This roasted jalapeno ranch potato salad has a spicy kick that’s cooled down by a Greek yogurt ranch dressing.

I plan on mixing it into Greek yogurt for all sorts of salad dressings and/or general dipping purposes this summer. There is really no limit to what you can do with it – this potato salad is just getting the party started.
One spicy cool bite at a time.
I have a feeling this would also be fabulous if the potatoes were grilled instead of roasted, so feel free to get creative with it!
- 1 lb new potatoes, halved
- 1 lb sweet potatoes, peeled and cut into 1-inch chunks
- 2 jalapenos, seeded and thinly sliced
- 2 tbsp olive oil
- salt, to taste
- 2 cups Greek yogurt
- 1 packet Hidden Valley Ranch Greek Yogurt Dip
- 1 tsp cumin
- ½ tsp smoked paprika
- Heat oven to 400F.
- In a large bowl, toss together the potatoes, jalapenos, olive oil, and salt. Spread on a parchment-lined baking sheet and roast until tender and starting to brown.
- Meanwhile, whisk together the Greek yogurt, ranch dip, cumin, and smoked paprika.
- Toss the potatoes with about 1 cup of the Greek yogurt mixture, or to taste. Season to taste with salt and black pepper. Let rest for at least 30 minutes in the fridge before serving.

for some reason, any potato dish is better when multi-colored potatoes are used. your application of jalapenos and ranch flavors are certainly not hurting the situation. 🙂

I love that you used sweet potatoes and regular potatoes in here!! That is genius and I bet it makes for the best potato salad ever! However, I do not love humidity at all! As much as I love the east coast I’m not sure I could ever live in a humid place again! Stay dry 🙂

We had potato salad at the bris yesterday and I had to choose between spicy and not spicy. I went with not spicy because I knew the kid would prefer it, but as always I’m with you on the more heat the better.

Wow, this looks fantastic! Just as a warning for folks super sensitive to MSG…it is in the HV dressing mix. I will try with a homemade version – this looks like it will go over well in my house!
