CSA day!

1. Our CSA season started out a bit slow, but lately I am definitely feeling like it was totally worth the money. The haul shown above is really a mere FRACTION of what we received last week. I am loving every second of it.

2. On a related note, THERE IS A CABBAGE IN MY FRIDGE AND I DON’T KNOW WHAT TO DO WITH IT. Help.

3. Favorite smoothie of last week: sweet potato + orange + frozen mango + hemp seed. You guys need to try this.

4. So……………I kind of joined Snapchat. And I have NO IDEA WHAT I’M DOING. What person who is not a 28-year-old-trapped-in-an-80-year-old’s-technical-skills wants to teach me how to use it?? I’m joanneeatswell on there if you want to follow me…and tell me everything I’m doing wrong.

5. Read this article if you want to cry all day long.

6. But then, these cookies just look like pure happiness.

7. My thesis writing is…happening? Kind of? My boss went from telling me last week that there was no way I could finish it in time to projecting this week that I’ll be done by the end of the week…so…early. I mostly just feel tired and overwhelmed and so bored of writing about science. Blech.

8. I had the realization yesterday that fall tv is starting. SOON. Counting down the days until Scandal. I’m all about #TeamFitz. And you?

9. There is currently zero ice cream in my freezer right now. For the first time all summer. I feel….empty inside.

10. What flavor should I make next?!?! #icecreamforallseasons

  1. We’ve been making layered mason jar salads with cabbage on the bottom. As it sits in the dressing it marinates. Then quinoa, tomatoes, cucumbers, corn, maybe some seared tofu….anything in the fridge. As far as snapchat. That whole business scares me. I mean I HAVE to look at it or it goes away?! I can barely keep up with my darn facebook so I have to hand it to you. You go girl!

  4. haha, I joined snapchat for like a second but then never went back. I have no clue and have decided I’m not even going to try . . but people seem to love it. . I just had no idea what I was doing! Cabbage: make a slaw or cabbage soup or cabbage rolls (yum!!) so many possibilities! red cabbage or regular? and yes, I could just stare at Lindsay’s cookies all day. . sprinkles! 🙂

    YES, Scandal! I will accept Fall’s arrival if only because I need Season 5. You know, I still can’t decide if I’m Team Fitz or Team Jake… right now I’m neither because I think Olivia needs someone who is not completely and utterly complicated.

  13. I’m torn between Fitz and Jake. I’m sort of leaning toward Jake. And I’ve had many sleepless nights thinking about it. And I need a life. Make cabbage rolls!

  15. I don’t really understand Snapchat either. Pretty much the only person I Snapchat with is my cousin who is seven years younger than me and I’m rather certain I’m doing it all wrong. I also accidentally sent a snap to the wrong person the other day. Then I had to send another snap to apologize. Blerg! I’m writing that smoothie combo down. As for cabbage suggestions – perhaps some type of slaw?

  17. Haven’t made the leap to Snapchat (yet). I’m done with new social medias I think (hope?) haha. I still have an ice cream on my to-make list for this summer that I’m hoping to get to this weekend and that is sweet corn.

  18. You got tomatillos in your csa, and I’m jealous! And, there’s no ice cream in my freeze either. That’s just wrong. Especially in August.

  19. Oh heck yeah, ice cream for all seasons! And girl, can I just say Snapchat scares me? When you figure it out, let us know how to do it, lol. About that cabbage…saute it up with some onion and smoked sweet paprika (like a hash) and top it with a fried egg – YUM!

    Your Braised Cabbage with Dill and Feta recipe is always fabulous! Also, we made your Farro Salad with Honey-Roasted Tomatoes, Asparagus, and Kale for the first time, for dinner this evening. It was amazing. Thanks for another great recipe!

  23. Roasted cabbage seems to be the thing lately. But I love coleslaw because you can make it so many ways. My favorite is a maple lemon version. Yes. It is on my blog. But no snapchatting. I’m to old for that. After all, a girl has to draw the line somewhere!

    great progress on the thesis – when I have unloved cabbage I fry it (often with onion) and then it is easy to use – and that article is sort of sad but also heartening to see that there is light at the end of the tunnel

    Konomi Yaki – Savory Vegetable Cakes
    from Fields of Greens by Annie Somerville

    1 tablespoon dark sesame oil
    1 head of napa cabbage, thinly sliced, about 6 cups
    Salt
    About 2 cups grated carrot (the original recipe asks for matchsticks – go crazy if you like)
    2 tablespoons fresh grated ginger
    2 tablespoons soy sauce
    1 tablespoon mirin
    4 green onions, white and green parts, thinly sliced on diagonal
    ½ pound fresh shiitake mushrooms, stems removed, sliced ¼” thick
    ¾ teaspoon hot pepper flakes
    2 tablespoons flour
    2 eggs, beaten
    2 tablespoons (or more) chopped fresh cilantro – I recommend more
    Vegetable oil for cooking the cakes

    • Layer the chopped vegetables in reverse order in a large bowl with saran wrap between the layers to have everything prepped and ready – pro tip
    • Heat sesame oil in large skillet and add the Chinese/napa cabbage and ¼ teas. salt. Saute over medium high heat until it begins to wilt, 3-5 minutes.
    • Add the carrots, ginger, soy sauce, and mirin. Cook until the cabbage and carrots are tender, about 5 minutes.
    • Add the mushrooms, green onions, and pepper flakes and cook off the excess liquid.
    • Transfer cooked veg back to large bowl and cool for a bit.
    • Beat the eggs and flour in a small bowl to combine. Pour into vegetables with cilantro and mix.
    • Spoon veg mixture into oiled skillet on medium high to make 3 inch or so cakes. Cook for about 3 minutes and flip. Cook for another 2-3 minutes.
    • Remove to plate covered and paper towels and serve while hot. You could also make a little soy and ginger or rice vinegar and sweet-hot chili dipping sauce.

    Re: cabbage: sliver it up and put it in summer rolls. Wilt it into spicy lentil soup or curry for the last 5 minutes of cooking. Make curtido de repollo (Salvadorean cabbage pickle) and a batch of pupusas and go to town. CABBAGE!

  32. I’d make a salad with the cabbage or maybe some veggie tacos. I have no idea how to snap chat and I’m almost done with season 2 of scandal. It’s sooooo good, but I don’t really like Fitz.
