With a seven month old.

And only EVERYONE looked at me like I was crazy!!

So, we compromised and I’m hosting my in-laws on Christmas Eve and my side of the family on Christmas Day.

Which means DOUBLE THE ENTERTAINING!

I’m not sure if maybe that’s crazier?

In any event, I’ve been looking for ways to cut corners in terms of the menu(s), but without having to sacrifice deliciousness. For someone who is very particular about what I eat and what I serve others (just thinking about my reputation here, y’all), this is not always easy.

But one thing I can always count on is….

…THE CHEESE PLATE!

And by “cheese” plate, I actually mean: cheese, glazed nuts, crackers, spreads, jams, and wine.

Basically: cheese with all the fixins’. (And we all know the fixins’ are usually the best parts.)

Another one of my holiday pet peeves is having to go to multiple supermarkets to find all the ingredients I need, which is why I was pretty grateful to find almost everything you need for the abovementioned platter at Target! Carr’s Table Water Crackers (aka the only crackers I was allowed to eat throughout all of my childhood) – CHECK. Sahale Snacks Valdosta Pecans Glazed Mix which is oh so perfect for snacking (but also atop a chunk of brie) – CHECK. Smucker’s Fruit and Honey Strawberry Fruit Spread, excellent straight from the jar but also spread on all the things – CHECK. And, last but not least, Mirrasou Pinot Noir to bring it all together – CHECK CHECK CHECK!!

While these could pretty much stand alone as a cheese platter menagerie (plus the cheese, of course), I can never leave well enough alone, which is why I created these mini baked brie bites! Basically, little circles of puff pastry baked with a chunk of brie and a smear of the Smucker’s Fruit and Honey Strawberry Fruit Spread, and topped with a Sahale Snacks pecan as it comes out of the oven. They’re everything you love about baked brie, but pre-portioned and so easy to throw together.

It’s pretty possible I’m in love.

Mini baked brie bites make for a perfect holiday appetizer this holiday season and are so easy to throw together!
Yield: 30-40 bites
Ingredients
  • 14 oz puff pastry
  • ¼ lb brie, cut into ¼-inch chunks
  • ¼ cup Smucker's Fruit and Honey Strawberry Fruit Spread
  • 4 oz Sahale Snacks Valdosta Pecans Glazed Mix
Instructions
  1. Heat oven to 350F.
  2. Cut the puff pastry dough into 2-inch circles using a cookie cutter. Top each round with a piece of brie and a dollop of strawberry jam. Place in a single layer on a parchment-lined baking sheet. Bake for 15-20 minutes, or until puff pastry is golden brown and brie is melted.
  3. Remove from the oven and top each round with a pecan. Serve warm.
