As classic as bread and butter. Literally.

For the record, I do feel a little bit silly providing you with a recipe for something you’ve probably been making sans adult supervision since you were three.

But humor me.

This is not the same-old schmear on bread from days of yore.

No, this is toast all dressed up and ready to parrrttaaayyy.

The truth is that I (try to) get up almost at the crack of dawn every morning, and if there isn’t a hot cuppa something awesome paired with something MAJOR to nosh on waiting for me, I am probably hitting the snooze button.

Twelve point five times.

In an ideal world, my secret army of breakfast elves would be chugging away in the kitchen making this all happen on a regular basis, but barring some kind of alternate universe shift where this is reality, I just have to do it myself.

Thankfully this toast comes together in just under eight minutes and while it feels like you’re eating something seriously indulgent, it’s actually a totally better for you option.

Here’s the deal: part-skim ricotta is whipped up in a food processor until it’s light and creamy, and is then infused with totally luscious International Delight Fat Free & Sugar Free Caramel Crème Coffee Creamer. This lets you get all that rich indulgent caramel flavor, but in a better for you format than actual caramel. Plus protein and calcium from the ricotta = WIN/WIN.

This is then smeared over a slice or two of toasted multi-grain bread and then topped with bananas (potassium!), hazelnuts (manganese! copper! folate!), and dark-chocolate covered espresso beans (endorphins!).

Totally delicious enough to drag yourself out of bed for and full of ingredients you want to be filling your body with first thing in the morning.

Caramel macchiato ricotta toast topped with hazelnuts, banana slices, and chocolate-covered espresso beans - if this doesn't get you out of bed in the morning, then nothing will!
Yield: 4-6 servings
Ingredients
  • 8 slices multi-grain bread, toasted
  • 1 lb part-skim ricotta
  • 4 tbsp International Delight Fat Free & Sugar Free Caramel Crème creamer
  • 1 cup blanched hazelnuts, chopped and toasted
  • 4 bananas, peeled and sliced
  • 4 oz chocolate-covered espresso beans
Instructions
  1. Toast the bread in a toaster, toaster oven, or regular oven to desired shade of brown.
  2. Meanwhile, in the bowl of a food processor, combine the ricotta and creamer. Process until smooth and a bit lighter in texture.
  3. Spread the ricotta over the bread slices. Top with the hazelnuts, banana slices, and espresso beans. Serve while toast is still warm.

    Yay, ricotta on toast! This is totally something I do with random leftover spoonfuls of ricotta — although I usually go savory and top it with things like chopped parsley, shredded cucumber or red pepper bits, plus lots of black pepper. I love the idea of a sweet breakfast ricotta toast!
