Remember when we didn’t worry about eating our veggies and our only concern was how much peanut butter mom put on our sandwich, whether she cut it into triangles or squares, and just where oh where was that glass of milk she had promised?

The.Days <– those were.

Now we all sit in the lunchroom comparing notes on how much kale we ate the night before and saying things like, “Are those walnuts instead of almonds on your salad?! You crazy.”

I mean, I think we all know I love a good kale salad, but they don’t call it throwback thursday for nothing.

And nostalgia doesn’t get any better than raspberry jam sandwiched between two peanut buttery shortbread layers. It’s not quite Wonder Bread. But it’ll do.

    Oh yes, this is nostalgic and just plain ole good food! I can’t live without peanut butter these days…I like it more than I did as a kid. Your bars look terrific and I’d totally serve it for breakfast!

  15. Woah, I didn’t realize I was eating an unreleased recipe yesterday! Glad you’re posting it now, because those bars are killer. Definitely demanded a big glass of milk (Cow’s milk even, not nut milk. I went all out when eating these).

  17. Oh yeah….I remember those days. If I get too hungry before dinner I grab a spoonful of yummy peanut butter. Can’t beat it for a treat and getting some protein in your body.

    Hey, you could practically just have a few of these for lunch by themselves! It’s totally a sandwich in cookie form. Definitely full of protein, right? 🙂

    Re almonds vs walnuts: the whole minutely comparing healthiness/etc of food thing is just…well, in my experience, it made me feel super body-shamed & seemed symptomatic of seriously unhealthy body image issues. I had never, ever experienced such a thing until we moved to NYC and everyone at my office was suddenly & constantly way too judgmental about each others’ lunches all the time. So uncomfortable. I’m not eating my salad because it’s healthy and I’m so good and wow I wish I could just drop those ten pounds! I’m eating it because it’s DELICIOUS. /rant over.

    Not blaming you at all for my old office or personal baggage, obviously. I hope this is not offensive, and I’m sorry if it is! But I’m going to say it anyway because it’s too important not to talk about.

  28. I love these bars. My family eats peanut butter like there is no tomorrow. I think we go through at least 2-3 jars each week. This would be a great way to use some of it, as we normally have it with sandwiches and mixed in with yogurt 🙂

    Peanut butter and jelly never goes out of style! I loved when my sandwich got squished and the peanut butter and jelly infused right into the bread. I would have no willpower around these! They look amazing.
