One more week! One more week!

I’ve got my Christmas Eve and Christmas Day menus planned and, guys – SO MUCH BUTTER. I don’t believe in cleanses, but maybe I’ll do one come January 1st. Probably not because I still need breastfeeding calories, but it’s a nice thought. Either way, you can look forward to a whole lot of hearty salads and feel good soups in the new year. Plus pasta, because I’m only human.

Knowing that starting next weekend your food groups are going to consist of mainly cookies, cakes, and pies, this week’s healthy vegetarian meal plan is full of extra good for you meals! Baked sweet potatoes loaded with beans and topped with a spicy cashew-based cream sauce, a gluten free hash made with spiralized veggies, an Asian kale power salad, the most totally green ramen I’ve ever seen, and a soup that’ll stick to your soul but not to your thighs. Happy eating!

Prep Ahead Tip: Vegetables can be chopped up to 2 days in advance and stored in an airtight container in the refrigerator.

Vegan/Gluten-free Substitutions: Recipe is already gluten-free. Omit the egg to make vegan.
