If there’s one thing having a baby makes you, it’s a MEAL PLANNING MAVEN.

Or, in my case, a MEAL PLANNING MAVEN wanna-be since every week I make a meal plan and every week I cook next to nothing on it. Everything goes to waste in my fridge and my husband scolds me when he discovers a crisper drawer under the layer of mold that has grown. It is not a pretty sight.

GOOD NEWS. I have a solution and it is all of you!! Plus my friends, Julia, Sarah, Izzy, and Alexis who I’ve joined forces with to bring you a HEALTHY VEGETARIAN MEAL PLAN. Every week.

We are so in this together.

These meal plans will feature only totally vegetarian, totally good for you recipes with adaptations in case you need to make them vegan and gluten free. Plus, we’ve tried to arrange them in such a way that the most delicate produce in your fridge gets used earlier in the week while heartier veggies and pantry ingredients get saved for later. All of the recipes aim to be totally doable on a weeknight since we know that you’ve got things going on.

We do, too. We get it.

Not to mention that each meal plan will come with a printable grocery list! So all you have to is press Ctrl+P and head to the grocery store. It couldn’t be easier.

Sunday

Ultimate Grilled Portobello Burgers from The Roasted Root.

Prep Ahead Tip: Because everything gets grilled or is left raw, there is no prep ahead necessary. If serving more than 2 people, double or triple the recipe as needed.

Vegan/Gluten-free Substitutions: Sub the havarti for avocado or omit the cheese altogether. Use gluten-free buns of choice.

Monday

Stone Fruit Panzanella Salad from Eats Well With Others.

Prep Ahead Tip: The cherry tomatoes and zucchini can be roasted ahead of time and the stone fruit can be chopped ahead of time as well. Combine and store together in the fridge.

Vegan/Gluten-free Substitutions: Sub vegan cheese or omit cheese altogether. Use gluten-free bread of choice.

Tuesday

20-Minute Cherry Tomato Penne Pasta from She Likes Food.

Prep Ahead Tip: The recipe only takes 20 minutes to make so not much needs to get prepped ahead, but you could make the cherry tomato sauce ahead of time if desired.

Vegan/Gluten-free Substitutions: None. Recipe is vegan and gluten-free!

Wednesday

One Skillet Mexican Quinoa from Making Thyme for Health.

Prep Ahead Tip: This recipe requires little prep but you can dice the onion/peppers and mince the garlic ahead of time.

Vegan/Gluten-free Substitutions: None. Recipe is vegan and gluten-free!

Thursday

Easy Vegetable Teriyaki Stir Fry from Hummusapien.

Prep Ahead Tip: Dice peppers and broccoli ahead of time. Using frozen brown rice makes the recipe come together in no time!

Vegan/Gluten-free Substitutions: None. Recipe is vegan and gluten-free if using tamari instead of soy sauce.

    This is a great thing!! Nearly every one of these recipes uses something we are getting in our CSA bundle each week. The rest use stuff I froze from last year’s offerings, like peppers. One thing I can use in my attempts to get my husband to eat vegetarian is variety. There is a wonderful mix of stuff here. Please continue this feature..
