Breakfast and I are fighting.

Our facebook relationship status has been downgraded from BEST FRIENDS FOREVER (caps lock on) to mere “casual acquaintance”.

Basically, we might say hi if we see each other on the street, but air kisses are out of the question.

For real.

I’m pretty much that girl who finds a breakfast that she likes and runs with it, sometimes for years on end.

Then all of a sudden, I wake up one morning and the Greek yogurt honey peanut butter cookie butter combo that once was the thing that cajoled me out of bed at 6AM is now the thing that makes me gag a little as I’m brushing my teeth.

No bueno.

As a firm believer in the idea that breakfast is the be-all and end-all non-negotiable best way to start the day, I had to remedy this breakfast apathy situation.

And fast.

Intuition told me that jump starting my morning with a hint of chocolate, a multitude of berries, and the staying power of oatmeal was the key to world peace and breakfast redemption.

Baking it all up in one pan so that it feels like you’re eating cake when you’re really eating antioxidants, fiber, and all the good stuff? That was my own little stroke of genius.

Plus, unlike oatmeal in a bowl, you can bake this up the night before so that it is raring to go when you are in the morning. No time spent standing over a pot and stirring necessary. Just reheat and revel in the ooey gooey chocolate cherry yum.

I added some extra chocolate oompf to this oatmeal bake by using Silk Chocolate Soymilk to mix it all up. Chocolate-Covered Cherry Baked Oatmeal
 
Eating breakfast doesn't have to be a chore! Make it taste like dessert with this chocolate-covered cherry baked oatmeal that can be prepared ahead of time so that it's ready to go on weekday mornings.
Yield: 4-6 servings
Ingredients
  • 2 cups old-fashioned rolled oats
  • ⅓ cup packed dark brown sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp salt
  • ½ cup hazelnuts, chopped, divided
  • 2 cups cherries, pitted and halved, divided
  • ½ cup semi-sweet chocolate chips, divided
  • 2 cups Silk chocolate soymilk
  • 1 large egg
  • 2 tsp vanilla extract
Instructions
  1. Heat oven to 375F. Grease an 8x8-inch baking pan. Set aside.
  2. In a large bowl, stir together the oats, brown sugar, baking powder, cinnamon, salt, half the hazelnuts, half the cherries, and half the chocolate chips. Pour into the prepared baking dish.
  3. Sprinkle the remaining hazelnuts, cherries, and chocolate chips on top.
  4. In a second bowl, whisk together the chocolate soymilk, egg, and vanilla extract. Pour over the oats, shaking the pan around slightly so that it is evenly distributed.
  5. Bake for 35-40 minutes, or until set. Let cool slightly before serving.

  4. Ugh, I’ve been in a breakfast rut too… of the oatmeal variety. So why am I excited about THIS oatmeal? Because it’s non-boring and chocolatey! (I’ve stirred in cinnamon and maple syrup WAY too many consecutive mornings).

    Good to know that my relationship with oatmeal breakfasts can be restored – things were looking dicey between us for a while!

    Please don’t tell nutritionists but I never have breakfast – every once in a blue moon I might have breakfast if we are in a hotel or get invited for a brunch type thing. I have a cappuccino when I wake up, and then lunch many hours later.

    but, I would love this concoction for a snack after lunch or even as lunch itself

  25. I also go through phases of obsession with one specific breakfast, eat it every day then get tired of it (then re-discover it again after a few months). This is something I would latch on to. I especially love chocolate and cherry together!
