Pistachios (aka THE SKINNY NUT) are the perfect snack! High in protein and fiber, they pack a whole lot of nutrition, and are especially delicious when eaten alongside a bowl of grapefruit, honey, and Greek yogurt.

SNACK ATTACK.

And how to cope when it hits.

This is one of life’s greatest quandaries.

Every day at approximately (exactly) 11AM and 5PM I get hit with a hunger bug so strong I could probably be convinced to eat my own hand.

Really, my coworkers cower in fear.

Lucky for them, I always come prepared…with pistachios!! AKA the skinny nut.

Pistachios have been a longtime favorite nut of mine. They were the major flavor in my wedding cake and as a child I was that kid who turned my nose up at vanilla and chocolate ice cream, holding out for the pistachio. (<–I got that from my mother.)

So it’s definitely a comfort to know how good they are for you, seeing as how, well. I was going to eat them either way.

Pistachios are one of the lowest calorie, lowest fat, and among the highest protein of all the nuts, per serving. A one-ounce serving consists of 49 NUTS, compared to 28 nuts for peanuts and 18 nuts for cashews.

More nuts = more snackage = more happiness. That’s totally how it works.

Another thing that I love about pistachios is that they’re one of the few nuts that you can buy in-shell. There’s something about having to remove the nut from each shell before eating it that makes the whole process so much more satisfying. Also, all the empty shells create a great visual cue for reminding you of just how many you’ve eaten. This way, you can do less mindless munching and more conscientious healthy snacking. Gotta love it.

I have to admit, I love eating pistachios as is, but sometimes I like to mix it up, great really crazy, and pair them with some of my other favorite healthy snacks to make a MEGA snack.

Citrus is in season right now and I, for one, cannot keep my hands off of grapefruits this year. They’re sweet! They’re bitter! They’re tart! And I want them in my belly.

So when I’m in MEGA snack mode, I’ve been eating grapefruit segments swirled into a tub of Greek yogurt, topped with honey, with a few handfuls of pistachios on the side. One bite and I’ve ingested at least three food groups, a major amount of protein, and quite a hit of vitamin C. Plus it’s super tasty and keeps you full for HOURS. I mean, if you’re gonna snack, do it right.

Right.

  1. YES to pistachios! I have always loved them too, even as a kid. And pistachio ice cream?? Total favorite.
    This is one great looking snack!

    Grapefruit in yogurt? That’s interesting, I thought yogurt curdled when you put grapefruit in it. Or maybe that’s just a myth, I haven’t tried it. Sounds like a great snack anyway 🙂

    Wow I didn’t know pistachios were so healthy! I’ve always liked eating pistachios, but now I know I can eat them eve more. This yogurt combination looks delicious!

  9. Hahaha … I just love your reasoning about why pistachios are the best nut, especially the part about being able to see how many you’ve eaten from the empty shells! Just love that – you certainly have me convinced and ready to go out and buy a big bag of pistachios tomorrow!
    As for mixing them in with Greek yoghurt, I’m into that idea, too. I’ve long been a fan of Greek yoghurt mixed with nuts and fruit. Just delicious! And full of protein, of course.

    In Vanuatu, they grow grapefruits in their villages and they’re not tart or bitter! They’re actually sweet. I loved them and they were wonderful to try. I think having the nuts in shells makes you slow down and not eat more slowly xx

    Love pistachios! Just added grapefruit to this week’s grocery list. At this time of year, I seem to get waylaid by navel oranges, big, juicy and sweet. Haven’t tried citrus with yogurt, great idea.

    We love pistachios in my house! Great for a snack and I use them in a lot of desserts! The combination with grapefruit and yogurt is fantastic! Pinning and will try it tomorrow morning!

    I can’t even remember what pistachios taste like… I didn’t like them as a kid, so I kind of just wrote them off. I should probably give them another chance, though. Ha ha.
