I saw the most appalling thing yesterday.
ORANGE LEAVES.
Say it ain’t so.
I don’t know about you, but I’ve been living under the illusion that September will never come and we can live under the glorious summer sun forever. I’m sure part of my blissful ignorance has to do with the fact that I am going back to medical school in just about a month, which will pretty much change everything about everything. I honestly don’t really know what to expect, but one thing I’m sure of is that getting a few 30-minute, easy, HEALTHY weeknight meals under my belt beforehand is definitely not a bad life choice…and will probably save me from eating larabars for dinner multiple times a week. <– total blessing.
I know a lot of you have kids going back to school or you yourself are returning to college for the fall, so hopefully these will come in handy for you as well! And if you have any easy weeknight meal suggestions of your own, leave them in the comments! (I need all the help I can get.)

I can’t talk about fall coming. This year it’s going to be summer year round. While I’m in denial, I’ll still be checking out these ideas – I love an easy dinner. One of my go tos to help you out as you go back to medical school is eggs. I always have eggs in the refrigerator. A couple scrambled, soft or hard boiled or just cooked in the microwave and a salad and dinner is served asap.
Oh, no no! I’m excited for autumn! Can’t you smell that pumpkinny whiff?! Great round up, Naturally Ella’s Naanwich is a dish we make frequently- so easy and delicious!!
