Not only are they the ultimate bribery tactic to keep the movers in line (I’m very much not above such things), but hovering, stressing, and bubble wrapping burn MAJOR calories.

And major caloric deficits require peanut butter.

That pretty much is a scientifically proven fact.

PB&J never fails to hit the comfort food spot for me, and I love that with these muffins it can double as a grab-and-go breakfast and anti-anxiety medication. The original recipe is from Averie Cooks, and being that she is basically the peanut butter master, and even wrote a whole (fabulous) cookbook on the subject, I knew it was going to be a good one.

Spoiler: I was right.

These muffins are so fluffy, moist and full of rich peanut butter flavor that gives way to a raspberry jam surprise party when you bite into them.

I knew I couldn’t have a whole batch of them in my apartment without getting into some serious trouble, so I sent a few to Aly of Cooking In Stilettos for this month’s Leftovers Club! I hope she gets as much comfort out of them as I did.

Peanut Butter and Jelly Muffins
 
The perfect back-to-school treat, these peanut butter and jelly muffins double as both a fun breakfast and an after school snack!
Yield: 12 muffins
Ingredients
  • 1½ cups all purpose flour
  • ½ cup sugar
  • ½ cup brown sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • pinch of salt
  • 1 large egg
  • 1 cup milk
  • ½ cup crunchy peanut butter
  • ⅓ cup canola oil
  • 2 tsp vanilla extract
  • ½ cup raspberry jam
Instructions
  1. Heat oven to 350. Line a cupcake pan with paper liners. Set aside.
  2. In a large bowl, whisk together the flour, sugar, brown sugar, baking soda, baking powder and salt.
  3. In a medium bowl, whisk together the egg, milk, peanut butter, canola oil, and vanilla.
  4. Fold the wet ingredients into the dry ingredients. Using a 1½ tbsp cookie scoop, scoop one scoop of the batter into each of the muffin cups. In the center, scoop about 1-2 teaspoons of the jam. Top with a second 1½ tbsp scoop of the batter so that it covers the jam.
  5. Bake for 20-25 minutes, or until the muffins are set and golden. Let cool for 5 minutes before removing from the pan to a wire rack to cool completely.

  11. I’m sooooo going to make these very very soon! My bf and I go watch British soccer games (we’re in Milwaukee) on the weekends, and that means early mornings sometimes.     So smart! When Brent and I moved we ordered take out but we were so busy we only had 1 meal each day we moved. But I can safely say that the fried sugar donuts we ordered with that one meal justified skipping the other two meals. lol
    If I ever have the nerve to move again (heaven help me), there will be food packed for this very reason.
