To think, I thought I would have nothing to write about today.

Then a mouse scurried across my apartment floor IN BROAD DAYLIGHT.

And now you get to hear about my vermin woes.

So lucky, you are.

First of all. Aren’t rodents supposed to be NOCTURNAL?!

5pm seems a little bit too early for them to be lurking around, waiting for the perfect opportunity to eat my farro.

And yes, that is definitely what he was eating. Farro.

He has expensive taste.

Second of all, how is it that none of this ever happens when the.boy is home?!

It’s like these creepy crawlies bide their time, waiting for me to be alone in our apartment because they think I’m the nice one.

Dear mouse.

If I get my hands on you, I am going to decapitate and then eviscerate you and save your subcutaneous fat pads so that my coworkers can try to use your cells to cure diabetes.

Consider yourself warned.

Until that glorious day, I will be feasting on this baked raspberry oatmeal and feeling majorly self righteous about it.

Not only is it crazy delicious in a grand slam breakfast kind of way, but it’s also pretty good for you what with all the oats and berries and superfoods and stuff.

Also, BROWN BUTTER DRIZZLE. That will get those endorphins pumping, if nothing else.

This recipe is from Seriously Delish, the first cookbook from one of my most favorite bloggers – Jessica of How Sweet Eats. Jessica’s whimsical writing and captivating recipes never fail to leave me laughing and drooling, and her cookbook does all that and then some. Baked Raspberry Oatmeal with Brown Butter Drizzle
 
Waking up to a warm breakfast isn't hard to do when this baked raspberry oatmeal is on the menu! You can make it the night before and then reheat the next morning, served with a drizzle of brown butter.
Yield: 4 servings
Ingredients
  • 3 cups old-fashioned rolled oats
  • 1 cup dark brown sugar
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 1 cup canned light coconut milk
  • ⅓ cup pumpkin puree
  • 2 tbsp unsalted butter, melted
  • 2 large eggs, lightly beaten
  • 2 tsp vanilla extract
  • 2 cups frozen raspberries
  • 2 tbsp unsalted butter, browned
Instructions
  1. Heat oven to 350F. Spray an 8-inch square baking pan with nonstick spray. Set aside.
  2. In a large bowl, whisk together the oats, brown sugar, cinnamon, and salt. In a smaller bowl, whisk together the coconut milk, pumpkin, eggs, vanilla, and melted butter. Fold the wet ingredients into the dry ingredients.
  3. Pour the raspberries into the batter and stir to combine.
  4. Pour the batter into the prepared baking pan and spread evenly. Bake for 35-40 minutes, or until the top of the oatmeal is set. Let cool for a few minutes and then serve with a drizzle of brown butter.

    5pm sounds about right for the first walk around the kitchenhood. We’ve got a couple of rodents with that type of attitude, but they met the trap. I hope it was a quick death.

    yes, they prefer to come out when only females of the H.sapiens species are around – I think they sense it by smell. Someone should be studying this.

    Yikes, we had a mouse when my daughter was in preschool. She told her class about the RAT we had in our house…LOL. I hope your varmint is captured soon. In the meantime, it would be easy to be distracted by this marvelous oatmeal!

    Mice are the PITS. I hope the varmit goes away soon. I once lived in a house where a bunch of mice would come out at night and raid the grains in the pantry. Until we could get rid of them, we pretty much stopped stocking food because there was nothing they didn’t get into. Mice make animal killers out of good people, I tell ya.

    omg the mouse totally wanted your farro!! What a jerk. But I don’t really blame him. I had a mouse (I use the term “a mouse” loosely, for a fear it was actually “mice”) in my old apartment and it was a nightmare. I hope you get rid of it soon!     Mice are THE WORST. I KNOW. We lived in this awful crumbling hundred-year old house in grad school, and you better believe that the local mice really wanted to escape the harsh Michigan winter by hiding in our kitchen. Call the landlords and get them on it, is my advice. Also put things in the freezer if you have space. Anyway, this oatmeal sounds fantastic! Raspberry and oat is one of my favorite combinations. 🙂

  44. Ahhhh… mice are annoying. But I can deal with them. Other critters (I won’t name them out of fear that if I did they’d make an appearance) I cannot. I just name any mice I see (we haven’t seen any in our house but we did in our old apt) Gus. That makes me feel better.

    When I was a kid, my brother decided it was a good idea to have a pet mouse that he caught in the backyard. It got out in the house and we’d see signs that it had been snacking on lentils and peanut butter chips. Farro definitely takes that up a notch. Sorry about your vermin woes. But the oatmeal looks amazing!

      Awesome! This is one of my favorite healthy breakfasts. I think doubling it and making it in a 9×13 pan will be perfect! Just watch the cooking time, because it might take 5 to 10 minutes longer to bake in the larger pan.

    Sorry to hear of your mouse problem. I could write a book about all of my “mousecapades.” Once you catch your intruder, buy a bundle of steel wool and stuff all the holes under your sinks, in your closets, etc. Does the trick! And don’t forget that they can scurry right up the front of your cabinets in a jiff; saw it myself. And jump straight up out of heater vents…saw that too. They are WAY too athletic! Good luck.

    I’ve made this twice now and it’s excellent! Found it looking for a dairy free version for a friend. It’s forgiving too, I just made it at my mom’s where we were short on vanilla and only had cinnamon sugar but it still turned out great. Also, both times I’ve made it the night before to save time in the morning and it’s so easy to pop it in the oven in the morning! Thanks for a recipe that will be my go-to baked oatmeal!!!
