of parchment paper against the top, and seal with an airtight lid. Freeze until firm, at least 4 hours.
  7. In the meantime, make the cookies. Preheat the oven to 350. On a parchment-lined baking sheet, scoop the Pillsbury Gluten Free Chocolate Chip Cookie Dough by the tbsp onto the parchment paper. You should get 16 cookies. Bake for 11-13 minutes or until the tops are golden brown. Remove from the oven and let cool on the pan for 2 minutes. Remove to a wire rack to cool completely.
  8. Scoop the sorbet onto half the cookies and top with a second cookie. Serve immediately or wrap in plastic wrap and place in freezer to refreeze until ready to serve.

  2. I was pretty impressed with Pillsbury’s gluten-free pie crust but haven’t tried the cookie doughs yet. And tomatoes after August = blasphemy.

  4. How about the time when you live off of nuts and on the first day of your job discover your new officemate is anaphylactic to nuts…I can’t complain because I don’t eat gluten but I definitely give my dinner hosts a heads up!

    My flatmate is gluten free and it can sometimes be quite the stress figuring something gluten free out for her. I think it’s amazing they’re doing this line, honestly. And it looks delicious as well!!

  6. I usually obsessively ask everyone if they dietary restrictions, so that no one is pissy when I tell them mine. I LOVE the tubs of GF cookie dough from Pillsbury. I have a few GF recipes I use and like, but when you’re making a lot of stuff the last thing you want to worry about is “have I stuck a floury measuring cup in the sugar?” and make someone sick on Christmas. These make an AMAZING bottom layer for slutty brownies, BTW!

    I’m so glad I’m not entertaining the way I used to when I was younger…I can’t imagine what I’d make with all the food intolerances people now seem to have developed. I have a nephew (now an adult) who has celiac disease. He learned early what to stay away from either ate first or brought something. Too much to ask a hostess to cater to everyone. If asked what’s in something, I’d be happy to list ingredients.

  15. First things first, cross that caterer off your list. All they did was suggest the most expensive menu to you; they didn’t even listen to what you wanted. Caterers can be the most stressful part of the wedding, especially for people like you and me who love food so much.
    Second, this sorbet is freaking beautiful! I want it every day! I’ve been eating my fair share of ice cream, though it’s 20-degrees outside.
    Third, my neighbor is gluten free and she has been loving these new products from Pillsbury. Our one complaint about them is that the leftovers don’t store well, so it’s best to make exactly what you will eat in a day. Did you find that problem too? I happen to think that’s not a problem, per say, since I’m a big fan of portion control, hah!
    Fourth, I hope you’re not stressing about your wedding. Please please please tell me you’re enjoying it. Let me know if I can help you with anything. Can I research caterers for you? Grill them on the phone about serving tomatoes out of season? 😉

      Thanks for your comment! Everyone definitely has their own preferences when it comes to the classic chocolate chip cookies. To each his/her own!! And I can speak from experience that both the cookies and the sorbet were just as good on their own as they were smashed together. 🙂

    I’m not normally a huge fan of premade cookie dough, but this is definitely perfect if you’re trying to accommodate special diets. Gluten-free baking scares me so I’ll gladly take the premade route 🙂

I think I will also try a batch of the Pillsbury chocolate chip cookies and put them on a cookie tray. Lately I am all about easy….I don’t want to overbake like I do every Christmas and then I end up exhausted!

    Wow, I try to avoid the processed foods, but I may have to try the Pillsbury gf line.

    In other news, we knew we had our caterer when they didn’t blink about a vegan option, which was acorn squash and quinoa-based. Seasonal catering is the only way to go!

    these look amazing! Great to have on hand for the GF set. I have just been making bikkies for kinder kids and had the problem of the little girl with all the allergies and felt really bad giving her a lollypop but I guess kids loves them anyway. I would have loved to give these cookies but they would not have withstood a day in 40 C heat 🙂 But it does remind me to look for frozen cranberries
