Healthy Vegetarian Meal Plans- easy and flavorful meals for every night of the week! Prep ahead tips + vegan and gluten-free substitutions!

We’ve been trying to get Remy on a nap schedule this week, and it is exhausting! I need a nap just listening to her refuse hers. At what point do kids start to realize that naps during the day are REWARDS, not punishment?! Hmm. Not soon enough.

Anyways, it is meal plan day again!!! These week we have my FAVORITE way to eat breakfast – FOR DINNER, a super cozy lentil salad, super fun spiralized veggie tostadas, avocado and bean-based veggie burgers, and a curry that will warm your soul. Happy eating!

Vegan/Gluten-free Substitutions: Recipe is gluten-free. Replace the eggs with tofu to make a tofu scramble for a vegan option.

I would give anything to be a kid again and be expected to nap, go to bed early, and sleep late

Hang in there Joanne. Routine will win out – she will get it. If she is more than about 7 mo and smart (as she would be!) she may try to press her luck for a time. Just have to watch for when she needs to transition from two to one per day. Painful teeth can make settling harder also.
Meantime just want to say in this house we really, really love this meal plan thing. Recipes are fantastic.
